SOUTH AFRICAN BOBOTIE
A classic South African entree. While not particularly spicy, the dish has complex flavors with the sweetness of raisins contrasting the curry. Serve with yellow rice.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Heat oil in a skillet over medium-high heat; add onion and saute until browned, about 5 minutes. Add ground beef to onion and saute until browned, about 5 minutes.
- Soak bread in 1/4 cup milk in a small bowl, mash, and add to ground beef mixture; stir in 1/2 of beaten egg, raisins, vinegar, sugar, turmeric, salt, curry powder, and ground black pepper.
- Transfer beef mixture to glass baking dish; insert bay leaves.
- Bake in preheated oven for 30 minutes. Whisk remaining 1/2 egg and remaining 1/4 cup milk together in a small bowl; pour over meat mixture and return to oven for 30 minutes.
- Serve with chutney.

SOUTH AFRICAN CREPES
I am from Johannesburg South Africa. I remember eating these as a child and finally found the perfect recipe, brings me right back to my childhood! Sooooo good, but remember to serve them hot! Add a squeeze or 2 of lemon juice to the crepe before you sprinkle the mixture and roll it up, makes the cinnamon and sugar stick better. Delicious!

Steps:
- Sift dry ingredients.
- Whisk egg yolks, oil, water, milk and juice together.
- Whisk egg whites till stiff.
- Mix the egg mixture into the dry ingredients to prevents lumps.
- Beat with electric mixer.
- Fold in the egg whites.
- Pour very thinly into a greased pan.
- Cook until golden brown on one side.
- Turn over until golden brown.
- Sprinkle sugar and cinnamon on top and roll up.
- Serve hot.

- Mix everything together, beating well to ensure there are no lumps. Allow to stand for 15-20 minutes covered.
- When you are ready to bake the pancakes, mix the batter again and if it’s too thick, add a bit more water. It needs to be quite thin, only a little thicker than pouring cream.You’ll see if you bake the first few if the batter is too thick, the pancakes need to be very thin and almost lace-like.
- Add ladle-fulls of the batter to the pan and allow to cook before flipping. Keep the pancakes warm on a plate set over a pot of simmering water.
