Upgrade your morning breakfast with this Fluffy Soufflé Omelette recipe. Each bite is filled with rich flavor that melts in your mouth and tastes like a cheesy cloud!

3 large eggs
¼ tsp salt
¼ cup shredded cheddar cheese (divided, 28 g)
2 Tbsp butter (28 g)

Steps:

  • Separate: Separate the egg whites from the yolks, placing them in separate bowls. Be sure to not get any drops of egg yolk in the egg whites or they won't whip correctly!
  • Beat Whites: In a large, clean bowl, beat the egg whites until you get stiff peaks.
  • Beat Yolks: In a small bowl, whisk or beat together the yolk and salt until it is pale and creamy looking, about 30 seconds.
  • Fold: With a rubber spatula, gently fold the egg yolks into the egg whites. Add half of the cheese and fold to combine.
  • Cook: Melt the butter in a large saute pan over medium/low heat. Add the egg mixture, using your spatula to spread it out into an even circle. Cover and cook until the bottom is golden and the top is just barely set, about 3 to 5 minutes. Sprinkle on remaining cheese, allowing it to melt.
  • Fold: Fold omelette in half (to do this without breaking the omelette, I like to slide the omelette halfway off the pan and onto a plate, then fold the remaining half over itself).
  • Serve: Season with salt and pepper, as needed. Serve immediately.

Nothing to worry about here, folks: This souffle is the opposite of fussy. Right out of the oven it's gloriously light and airy like a souffle should be, but as it deflates it becomes rich and decadent -- meaning that even if your souffle collapses, it's still going to be amazing.

Two 10-ounce packages chopped frozen spinach, thawed
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 1/2 cups milk
1/2 teaspoon kosher salt
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground black pepper
3 large eggs, separated
1/8 teaspoon cream of tartar
1/2 cup shredded Parmesan
1 cup grated Pecorino-Romano
Nonstick cooking spray or additional softened butter, for the souffle dish

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the spinach in a colander to drain, pressing out as much excess liquid as you can.
  • Make the bechamel sauce: Melt the butter in a medium saucepan over medium heat; add the flour and stir until it becomes a thick paste. Add the milk 1/2 cup at a time, whisking well after each addition, until you have a smooth sauce. Remove from the heat and whisk in the salt, nutmeg and pepper. Taste for seasoning. Set aside to cool slightly.
  • Beat the egg whites until just frothy with an electric mixer. Add the cream of tartar and beat on high speed until it forms firm peaks. Set aside.
  • Whisk the egg yolks in a large bowl until they are pale yellow, then add the warm bechamel sauce a bit at a time. Switch to a large rubber spatula; gently mix in the spinach, Parmesan and 1/2 cup Romano. Fold in a third of the egg whites to lighten, then gently fold in the remaining egg whites until thoroughly combined but still light and fluffy.
  • Lightly grease a 2-quart souffle dish with cooking spray or softened butter, then add the remaining 1/2 cup Romano and rotate the dish to coat the bottom and sides with the cheese. Pour in the souffle batter, then bake until puffy and golden brown, 25 to 30 minutes. Serve immediately.

This is a tasty and quick side dish--ready in just minutes. Note, this is a 'lite' souffle--for a more traditional souffle, double the sauce ingredients.

⅓ cup grated Parmesan cheese
1 teaspoon crushed garlic
salt and pepper to taste
2 (10 ounce) packages frozen chopped spinach, thawed and drained

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl whisk together egg, milk, cheese, garlic, salt and pepper. Fold in spinach. Place in a small casserole dish.
  • Bake in preheated oven for 20 minutes, or until lightly set.
  • NOTE: If you are in a hurry, use a microwave safe casserole dish, cover with plastic wrap, and cook on high for 3 minutes. Release the steam, recover, and cook on high for another 3 minutes. Enjoy!

4 egg whites
2 tablespoons water
1/4 teaspoon salt
4 egg yolks
1 tablespoon butter or 1 tablespoon margarine

Steps:

  • Beat egg whites until frothy.
  • Add water and salt; continue beating about a minute or until stiff peaks form.
  • Beat yolks at high speed of electric mixer until thick and lemon colored (about 5 minutes).
  • Fold yolks into whites.
  • Heat butter in a 10 inch skillet with an oven proof handle.
  • Pour in egg mixture, mounding it a little higher on the sides.
  • Cook over low heat for 8 to 10 minutes or until eggs are puffed and set and the bottom is golden brown.
  • Place skillet in a 325 degree (163 celcius) oven; bake for 10 minutes or until a knife inserted in the middle comes out clean.
  • Make a shallow cut off center of the omelet.
  • Place your fillers on the larger half of the omelet.
  • Fold the smaller half over the fillers.
  • Slip omelet onto a warmed plate.

6 large eggs
Kosher salt and freshly ground pepper
3 scallions, thinly sliced
1 tablespoon unsalted butter
4 cups baby spinach (about 2 1/2 ounces)
1 baguette, cut crosswise into 4 pieces, each piece split open
6 to 8 slices provolone, cheddar or American cheese (about 4 ounces)
2 tablespoons mayonnaise-mustard blend
8 thin slices ham (about 4 ounces)
Radishes and olives, for serving

Steps:

  • Preheat the oven to 350˚ F. Whisk the eggs in a large bowl with 1/2 teaspoon salt and a few grinds of pepper; whisk in the scallions. Set aside. Melt the butter in a large ovenproof nonstick skillet over medium heat. Add the spinach, season with salt and pepper and cook, tossing to wilt, about 1 minute. Add the eggs to the skillet and move the spinach evenly around with a wooden spoon. Cook until the edges are slightly set, about 1 minute.
  • Transfer the skillet to the oven, along with the baguette pieces. Bake until the bread is toasted and the omelet is just cooked through but not browned, 4 to 6 minutes. Arrange the cheese slices over the omelet during the last minute of cooking to melt.
  • Slide the omelet out of the skillet onto a cutting board. Spread the mayonnaise-mustard blend on one side of each baguette piece. Cut the omelet into 8 wedges. Fill each baguette piece with 2 omelet wedges and 2 slices of ham. Serve with radishes and olives.

1/4 cup onion, chopped
1 tablespoon butter
3 eggs, separated
white sauce
1 cup chopped spinach, cooked and drained
1/2 cup parmesan cheese, grated
2 tablespoons butter
2 tablespoons flour
1 cup milk or 1 cup light cream
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees.
  • Saute onion in butter.
  • Beat egg yolks until thick and lemon-colored.
  • Stir into hot white sauce along with spinach and cheese.
  • Fold in egg whites beaten until stiff, not dry, peaks are formed; turn into greased 1 1/2 qt casserole.
  • Set in pan of hot water and bake about 50 minutes.
  • White Sauce: Melt butter, stir in flour and heat until bubbly.
  • Gradually add milk or cream, stirring constantly; cook 1-2 minutes.
  • Season with salt and pepper.
  • Makes about 1 cup.
  • Serve immediately.

  • Preheat the broiler and position a rack in the center of the oven. In a large bowl, using a whisk or a handheld electric mixer, beat the egg whites until soft peaks form.
  • In a small bowl, whisk the egg yolks with the salt and one-fourth of the beaten egg whites. Fold the yolk mixture into the remaining beaten whites until no streaks remain.
  • In an 8-inch ovenproof skillet, melt the butter. Scrape the omelet mixture into the skillet and shake gently to evenly distribute the eggs. Sprinkle the cheese all over and transfer the skillet to the oven. Broil the omelet for about 3 minutes, until lightly browned and very puffy. Carefully slide the omelet onto a plate, folding it in half. Serve right away.
