These zucchini pancakes make a fresh, flavorful, and light dish that's perfect for a meal for one-or a nice appetizer at a dinner party. The pancakes are beautifully green and easy to make in about 30 minutes.

2 medium zucchinis, washed and dried
1 medium white or Yukon Gold potato, washed and dried
Kosher salt
1 large egg
1 tablespoon chopped parsley
1 teaspoon grated lemon zest
1 tablespoon fine breadcrumbs, plus more as needed if mixture is "soupy"
8 tablespoons unsalted butter, divided
Sour cream, for serving, may substitute whole-fat plain Greek yogurt

Steps:

  • Grate the zucchinis and potato using the large hole grater: you should have 2 cups of grated zucchini and a ½ cup of grated potato. (Save remaining zucchini and potato for another use.) Salt generously. Put mixture in a colander lined with a tea towel and let rest for at least 15 minutes to drain out the moisture. This will help the pancakes hold together.
  • In a small bowl, beat the egg. Add parsley, lemon zest, and a pinch of salt and set aside. Roll and squeeze zucchini/potato mixture in the tea towel to release the moisture. Combine egg mixture with zucchini-potato mixture; add breadcrumbs as needed to absorb excess liquid.
  • In a skillet, melt 1 tablespoon butter over medium heat until sizzling. Drop ¼ cup-sized balls into skillet; do not overcrowd. Using a spatula, flatten the balls into thin discs for crispier results. Once the first side has browned, about 2 minutes, add another tablespoon of butter, flip the pancake, and continue to cook on the other side, about 2 minutes more, until both sides are browned and crisp. Transfer to a plate lined with paper towels and season with a pinch of salt. Repeat until you've made all the pancakes. Serve immediately, accompanied by sour cream or plain Greek yogurt.

  • Drop zucchini mixture by cupfuls into skillet; press lightly to flatten.

2 cups finely shredded fresh zucchini (, 2 - 8-inch zucchini required)
4 large eggs, beaten
3/4 cup all-purpose flour
1/2 teaspoon granulated sugar
1/2 teaspoon salt
3 tablespoons extra virgin olive oil or 3 tablespoons vegetable oil
4 teaspoons baking powder
1/4 cup melted butter (, for rub) or 1/4 cup melted margarine (, for rub)

Steps:

  • Wash and shred zucchini on a fine shredder (DO NOT PEEL).
  • In a large mixing bowl, beat eggs; add shredded zucchini and mix well using a fork.
  • Add flour, sugar, salt and olive oil and stir well to blend.
  • Finally, add baking powder and mix using a spoon (Batter consistency should be like heavy whipping cream).
  • Preheat griddle to 425- 450°F.
  • If using a heavy duty frying pan, heat to medium-high heat; adjust heat if necessary.
  • Rub grill or frying pan with oil before cooking each batch of pancakes.
  • Spoon batter onto hot griddle (about 2 tablespoons for each pancake).
  • Cook until bubbles on the top of the pancake almost stop, about 1 1/2 minutes; turn pancake over and continue to cook for another 1 to 1 1/2 minutes or until pancakes are done.
  • When done, rub pancakes with melted butter and place in a preheated 250 F oven to keep warm until the remainder are cooked, or serve immediately.
  • Serve with your choice of jams or syrups.
  • Also very good with sour cream or yogurt along with your choice of jams or syrups, or you can eat them just plain.
  • These pancakes are delicious for breakfast, brunch or just as a snack anytime.

1 teaspoon baking soda

Steps:

  • Place an iron skillet or griddle on medium low heat. Get it nice and hot.
  • Place sour cream in a large bowl. Add in other dry ingredients and stir very gently until not quite blended.
  • Whisk the eggs in a small bowl and add vanilla.
  • Pour egg mixture into sour cream/flour mixture.
  • Stir together very gently until just combined.
  • Melt about 1 T butter in a skillet, pour in the batter 1/4 Celsius at a time.
  • Cook for 1- 1_1/2 minutes and flip. Cook another minute snd repeat with remaining batter.
  • Top with plenty of butter and syrup!

6 small zucchini, cut iinto 1/2 inch thick slices
1 cup cheddar cheese, shredded (4 oz)
2/3 cup sour cream
1 tablespoon butter, melted
1/2 teaspoon salt
3 tablespoons fine dry breadcrumbs
2 tablespoons parmesan cheese, grated

Steps:

  • Cook the zucchini in a small amount of boiling water in a large saucepan for 6 minutes or until tender; drain well. Place the zucchini in a 1 1/2 quart greased casserole; set aside.
  • Combine the cheddar cheese, sour cream, butter, and salt in a small saucepan; cook over medium-low heat until the cheese melts, stirring constantly. Pour the cheese sauce over the reserved zucchini.
  • Combine the breadcrumbs and Parmesan cheese. Sprinkle over the casserole.
  • Bake, uncovered, at 375 degrees for 10 to 12 minutes or until lightly browned.

