S.O.B. (SOUTH OF THE BORDER) CASSEROLE
Ground meat, tomatoes and corn with a little spice creates a quick meal everyone loves. My husband usually requests a double batch! The ground turkey can be replaced with ground beef, pork or chicken.

Steps:
- Bring a small saucepan of lightly salted water to a boil. Add macaroni and cook until almost tender, about 6 minutes. Drain and set aside.
- Crumble the turkey in a large skillet set over medium heat. Cook and stir until evenly brown; drain. Add onion to browned turkey meat and cook until onion is tender, about 5 minutes. Stir in tomatoes, gravy mix and chili powder until combined then mix in the corn and macaroni. Cover; reduce heat to low and simmer, for 10 minutes, stirring occasionally.
- Serve on a bed of tortilla chips topped with shredded lettuce and sour cream.

Steps:
- Preheat oven to 325 and grease 1 1/2 qrt casserole dish.
- Brown meat and drain.
- Add onion and jalapeno (if using) and cook with meat until tender.
- Stir in tomato sauce and seasonings.
- Layer one-third of meat mixture, cheese and one half of tortillas in casserole dish; repeat layers, ending with cheese.
- Bake at 325 for 20 minutes.
- Note: Corn tortillas will soften and absorb the sauce.
- These are recommended.
- Flour tortillas will expand and the casserole will be too doughy-therefore flour tortillas are not recommended.

- Grease a 9x12" baking dish and preheat oven to 375 degrees.
- Lightly beat eggs in a bowl.
- Tear up corn tortillas into large pieces and layer half of them into bottom of baking dish.
- Top tortillas with half of the chili sauce and half of the cheese.
- Pour half of the beaten eggs over this and then repeat the layers again of tortillas, chili sauce, cheese and then eggs.
- Bake in oven for 30 minutes, uncovered.
- Serve topped with salsa and additional cheddar cheese if desired.

- Dice squash.
- Saute with onions in butter until tender but still crisp.
- Fold in chilies, flour, salt, and pepper.
- Place in greased, 1 1/2 quart baking dish; sprinkle with Monterery Jack cheese.
- Combine egg, cottage cheese and parsley.
- Layer over cheese, sprinkle with parmesan.
- Bake uncovered at 400 for 25-30 minutes, until heated through.

- 1. Brown sausage in skillet, stirring until crumbly. Add onion, red bell pepper and garlic. Sauté until vegetables are tender. Stir in green chiles, chili powder and cumin and sauté for 1 minute
- 2. Layer sausage mixture, tortillas, pepper jack cheese, cheddar cheese, green onion tops and cilantro one half at a time in greased 9 x 13 inch baking dish. Top with tomato slices.
- 3. Beat eggs with half land half, hot sauce, salt and pepper in a bowl. Pour over layers. Chill, covered, for 8 hours or longer. Bake at 350 for 1 1/4 hours or until golden brown. Serves 10

You can make it mild by adding mild green chiles or spice it up a bit by substituting pickled jalapenos. - 1. Preheat oven to 350 degrees. Spray a 2 1/2 quart or 9x13" casserole dish with nonstick spray; Set aside.
- 2. Heat large skillet on medium high and add oil; Add ground beef, salt, garlic powder and dried onion. Stir and cook until beef is cooked, about 5 minutes.
- 3. Don't drain meat; Add the enchilada sauce, beans and chiles (or jalapeno peppers for a hotter dish); Stir and cook 2 minutes on medium low, then remove from heat and set aside.
- 4. In a medium bowl, mix cottage cheese and 1 cup of cheddar cheese.
- 5. Layer 1/3 of the meat mixture to the bottom of the casserole; Top with half of the cheese mixture and half of the crushed chips.
- 6. Repeat this one more time, ending with the last third of the meat mixture. Top with the remaining 1 cup cheddar cheese.
- 7. Bake uncovered 30 minutes. Serves 8

Ready, Set, Cook! Special Edition Contest Entry. I wanted to put a twist on the standard breakfast casserole, so I created this south-of-the-border version. This is my go-to recipe for every holiday brunch and when we have out of town guests. I make two and cut them each into 6 pieces for groups. - Preheat oven to 350 degrees.
- Spray a 9" pan (I use glass) with cooking spray and press the Simply Potatoes Shredded Hash Browns into the bottom and half way up the sides.
- Add chorizo, green onion & tomato on top of potatoes.
- In a bowl whisk together eggs, cumin, cilantro and add salt and pepper to taste. Add about 1/4 cup of the shredded cheese to egg mixture and pour on top of potatoes & vegetables.
- Bake for 20 minutes, then add remaining cheese to top of casserole and bake an additional 20 minutes or until eggs are set.
- Serve with a side of sour cream and Texas toast.
