EASY WHITE CHILI
A very tasty, somewhat spicy, variation of chili that uses chicken. I like to serve it with sweet corn bread.

Steps:
- Heat the oil in a large pot over medium heat. Add the onions and garlic and saute for 10 minutes, or until onions are tender. Add the chicken, chicken broth, green chile peppers, cumin, oregano and cayenne pepper and bring to a boil.
- Reduce heat to low and add the beans. Simmer for 20 to 30 minutes, or until heated thoroughly. Pour into individual bowls and top with the cheese.

EXCELLENT WHITE CHILI
This is our tried and true white chili that folks have raved about - this recipe has been handed out many a time. Very, very tasty! You can substitute cubed chicken for the pork, if you like. It is ABSOLUTELY delicious. :) I've made it, friends have made it... you should make it.

Steps:
- Over medium heat in a heavy pot, sauté the pork (or chicken) and onion in oil and butter for 8 to 10 minutes or until the meat browns and onion softens.
- Add the rice and barley stir to coat, then stir in the cumin, salt, garlic, white beans, garbanzo beans, chilies, hominy, Tabasco, crumbled bacon, chicken broth, tomatillos, lime juice, and basil.
- Bring to boil, then reduce heat, cover, and simmer for 40-45 minutes.
- Serve each portion topped with about 2 Tbsp cheese and together with good, crusty bread and a salad.
- If the chili is too thick for your preference, you can add chicken broth to the desired consistency.
MIKE'S WHITE CHILI
This is the recipe my husband is famous for. Everyone loves it and always asks for the recipe. It's great, easy, and can be doubled for a crowd!

Steps:
- Put water, lemon pepper, and cumin seed in a large pot.
- Bring to boil, Add diced chicken and cook completely (about 10-15 minutes).
- Reduce heat to low.
- In a separate skillet, saute the chopped garlic and onion about 5 minutes.
- Add the garlic, onions, and all of the remaining ingredients into the pot (except cheese).
- Keep the temperature low and simmer for at least 1/2 hour.
- Serve the chili over or with nacho chips and shredded cheese.
- Enjoy!
- NOTE: DO NOT drain the liquid from the canned ingredients.
- Add all of it to the chili.

EASY WHITE CHILI
This is a recipe that I got from a Mother from my son's preschool. I was dying to find an easy white chili recipe that I could quickly make after working all day...Well, this one is it. Tastes just like what I was craving, and even better is the fact the the kids ate it up! Really good, if you ask me...They especially like this when I serve it with "Jiffy Cornbread" -- which as you probably know is the "sweet" kind of cornbread...

Steps:
- Combine chicken breasts, beans, broth, garlic, onions, chilies and spices in a large stock pot. Bring to a boil and simmer for approximately 45 minutes to 1 hour, until chicken is cooked thoroughly.
- Remove chicken and cut into bite sized pieces when slightly cooled (enough to handle.).
- Add chicken back into the soup and simmer for about 10 minutes, until heated through.
- Serve with sour cream and grated cheese as a garnish.
THE DOVE'S NEST WHITE CHILI
This is my favorite soup from a restaurant in Waxahachie, Texas called The Dove's Nest. The recipe comes from the restaurant's cookbook.

Steps:
- Heat the olive oil in a large stockpot over medium-high heat.
- Add the onion.
- Saute for 3 to 5 minutes or until softened.
- Add the garlic.
- Cook for 1 to 2 minutes longer.
- Do not brown.
- Add the tomatoes, tomatillos and jalapeno.
- Cook until the tomatillos are tender, stirring occasionally.
- Add the chicken stock, green chilies, chicken, oregano, cumin, cilantro, beans and lime juice.
- Cook until heated through, stirring frequently.
- Season with salt and pepper.
- Ladle the chili into serving bowls.
- Serve garnished with a dollop of sour cream, shredded cheese and fried tortilla strips.
