My husband asked me the other day if the Bread maker came with a Sour Dough recipe, it did not. I have tried in the past to prepare a starter and was never able to come up with a winner. I searched on line the other day and found this recipe and it is wonderful! I was a little skeptical because it does not call for a starter, but...

2/3 cup warm water
2 tbsp. white vinegar
1/2 cup sour cream ( i use low fat)
1 tbsp. sugar
1 1/2 tsp. salt
3 cups of bread flour
2 1/4 tsp. yeast (quick rise)

Steps:

  • 1. Place all ingredients in the canister, in the order as written in the recipe. * I placed the sour cream in the microwave for 20 seconds to take the chill off. If not you can make the water a little hotter than warm.
  • 2. Choose the Basic bread setting, loaf size (one and half pound) crust color (light or medium) Hit start and wait for your kitchen to smell Yummy!!
  • 3. When bread is done place on a rack to cool

1 package dry yeast (1/4 ounce)
1/2 cup warm water
3/4 cup sugar
3 tablespoons instant mashed potatoes (uncooked)
1 cup warm water
6 cups bread flour
1 tablespoon salt
2 tablespoons sugar
1/2 cup oil or 1/2 cup butter
1 1/2 cups lukewarm water

Steps:

  • Mixing directions To make starter, follow these steps;*Mix yeast and warm water and check to see if it is working.
  • (Fizzing, bubbling), add remaining ingredients.
  • Let set out all day.
  • Then feed and set in refrigerator for 3 to 5 days.
  • To feed the starter, add sugar, instant potatoes and warm water in the same amount you used to make the starter.
  • To make the bread follow these steps; Mix with 1 cup of the starter, knead about twenty strokes, place in bowl, lightly coat top with oil, let set overnight till doubled in size.
  • Knead and divide in two pieces, knead again, put in greased pans, coat top with butter or oil.
  • Let rise till doubled in size.
  • Bake 350 for 40 minutes or until done.
  • To make more, feed the remaining starter like you did the first time.
  • Repeat the feeding every time you make the bread.

This recipe gives a slightly dense bread with a slightly chewy crust and a little tang from the sour dough, depending entirely on your sourdough. A "San Francisco" sourdough starter is appropriate for this recipe.

1 cup sourdough starter, you must have a starter available
3/4 cup water, warm about 110F
1 tablespoon sugar
1 tablespoon active dry yeast (not rapid rise yeast)
3 cups bread flour
3 tablespoons oil
2 teaspoons salt

Steps:

  • Put first 4 ingredients in bread machine and stir gently. (yes, this works...).
  • Let sit for about 10 minutes. Starter should start to bubble a little.
  • Add flour, then spread oil and salt evenly over the flour.
  • Select basic course or following custom settings if your bread maker has them:.
  • Custom settings for Zojirushi BB-CEC20: Preheat - 20 Minutes ( I start cycle after mixing first four ingredients then add remaining three ingredients after ten minutes), Knead - 20 minutes, Rise1 - 40 minutes, Rise2 - 40 minutes, Rise3 - OFF, Bake - 58 minutes Medium or Dark crust setting ( I use medium), Keep warm - OFF.
  • Check a few minutes into kneading and add flour or water as needed to get a just slightly tacky dough that sticks to your fingers like a strong post it note and stretches smoothly without tears when kneading. Sourdough bread dough is a little gloopier then regular white bread.
  • See directions for making a starter or order a starter online.
  • Like all sourdough breads wait until at room temperature before cutting or insides will clump up and tear the insides out of the loaf.

  • Cover with plastic and let sit in a warm location for 6 to 8 hours, or overnight.
  • The next day, pour overnight starter into the pan of bread machine.
  • Add remaining ingredients in the order recommended by the manufacturer.
  • Select cycle; press Start.
  • My machine from start to finsh (baked) is 2 1/2 hours.

There are two ways to make sour dough starter one without yeast where you feed the starter daily and this recipe where you just let the yeast do the work and let it sit for 3 or 4 days. Be sure that you clean the jar well before putting the saved starter back in it.

1 (1 tablespoon) package dry yeast
2 1/2 cups water
2 cups flour
1 tablespoon sugar

Steps:

  • Dissolve yeast in 1/2 cup warm water, rest for ten minutes.
  • Mix in flour, sugar& remaining water.
  • Allow to stand, loosely covered, in a warm place for 3 or 4 days. Use a large (preferably ceramic) bowl as it will rise considerably.
  • Every time the batter is used to make a product set aside 1 cup to be used as a"starter" for another batch.
  • Keep covered in the fridge (a pint jar works nicely).
  • To make it into a basic batter again, add another 2 cups flour& 2 cups warm water and allow to stand at room temp overnight It is now ready to use, but again reserve a cup of the starter.