  • Make basil chive cream:
  • Blend sour cream, water, basil, chives, and salt in a blender until smooth and pale green. Chill until ready to serve.
  • Make pancakes:
  • Put zucchini in a colander and toss with salt. Let stand at room temperature 20 minutes, then wrap zucchini in a kitchen towel and twist towel to wring out as much liquid as possible. Transfer zucchini to a large bowl and stir in flour, sugar, and pepper.
  • Beat egg whites with a pinch of salt using an electric mixer until they just hold stiff peaks, then gently fold into zucchini mixture.
  • Heat 2 tablespoons oil in a 10-inch nonstick skillet over moderately high heat until hot but not smoking. Working in batches of 5, spoon 2 tablespoons batter per pancake into skillet, flattening slightly with back of spoon. Cook pancakes, turning once, until golden brown, about 3 minutes total, transferring as cooked to paper towels to drain and adding more oil to skillet as necessary.
  • Serve immediately, with basil chive cream.

This is an extremely good and rich bread, absoutely yummy fresh from the oven but it is great chilled from the refrigerator or heated with melted butter. It can be frozen too. Steps:

  • Grease and flour well 2 bread loaf pans. I like to use 4 mini loaf pans for gifts.
  • Sift together the flour(s), wheat germ if using, cinnamon, salt, baking soda and baking powder.
  • In a separate bowl combine the eggs, brown sugar, white sugar, and oil.
  • Add the dry ingredients slowly to the egg mixture.
  • When thoroughly mixed, add the sour cream and vanilla.
  • Finally, mix in the shredded zucchini, nuts and/or raisins.
  • Pour the mixture into the two loaf pans (or mini pans).
  • Bake at 350 degrees Fahrenheit for about 1 hour and 20 minutes.
  • If baking mini loaves, adjust time to about 50 to 60 minutes.
  • Use a toothpick placed in the center of the loaf to see if the loaves are done. The toothpick should be clean or just have a few crumbs on it.

1 lb about 2 medium zucchini
1 teaspoon coarse salt, plus extra to taste
2 scallions, split lengthwise and sliced thin
1/2 teaspoon fresh ginger
1 garlic clove, minced
1/4 teaspoon lemon zest
1 large egg, lightly beaten
fresh ground black pepper
1/2 cup all-purpose flour
1/2 teaspoon baking powder
oil, of your choice for frying
1 cup sour cream, full-fat yogurt or 1 cup plain full-fat yogurt
1 -2 tablespoon lemon juice
1/4 teaspoon lemon zest
1 pinch salt
1 teaspoon honey

Steps:

  • Trim ends off zucchini and grate them either on the large holes of a box grater or, if you have one, using the shredding blade of a food processor. The latter is my favorite as I'm convinced it creates the coarsest and most rope-like strands and frankly, I like my fritters to look like mops.
  • In a large bowl, toss zucchini with 1 teaspoon coarse salt and set aside for 10 minutes. Wring out the zucchini in one of the following ways: pressing it against the holes of a colander with a wooden spoon to extract the water, squeezing out small handfuls at a time, or wrapping it up in a clean dishtowel or piece of cheese cloth and wringing away. You'll be shocked (I was!) by the amount of liquid you'll lose, but this is a good thing as it will save the fritters from sogginess.
  • Return deflated mass of zucchini shreds to bowl. Taste and if you think it could benefit from more salt (most rinses down the drain), add a little bit more; we found 1/4 teaspoon more just right. Stir in scallions, ginger, garlic, lemon zest, and egg and some freshly ground black pepper. In a tiny dish, stir together flour and baking powder, then stir the mixture into the zucchini batter.
  • In a large heavy skillet - cast iron is dreamy here - heat 2 tablespoons of oil over medium-high heat until shimmering. Drop small bunches of the zucchini mixture onto the skillet only a few at a time so they don't become crowded and lightly nudge them flatter with the back of your spatula. Cook the fritters over moderately high heat until the edges underneath are golden, about 3 to 4 minutes. If you find this happening too quickly, reduce the heat to medium. Flip the fritters and fry them on the other side until browned underneath again, about 2 to 3 minutes more. Drain briefly on paper towels then transfer to baking sheet and then into the warm oven until needed. Repeat process, keeping the pan well-oiled, with remaining batter. I like to make sure that the fritters have at least 10 minutes in the oven to finish setting and getting extra crisp.
  • For the topping, if using, stir together the sauce ingredients and adjust the flavors to your taste. Dollop on each fritter before serving. These fritters are also delicious with a poached or fried egg on top, trust me.
