Taste buds tingle when I serve these tempting tortillas stuffed with a zesty mixture of chicken, refried beans, salsa and jalapeno peppers. It's a savory dish that makes any buffet a fiesta. -Dean Schrock, Jacksonville, Florida

Number Of Ingredients 11

2 tablespoons salsa
1 to 2 jalapeno peppers, seeded
1 garlic clove
2 tablespoons chopped onion
1 can (16 ounces) refried beans
1/2 teaspoon ground cumin
1 tablespoon chopped fresh cilantro, optional
1 cup cubed cooked chicken
1 cup shredded cheddar cheese, divided
10 to 12 flour tortillas (6 inches)
Sour cream and additional salsa, optional

Steps:

  • In a food processor; combine the first eight ingredients and 1/2 cup cheese; cover and process until smooth. Spread evenly over tortillas. Roll up and place seam side down in a greased 13x9-in. baking dish. , Cover and bake at 350° for 20 minutes or until heated through. Sprinkle with remaining cheese; let stand until cheese melts. Serve with sour cream and salsa if desired.

Another of my favorites from the little book "Low Fat Mexican Recipes." This is a really nice treat the kids'll love.

1/2 cup fat-free ricotta cheese
1 tablespoon sugar
2 teaspoons cinnamon
1/4 teaspoon vanilla
4 (10 inch) flour tortillas

Steps:

  • Set oven to broil.
  • In a mixing bowl, blend ricotta cheese, sugar, cinnamon and vanilla.
  • Spread about 2 tablespoons of ricotta mixture down center of each tortilla.
  • Fold ends of each tortilla in and roll up like a burrito.
  • Place on a cookie sheet and broil for approximately 1 minute.
  • Serve warm.

1 large onion, chopped
1 (8 ounce) container sour cream
1 (1 1/4 ounce) package taco seasoning
8 ounces shredded sharp cheddar cheese
1 (4 1/2 ounce) can green chilies, drained
2 roma tomatoes, seeded and finely chopped
hot pepper sauce, to taste
10 large flour tortillas
salsa
guacamole

Steps:

  • In a mixing bowl, stir the cream cheese, onion, sour cream, and taco seasoning until well blended and smooth.
  • Fold in cheddar cheese, chiles, tomatoes, and hot sauce.
  • Spread mixture on tortillas; roll up tortillas.
  • For easier cutting, refrigerate roll-ups until cream cheese mixture is firm.
  • Slice and serve cold with salsa and guacamole, if desired.

8 ounces cream cheese, at room
1/4 cup roasted and seeded poblano pepper (or canned green chilis)
1/2 teaspoon lemon zest, grated
1/4 cup cilantro
1 avocado
2 teaspoons lime juice
1/8 teaspoon salt
5 flour tortillas
3 ounces smoked salmon, thinly Sliced
4 scallions, thinly sliced
4 ounces smoked turkey breast
radish (to garnish)

Steps:

  • For cheese spread, process cream cheese, peppers, lemon zest and cilantro in food processor until smooth.
  • Peel and pit avocado. Place in a small bowl and mash coarsely with a fork.
  • Stir in lime juice and salt.
  • Tortilla prep:.
  • Working with 1 tortilla at a time, place on stove fire (gas) for a couple mins on low each side to get that grilled taste. Let it puff up and quickly turn to the other side. These are served cold so a fast warm on the tortilla is nice. Spread about 3 tablespoons cheese spread on tortilla.
  • Partially cover lower third of tortilla with 1/3 of salmon.
  • Using 1/5 of avocado mixture, make a band across center of tortilla. Sprinkle with scallions. Roll up.
  • Repeat with 2 more tortillas and remaining salmon. Repeat with remaining tortillas and turkey, placing turkey over two-thirds of each tortilla. Wrap each roll in plastic wrap.
  • Refrigerate 2 hours to create firm cheese spread or up to 8 hours. To serve, trim 1/2 inch from each end; discard. Cut each roll into 8 slices.

Great tasting and easy to make. Buy an assortment of deli ham, turkey, and roast beef and make each roll up different if you like. Cook time is actually time spent for refrigeration.

1 (1 ounce) package dry ranch dressing mix
1/2 cup red bell pepper, minced
1/2 cup celery, minced
1/4 cup green onion, sliced
1/4 cup olive, sliced (optional)
deli turkey or deli roast beef
4 (10 inch) flour tortillas

Steps:

  • In a mixing bowl beat softened cream cheese and ranch dressing mix until smooth.
  • Add red pepper, celery, onions, and olives (if using), mix well.
  • Spread about 3/4 cups on each tortilla.
  • Place slices of the deli meat on top of the cream cheese mixture.
  • Roll up tightly and wrap in plastic wrap.
  • Refrigerate for at least 2 hours.
  • Slice into 1/2 inch pieces.

8 flour tortillas (8 inches)
1 carton (8 ounces) soft cream cheese with chives and onion
8 slices (1 ounce each) fully cooked ham
1-1/3 cups shredded cabbage
2/3 cup shredded carrot
1/2 cup honey Dijon salad dressing
1 cup shredded cheddar cheese

Steps:

  • Spread each tortilla with 1 tablespoon cream cheese. Top with a slice of ham. Combine cabbage, carrot and dressing; divide evenly between tortillas. Sprinkle with cheese. Roll tightly; wrap in plastic. Chill at least 1 hour before serving.

  • Spread this mixture onto a tortilla all the way to the edges in an even layer (you’ll use about 1/2 cup for each tortilla). Tightly roll up tortilla with the filling on the inside. Wrap in plastic wrap. Repeat until all tortillas are filled and rolled.
  • Place wrapped rolls in fridge and chill for at least 2 hours before slicing into pinwheels about 1/2-inch thick.
  • Serve with Greek yogurt or sour cream and salsa for dipping. Guacamole would be excellent too.
