TART CHERRY TEA BREAD

Tart cherries are soaked in tea and studded throughout this simple cherry tea bread. Makes for a great afternoon or late night snack!

10 ounces boiling water
1 bag earl grey tea
250 grams dried tart cherries (also called Montmorency cherries), roughly dropped
1/4 cup maple syrup
zest of 1 orange
1 3/4 cups white whole wheat flour
1 1/2 teaspoon baking powder
1/2 teaspoon cardamom
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 eggs

Steps:

  • Pour boiling water into a large bowl. Place tea bag in the bowl and let steep for 5-7 minutes. Remove tea bag once steeped and discard.
  • Add the dried tart cherries, maple syrup and orange zest to the bowl, toss to combine and submerge the cherries in the liquid. Set aside for 30 minutes.
  • Preheat oven to 350 degrees and line a loaf pan with parchment paper.
  • Add the flour, baking powder and spices to a large bowl. Stir to combine.
  • Add the soaked cherries along with any excess liquid to the bowl with the flour. Add the eggs and mix until well combined.
  • Transfer the batter to the parchment lined loaf pan and bake for 50 minutes to 1 hour until set and golden brown on top and around the edges.
  • Remove the bread from the loaf pan by pulling the sides of the parchment paper up and place the bread on a cooling rack for at least 15 minutes before slicing.

1/2 cup (8 tablespoons, 4 ounces) butter, softened
1/2 granulated sugar
2 large eggs, beaten
1 tablespoon vanilla extract
1 cup milk
2 cups 1 to 1 Gluten Free Baking Flour plus 1 tablespoon, separated.
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 tablespoon baking powder
1 cup (1/2 pound) fresh (**Or 10 ounces frozen) cherries

Steps:

  • Preheat the oven to 350 degrees F. Prepare a 9 inch loaf pan with parchment and baking spray.
  • If using frozen cherries, let them thaw in a strainer for ten minutes. Toss with one tablespoon of gluten free flour. Set aside.
  • Mix the dry ingredients of gluten free flour, salt, baking powder and nutmeg. Set aside.
  • Beat the sugar and the butter until fluffy. Add the eggs one at a time. Add the vanilla and the milk.
  • Gently fold the wet and dry ingredients together. Fold the cherries into the batter. Do not overmix.

2 1/4 cups all-purpose flour (reserve 1/4 cup of this for flouring the cherries)
1 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups sweet cherries in juice, drained
8 tablespoons unsalted butter, softened
3/4 cup sugar
1/4 cup honey
2 large eggs

Steps:

  • Preheat oven to 350°F.
  • Sift the 2 cups flour (set aside reserved 1/4 cup for cherries), baking powder, baking soda, and salt together into a bowl.
  • In a second bowl, toss the cherries with the reserved 1/4 cup flour.
  • In the bowl of an electric mixer, cream the butter until it is light and fluffy; add the sugar and honey gradually, beating the mixture until it is very light.
  • Add the eggs, one at a time.
  • With mixer at lowest speed, add the flour mixture.
  • Fold the floured cherries into the batter.
  • Turn the batter into a buttered and floured loaf pan, approximately 9 x 5 x 3 inches.
  • Bake the bread in the center of the oven for 1 hour.
  • Cool the loaf for 15 minutes in the pan; unmold the bread on a rack to cool completely.
  • Wrap the cherry bread loaf in plastic wrap and keep for a day before serving for best flavor.

Chocolate-Cherry Sourdough Bread image

This recipe for sourdough bread comes from Francisco Migoya and Nathan Myhrvold, who wrote "Modernist Bread" (The Cooking Lab, 2017). It requires an active sourdough starter and plenty of time (about 20 hours) to allow the dough to develop and proof, though very little of that time is hands-on. Rich with tart dried cherries and dark chocolate chips, and gently bitter from the coffee and cocoa powder, the complex, tangy bread is somewhere between sweet and savory, ideal as is or spread with a little salted butter. Since the dough is dark to begin with, use a thermometer to test if it's done, and make sure you allow it to cool completely before slicing it open.

1 heaped teaspoon/8 grams instant dry yeast
3/4 cup/185 grams warm water
1 cup plus 1 tablespoon/230 grams liquid sourdough starter (see recipe)
1 2/3 cups/225 grams bread flour, plus extra for dusting
1/4 cup/30 grams cocoa powder
1 tablespoon/15 grams espresso or very strongly brewed coffee
1 1/8 teaspoon/7 grams fine salt
Canola oil (or other neutral oil), for greasing
1 cup/160 grams dark chocolate chips
1 generous cup/160 grams dried cherries

Steps:

