TOMATO RELISH, AUSSIE STYLE

Tomato Relish, Aussie Style image

This is the best selling, fabulous tasting, world famous Tomato Relish as made by the "Boonooroo Brown Paper-bag Ladies" This is REALLY like granma used to make. If I buy "cooking tomatoes" and they are very pale, I add a small tub of tomato paste. You can add garlic, or herbs to this recipe, but I dont find it needs it. I always double this recipe, cause I am constantly being asked for it :) I use good quality brown vinegar, but the my fellow Bag Ladies use the generic stuff.

CHERRY TOMATO RELISH

Cherry Tomato Relish image

A simple and delicious tomato relish recipe, perfect for keeping in the fridge or to give as gifts.

Provided by Thanh | Eat, Little Bird

Categories     Preserving

Time 40m

Number Of Ingredients 8

1 tablespoon olive oil
1 small red onion, finely diced
1 clove of garlic, finely sliced
pinch of sea salt
500g (1 lb) cherry tomatoes, halved (or large tomatoes, chopped)
110g (1/2 cup) caster sugar (superfine sugar)
125ml (1/2 cup) red wine vinegar
sea salt & freshly ground pepper (to taste)

Steps:

  • Add the oil to a medium-sized saucepan (see Kitchen Notes below).
  • Cook the onion and garlic with a pinch of sea salt over medium heat for about 5 minutes until they have softened.
  • Add the cherry tomatoes, sugar, vinegar, sea salt and pepper.
  • Mix well.
  • Turn the heat up to high and let the mixture come to a boil.
  • Keep cooking at high heat for about 15-30 minutes, or until the mixture has thickened and looks jammy. The tomatoes will release some liquid during cooking, and the mixture will start to thicken once the liquid evaporates.
  • During this time, gently break down any tomatoes with a wooden spoon and stir the mixture from to time to prevent it from sticking to the bottom of the pan.
  • Once the mixture has thickened, taste for seasoning. You may want to add some more sugar or more vinegar.
  • Serve the tomato relish warm, or spoon the mixture into a warm sterilised jar and seal.

CURRIED TOMATO RELISH

Curried Tomato Relish image

This is such a wonderful canning recipe. I use these tomatoes for "everything" from my Spaghetti sauce, soups, stews to Salas's. My DH & I love putting them up as this recipe was handed down to my DH's from his grandmother. My DH helped make this canning recipe with his mother for years it is a favourite of his and mine! We get our tomatoes from a farmer's family who have grown beautiful hot house tomatoes for year's. I was told by my MIL & DH that I had incorrectly titled the tomato recipe OOPS! Bon Appétit!

TOMATO RELISH

Tomato Relish image

Yield makes 1 1/4 cups

Number Of Ingredients 12

2 tablespoons extra-virgin olive oil
1 small yellow onion, halved and thinly sliced lengthwise
1 garlic clove, finely chopped
1 tablespoon sugar
1 teaspoon curry powder
1 tablespoon sherry vinegar
1 (28-ounce) can whole tomatoes
2 teaspoons chopped fresh oregano, or 1 teaspoon dried Sicilian oregano
2 teaspoons kosher salt
Freshly ground black pepper
1/4 cup flat-leaf parsley leaves, chopped
2 tablespoons drained Pickled Mustard Seeds (see page 187)

Steps:

  • Pour the olive oil into a skillet over medium-high heat. Add the onion and garlic and sauté until they are golden brown. Add the sugar and curry powder and cook for 5 minutes. Add the vinegar and deglaze the pan. Add the tomatoes, oregano, salt, and pepper to taste and simmer for 30 minutes. Remove from the heat and pour the contents into a strainer. Stir the relish so most of the liquid drains (see Note). Transfer to a cutting board and roughly chop. Transfer to a bowl and mix in the parsley and mustard seeds. Check the seasoning and adjust if necessary. Use immediately or store refrigerated for up to 1 week.
  • Consider reserving the liquid from the relish to reheat any leftover meatloaf or other meats. It's also great as the base of a flavorful tomato sauce or dressing.

Categories     Everyday Cooking     Vegetarian     Soups and Stews     Stew

Time 55m

Yield 6

Number Of Ingredients 13

¼ cup cilantro sprigs
3 tablespoons olive oil, divided, or more to taste
1 large yellow onion, finely chopped
1 tablespoon grated ginger, or to taste
2 ½ teaspoons salt, divided, plus more to taste
2 tablespoons curry powder, or to taste
7 ¾ cups water, divided
1 cup red lentils
1 pint cherry tomatoes
2 tablespoons coconut milk powder
1 (8.8 ounce) package naan bread
1 (8 ounce) package carrots, peeled and grated
½ teaspoon ground black pepper

Steps:

  • Separate cilantro leaves and stems. Chop leaves and set both aside.
  • Heat 2 tablespoons oil in a large saucepan over medium-high heat. Add onion, cilantro stems, ginger, and 1 teaspoon salt. Cook, stirring frequently, until onion is softened, about 6 minutes. Stir in curry powder and cook until fragrant, about 30 seconds.
  • Add 6 cups water and lentils. Use a spoon to scrape any browned bits from the bottom of the saucepan. Bring to a boil, then simmer over medium heat until lentils are nearly tender, about 10 minutes.
  • Add remaining 1 3/4 cups water, cherry tomatoes, and coconut milk powder. Cook over medium-high heat until lentils are very soft and stew is thickened, 10 to 12 minutes. Lightly crush tomatoes with a spoon.
  • Meanwhile, set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Lightly brush both sides of naan with 1/2 tablespoon oil and sprinkle with salt. Place on a rimmed baking sheet.
  • Place in the preheated oven and broil until golden brown, about 2 minutes, flipping once halfway through. Transfer to a cutting board and cut into wedges.
  • Add carrots to the stew and cook until softened, about 4 minutes. Remove from the heat and stir in 1 1/2 teaspoons salt, pepper, and 1/2 of the reserved cilantro leaves. Ladle stew into bowls. Drizzle with remaining olive oil and garnish with remaining cilantro leaves. Serve with toasted naan.
