- Whisk together sour cream, mayonnaise, lemon juice, Worcestershire sauce, salt, paprika, garlic powder and pepper. Add the chicken to the sour cream mixture and toss to coat. Cover and marinate in the refrigerator for at least 1 hour (or overnight).
- Preheat oven to 375°F. Spray a large baking dish or rimmed baking sheet with cooking spray (about 9 x 13-inches or any other size dish that comfortably holds your chicken).
- Remove the chicken from the sour cream mixture and place in the prepared baking dish. Discard marinade.
- In a small bowl, combine cracker crumbs and melted butter. Press buttered cracker crumbs on top of each chicken breast. Sprinkle with Parmesan.
- Bake, uncovered, for 35-45 minutes or until chicken reaches an internal temperature of 165°F. Garnish with fresh herbs and serve.

Steps:
- Place chicken breasts in a 9x13 inch baking dish. Combine the mustard, lemon and ground black pepper, mix together, and brush the mixture on the chicken until each breast is well coated.
- In a small bowl, mix together the vinegar, sour cream and celery salt and whisk all together until creamy. Pour this mixture over the coated chicken, covering the chicken as evenly as possible. Set aside any remaining sour cream mixture. Cover the chicken dish, put in the refrigerator and marinate for 6 to 8 hours.
- TO BAKE: Preheat oven to 375 degrees F (190 degrees C). Remove chicken to a clean 9x13 inch baking dish. Cover and bake chicken in preheated oven for 45 minutes or so (depends on the size of the chicken breasts), until the chicken is well done and the juices run clear. While baking, brush occasionally with the remaining sour cream mixture. Remove cover for the last 5 minutes of baking and sprinkle with Cheddar cheese, if desired.
- TO GRILL: Grill on an open grill until tender and well done, turning occasionally. When the chicken is almost done, brush on the remaining sour cream mixture until the chicken is well browned.
- While chicken is still hot, sprinkle 1/2 cup of shredded Cheddar cheese over the top and wait for about 1 minute for the cheese to melt; then serve.

- Cut the chicken breasts in half. Use a very sharp knife to cut them in half, butterfly them compltely open, and make two chicken cutlets - like very thin chicken breasts.

- Pat chicken dry, and season both sides with salt and pepper.
- In a medium bowl, stir together the sour cream, chives and 1 tablespoon onion powder. Season with salt and pepper. Add the chicken and turn to coat. (Chicken can sit in the marinade for up to 8 hours. Refrigerate, then let come to room temperature before cooking.)
- In a shallow bowl or lipped plate, stir together the panko and remaining 1 tablespoon onion powder; season with salt and pepper.

OVEN-FRIED CHICKEN WITH SOUR CREAM

- In a nonreactive container or bowl , combine the sour cream, lemon juice, Worcestershire sauce, paprika, garlic, seasoned salt, and pepper. Place the chicken breast pieces in the bowl and turn them to coat thoroughly. Cover and refrigerate for at least 2 hours or overnight.
- Heat the oven to 350 F / 180 C /Gas 4. Line a shallow rimmed baking sheet with foil and then lightly grease the foil or spray it with nonstick cooking spray.
- Put the breadcrumbs in a wide, shallow bowl.
- Remove the chicken breasts from the sour cream mixture and coat the pieces thoroughly with the breadcrumbs.
- Arrange the coated chicken in the prepared baking pan.

CRISPY SWEET AND SOUR CHICKEN

- Firstly in a saucepan heat a tbsp of cooking/olive oil on medium heat. Add the diced onion and let them sweat for a couple of minutes. (While the onions are sweating you can put a separate pan of water on to boil for the rice to cook in.)
- Then add to the onions the garlic, soy sauce, vinegar and tomato puree. Keep stirring this mixture.
- Mix the corn flour (for the sauce) in the cold water then add to the pan.
- Stir in the sugar then add your pepper, carrot and pineapple with the juice from the tin. Bring to the boil then simmer for 10 minutes stirring occasionally.
- While the sauce is simmering you can mix up your batter. mix the two flours together and baking powder,gently add iced water, briefly stir- can stay lumpy but do not over stir.
- Dip your chicken in the batter and deep fry until a golden brown colour. (cut into one of the chicken pieces to ensure it is cooked thoroughly)
- serve chicken on a plate then pour the sauce over the top.
- Serve with rice.
- Also try this recipe with either pork, prawns, vegetables or tofu.
MARINATED BAKED CHICKEN BREASTS
Another recipe I found in TOH. This is wonderfully flavored chicken breast in a buttery cracker crumb coating that my family all loved. Serve with a side of pasta and salad. Note: May use light or FF sour cream and I also reduced the butter in half for this recipe with great results.
