For a new twist on salad, I combined two of my favorites-coleslaw and Waldorf salad-to come up this salad. Try substituting broccoli slaw for the cabbage and add shredded carrots and seedless grapes.-Linda Hess, Chilliwack, British Columbia

1 medium unpeeled apple, diced
1-1/2 teaspoons lemon juice
1 cup shredded cabbage
1 celery rib, chopped
1/4 cup chopped walnuts
1/4 cup Miracle Whip
Salt and pepper to taste

Steps:

  • In a bowl, toss apple with lemon juice. Add remaining ingredients and toss to coat. Refrigerate any leftovers.

3/4 cup mayonnaise
3/4 cup buttermilk
4 to 5 tablespoons sugar
4-1/2 teaspoons lemon juice
3/4 teaspoon salt
1/4 to 1/2 teaspoon pepper
6 cups shredded cabbage (about 1 small head)
1-1/2 cups shredded carrots (2-3 medium carrots)
1/3 cup finely chopped red onion
1 cup coarsely chopped walnuts, toasted
3/4 cup raisins
2 medium apples, chopped

Steps:

  • Whisk together first 6 ingredients. In a large bowl, combine vegetables, walnuts and raisins; toss with dressing. Fold in apples., Refrigerate, covered, until serving.

1/3 cup packed brown sugar
1/3 cup cider vinegar
1 1/2 tablespoons vegetable oil
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 1/4 cups chopped pink lady apples or 2 1/4 cups other sweet apples
1 (12 ounce) package broccoli coleslaw mix
1 (3 ounce) package dried tart cherries
2 tablespoons unsalted sunflower seeds

Steps:

  • Vinaigrette: combine first 5 ingredients in a small bowl, stirring well with a whisk.
  • Slaw: combine apple, broccoli slaw and dried cherries; drizzle with vinaigrette, toss well to combine.
  • Sprinkle with sunflower seeds; chill up to 3 hours.

4 cups small diced broccoli florets
2 small gala apples (, cored and diced)
1 cup walnuts
1 cup matchstick carrots (, roughly chopped)
1/2 cup golden raisins or dried cranberries
1/4 cup chopped red onion
3/4 cup plain Greek yogurt
1/3 cup Hellman's or Best Foods Mayonnaise ((full fat))
1 1/2 Tbsp apple cider vinegar
3 Tbsp honey
Salt

Steps:

  • In a medium mixing bowl whisk together Greek yogurt, mayonnaise, vinegar, honey and season with salt to taste (about 1/4 tsp). Chill until ready to use.
  • In a salad bowl toss together broccoli, apples, walnuts, carrots, raisins or cranberries and red onion. Pour in dressing and toss until evenly coated.

I went on the South Beach Diet two years ago because I wanted to develop healthy eating habits. My whole family really enjoys this soup. This recipe came from The South Beach Diet Online.

1 1/2 small head of broccoli (about 3 pounds)
3 tablespoons canola oil
1 1/2 cups leeks, sliced (white part only)
3/4 cup celery, sliced
1 1/2 quarts chicken broth, fat-free
3 cups evaporated skim milk
1/3 cup cornstarch
1 1/2 teaspoons fresh thyme, chopped
ground pepper (to taste)

Steps:

  • Cut the broccoli into florets and set aside.
  • Trim and discard the tough fibrous skin from the stems, coarsely chop and set aside.
  • In a medium saucepan over medium-low heat, warm the oil.
  • Add leeks and celery and saute for 8 minutes, or until the leeks are soft.
  • Add the broccoli stems and broth. Bring to a boil, then reduce the heat to low, cover and simmer for 15 minutes.
  • Add the broccoli florets and simmer for 10 minutes more.
  • Puree the mixture in a food processor or blender. Return to saucepan.
  • In a small bowl, whisk together 1 cup of evaporated milk with the cornstarch until smooth.
  • Slowly add to the broccoli mixture, stirring constantly over medium heat.
  • Stir in the remaining milk, thyme, and pepper. Cook and stir until thickened and bubbly. Cook and stir 2 minutes more.

1/2 large sweet onion, chopped
1 stalk celery, chopped
1/2 cup dried cranberries
1/4 cup chopped walnuts
1/2 cup distilled white vinegar
1/3 cup white sugar
1/2 cup vegetable oil
1 1/2 teaspoons salt
1 1/2 teaspoons dry mustard
ground black pepper, to taste

Steps:

  • In a large bowl, toss together the coleslaw mix, onion, celery, cranberries, and walnuts.
  • Mix the vinegar, sugar, oil, salt, mustard, and pepper in a jar with a lid. Pour over the slaw mixture, and toss to coat.
  • Refrigerate until serving.
