TRADITIONAL WELSH RAREBIT

Brings back childhood memories of staying home with Mum and making these delicious cheese on toasts. The cheese sauce is also wonderful for topping fish or roasted veggies. Do use a heavy British or European beer.

2 tablespoons butter
¼ cup all-purpose flour
2 teaspoons Worcestershire sauce
½ teaspoon dry mustard
½ teaspoon salt
½ teaspoon ground black pepper
1 cup British beer
1 ½ cups heavy cream
4 cups shredded sharp Cheddar cheese
4 egg yolks
8 slices bread

Steps:

  • Melt butter in a saucepan oven low heat. Add flour and whisk for 2 to 3 minutes, being careful not to brown the flour. Whisk in Worcestershire sauce, mustard, salt, and pepper until very smooth. Whisk in beer. Pour in heavy cream and whisk until smooth. Add Cheddar cheese gradually, stirring constantly, until melted and smooth, about 5 minutes.
  • Remove cheese sauce from the heat and let cool, about 5 minutes. Whisk in egg yolks.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Toast bread slices on 1 side. Arrange on a baking sheet with the untoasted side facing up. Spoon cheese sauce over the untoasted side.
  • Place under the preheated broil until bubbling and golden, 2 to 3 minutes.

Indulge in a slice of bubbling, golden-brown, cheesy Welsh rarebit for a satisfying lunch. Serve piping hot from the grill with plenty of chopped chives

120ml brown ale
25g unsalted butter
25g plain flour
140g mature cheddar , coarsely grated
1 heaped tsp English mustard powder
1 tbsp Worcestershire sauce
1 tbsp chopped chives
2 large slices sourdough bread

Steps:

  • In a small saucepan gently warm the ale, set aside. Take another small saucepan and over a medium heat melt the butter until it begins to foam, tip in the flour and stir everything together, cooking for 1 min. Whisk in the warm ale in several additions to create a thick sauce then whisk through the cheese to create a thick paste. Stir the mustard, Worcestershire and chives through the sauce.
  • Heat a grill to its highest setting. Place the slices of bread on a flat baking sheet and grill on one side until golden brown. Flip the bread over and spread each one with the cheese mixture. Place back under the grill and cook for a further 1-2 mins or until golden brown and bubbling, serve immediately.

A classic version of this dish was shared with me years ago. This is is my adaptation to more local ingredients. If you don't like beer, you can replace it with milk and it will still taste great. Serve over toasted bread or English muffins.

¼ cup butter
¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon dry mustard
¼ teaspoon Worcestershire sauce
2 drops hot pepper sauce (such as Tabasco®)
1 cup whole milk
½ cup beer
½ pound Cheddar cheese, shredded

Steps:

  • Melt the butter in a saucepan over low heat; blend in the flour, salt, pepper, mustard, Worcestershire sauce, and hot pepper sauce; continue cooking and stirring until the mixture is smooth and bubbly, about 5 minutes. Remove from heat; gradually stir in the milk; return to heat and stir continually until the mixture comes to a boil. Slowly pour in the beer; cook 1 minute more while still stirring. Melt the Cheddar cheese into the mixture in small portions until completely incorporated. Remove from heat.

½ pound aged Cheddar cheese, cubed
1 onion, cut into chunks
2 teaspoons mayonnaise
1 teaspoon dry mustard powder
60 slices sandwich bread, cut into rounds

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Place the bacon, Cheddar cheese, onion, mayonnaise, and mustard into the bowl of a food processor; process until well blended. Scoop into a container, cover, and refrigerate several hours to overnight to allow the flavors to blend.
  • Adjust oven rack to the topmost position, and set oven to Broil.
  • Spread the bread rounds evenly with cheese mixture and place onto a cookie sheet. Toast under the broiler until browned and puffed, 5 to 8 minutes. Serve immediately.

This is so GOOD!!! I originally got this recipe from a "Best of Bridge" cookbook. I've changed the recipe a bit and also expanded the recipe since the original only filled my bread-bowl about a quarter full. It's so awesome and even reheats well (wrapped in foil in the oven), if you happen to have leftovers. *You can also optionally stir in bacon bits and finely chopped green onion before serving.

4 cups cheddar cheese, shredded
1/2 cup sour cream
2 garlic cloves, minced
2 tablespoons Worcestershire sauce
1 tablespoon mustard
1/2 cup beer
1 large round sourdough loaf
1 additional sourdough loaf, to serve cubed around the bread-bowl

Steps:

  • Combine all ingredients except bread. Set aside.
  • Hollow out the bread round leaving 1/2" sides. Cut pulled out bread into 1"cubes and also cut additional bread loaf into slices or cubes and put in a plastic bag until ready to serve.
  • Fill bread-bowl with cheese mixture, wrap in foil and bake at 375 degrees for 1 hour.
  • Place on a platter and serve with bread cubes and/or slices around the bread-bowl.

Goat's cheese, cider and grated beetroot take this classic Welsh version of cheese on toast to the next level

150g pack soft goat's cheese (or vegetarian alternative)
1 tbsp Dijon mustard
50ml cider
6 spring onions , sliced
1 egg
400g sourdough bread , thickly sliced
1 raw beetroot (about 140g), peeled
½ small pack dill , chopped
juice 1 lemon
watercress , to serve

Steps:

  • Heat grill to medium. In a large bowl, beat together the cheese, mustard, cider, spring onions and egg until combined, and set aside.
  • Place the slices of bread on a large baking tray and pop under the grill for a few moments to toast on one side. Turn over and spoon the goat's cheese mixture onto the untoasted side. Put back under the grill for 8-10 mins or until golden.
  • Chop the beetroot into large chunks and coarsely grate or blitz in a small food processor. Add half the chopped dill and the lemon juice, and stir to combine.
  • Serve the rarebits topped with a spoonful of the beetroot and the remaining chopped dill scattered over and watercress on the side.