  • In a wide mixing bowl, whisk together the yeast and water and allow the yeast to bloom, about 1 minute. Whisk the sourdough starter into the mixture until dissolved, then add the flour, cocoa powder and coffee. Use a dough scraper to stir the ingredients into a shaggy mass. Cover with plastic wrap and set aside for 20 minutes, then add the salt, incorporating it well. Transfer to a lightly oiled plastic container and cover with plastic wrap; it will be sticky.
  • Rest dough for 30 minutes, then lightly oil hands to fold: Pull one edge of the dough up and press it down into the center of the ball; repeat with the 3 other edges of the dough, then cover dough. In 30 minutes, repeat the folding, this time incorporating the chocolate chips and cherries. Repeat the folding every half-hour, for a total of 6 folds. Check for gluten development: Pinch a piece of dough between your fingers and stretch it. It should stretch out to a thin, transparent membrane before tearing. If not, repeat folding and check again.
  • Turn the bread out onto a lightly floured surface and use hands to gently tuck the edges up toward the center of the dough, then flip the dough over so it's seam-side down, and gently round with your hands. Cover with plastic wrap and rest dough for 20 minutes, then tuck edges down toward the seam, to shape dough into a tighter ball. Cover with plastic wrap and rest for 10 minutes. Transfer to a flour-dusted wicker breadbasket, seam side up, pinching the seam shut if necessary. Wrap basket with plastic wrap, or slide the basket into a clean plastic bag, closing it. Proof at about 55 degrees, or in the refrigerator, for 14 to 16 hours, until dough has increased in size, and springs back slightly to the touch.
  • When you're ready to bake, remove the dough from the refrigerator and transfer it, smooth side up, to a large cast-iron pot (with a lid) lined with a round of parchment paper. Be careful not to over-handle dough and lose air bubbles. Cover and bring to room temperature for 1 to 2 hours. Position a baking rack in the center of the oven and heat to 500 degrees. Using a razor or fine, sharp knife blade, score a cross on the top of dough, making a fast, clean cut about 1/8- to 1/4-inch deep.
  • Bake covered for 33 minutes. Remove lid and bake for another 10 minutes, cracking open the oven door for the last 5 minutes. Push a thermometer into the bread dough; it should read 195 to 200 degrees for cooked bread. Transfer bread to a cooling rack, carefully remove the paper, and allow to cool completely at room temperature before cutting open.

If you've never had homemade focaccia, you're in for something special. This sweet one, sprinkled with rosemary, isn't overly doughy and has an amazingly crisp crust. The bread isn't difficult to make, but it does take time. And don't worry if the dough seems loose as you work with it; that's how it should be.

1 1/2 pounds bread flour, (4 1/2 to 5 cups), plus more for surface and bowl
2 3/4 cups warm water (about 110 degrees)
3/4 teaspoon active dry yeast (from one 1/4-ounce envelope)
Coarse salt
1/3 cup plus 2 tablespoons extra-virgin olive oil
12 ounces fresh sour (tart) cherries (or drained thawed frozen), pitted (2 cups)
2 tablespoons coarse sanding sugar
2 tablespoons fresh rosemary

Steps:

  • Whisk flour, water, and yeast with a mixer on medium speed until combined. Cover with plastic wrap, and let stand in a warm place until tripled in volume and bubbling, about 2 hours.
  • Add 1 tablespoon plus 1 1/2 teaspoons salt to bowl. Switch to dough-hook attachment, and mix on low speed for 5 minutes. Raise speed to medium, and mix for 30 seconds. (Dough should be loose and sticky.)
  • Turn out dough onto a well- floured surface using a dough scraper. Fold bottom edge of dough up toward the center, and pat gently to deflate.Fold top edge down toward the center, and pat gently. (Folds should overlap slightly.) Repeat with left and right sides, tapping off excess flour as you work. (Dough will be difficult to handle, but try not to incorporate too much flour.) Gently flip dough into a lightly floured bowl. Cover with plastic wrap, and let stand in a warm place until doubled in volume, about 1 hour.
  • Turn out dough onto a well-floured surface, and repeat folding process. Transfer dough to lightly floured bowl. Cover with plastic wrap, and let stand in a warm place until doubled in volume, about 1 hour.
  • Preheat oven to 450 degrees. Pour 1/3 cup oil onto a 13-by-17-inch rimmed baking sheet, coating entire surface. Turn out dough onto baking sheet, coating bottom with oil. Push dough out toward edges of baking sheet using your fingertips. Cover with plastic wrap, and let stand for 15 minutes, pressing dough toward edges occasionally.
  • Drizzle dough with remaining 2 tablespoons oil. Scatter cherries over top, and sprinkle with sugar and rosemary.
  • Bake in lower third of oven or on a pizza stone placed on the oven floor, rotating halfway through, until bottom is golden brown, 30 to 40 minutes. Immediately slide focaccia out of baking sheet onto a wire rack. Drizzle with any oil left in pan. Let cool slightly. Serve warm or at room temperature.

1 (16 ounce) can tart red cherries
1/2 cup butter
1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
2 cups flour, divided
3 tablespoons buttermilk
2 large eggs, beaten
1 teaspoon almond extract
1 cup chopped pecans or 1 cup walnuts

Steps:

  • Preheat oven to 350 degrees. Grease a 9x5x3-inch loaf pan and reserve.
  • Drain the cherries very well and pulp in the blender. Do not puree.
  • Cream the butter and sugar in a large bowl.
  • Remove 1 tablespoon of flour and reserve.
  • Combine remaining flour, baking soda, and salt in another bowl. Add these dry ingredients to creamed mixture, alternately with the buttermilk.
  • Add the beaten eggs, almond extract and pulped cherries to the batter.  Stir the reserved tablespoon of flour into the nuts, coating well. Add the floured nuts to the batter. Stir to incorporate all ingredients.
  • Bake in prepared loaf pan in preheated oven for 50 to 60 minutes. Cool in pan 10 minutes and remove.
