VICHYSSOISE
Vichyssoise is a thick French velvety soup made with leeks, potatoes and cream, that is traditionally served cold.

Steps:
- In a pot, melt the butter over medium heat.
- Add the leeks, lower the heat and gently fry without browning.
- Add the potatoes, and mix well.
- Add water and season with salt and pepper.
- Bring to a boil and cook over low to medium heat for about 30 minutes, or until the potatoes are tender.
- Drain the leeks and potatoes but reserve the cooking water.
- Pass the vegetables through a potato masher.
- Add a ladle of the cooking water and the cream. Whisk well, then strain everything through a strainer.
- Pour the filtered Vichyssoise into the pot, place it on a medium heat and bring it to the boil while continuing to whisk.
- Remove from the heat as soon as it comes to a boil and let cool to room temperature.
- Place the vichyssoise in the refrigerator for at least 2 hours.
- Adjust the seasoning with salt and pepper if necessary before serving.
- Pour the vichyssoise into bowls and sprinkle with chopped chives

VICHYSSOISE
Steps:
- Heat butter until it begins to brown: In a large (6-quart) pot, heat the butter on medium high heat until it melts and foams up. Continue to heat until the foam subsides a little and the butter just begins to brown.
- Add potatoes, water or stock, salt, bring to simmer: Add the chopped potatoes, salt, and water or stock. Bring to a boil, reduce to a simmer. Cook, partially covered for 30-40 minutes, until the potatoes are completely cooked through. Remove from heat.
- Purée until smooth: Purée using an immersion blender or working in batches, blend in a blender. (Careful! With hot liquids only fill the blender 1/3 of the way full, and hold the blender top on with your hand while blending.) Purée until completely smooth. If you want an even smoother soup, you can take the extra step of pressing the purée through a sieve with a rubber spatula.
- Cool and stir in sour cream and cream: Allow to cool a bit before stirring in the sour cream and whipping cream. Allow to cool completely and chill in the refrigerator. The soup should be served just below room temperature (maybe 65°F or 18°C). If it is too cold, it won't taste as good. Add more salt to taste. Serve garnished with chopped fresh chives.

VICHYSSOISE
This is a simple take on a classic cold soup that is as delicious to eat as it is to say: Vishi-swazz! It is dead easy to make as well. Just sauté potatoes with some chopped leeks, then simmer them all with stock until tender. Send the mixture through a food processor or blender, let cool, then chill in the refrigerator until ready to serve. Garnish with chopped chives.

Steps:
- Melt 2 tablespoons butter in a large pot.
- Add 3 peeled and cubed potatoes and 3 trimmed and chopped leeks.
- Cook for about 3 minutes, stirring, until softened.
- Add 4 cups stock. Boil, cover, lower the heat and simmer until vegetables are tender, about 20 minutes.
- Purée, then let cool. Stir in 1/2 cup or more cream before serving.
- Garnish with chopped chives.
SOME LIKE IT HOT WINGS
I use to work at this little restaurant in the mid west that made the most delicious hot sauce for wings. Here is my version. Please treat the insanity sauce as you would a hot pepper. This sauce is absolutly delicous in wraps with chicken tenders.

Steps:
- Preheat the oil/shortening to 375°F Add wings to oil being careful not to crowd the pan. stir carefully to make sure the wings do stick together periodically. Cook for 7-10 minutes depending on the size of the wings. Use your Judgment.
- In a sauce pan melt the butter with Frank's hot sauce.
- Stirring constantly to make sure that the butter doesn't separate from the sauce add black pepper and Dave's insanity sauce.
- Drain wings in metal colander if you have one and toss with sauce in a zip lock bag or in a large bowl.
- Serve with your favorite dressing.
- Enjoy!
"SOME LIKE IT HOT"
If you don't like it too hot, leave out the chili peppers and sambal, it will still be a spicy Indonesian inspired dish.

- Start with the topping, in a frying pan, dry fry the coconut and peanuts until golden brown, tossing it so it wont burn, remove from the pan and let cool.
- Mix together the soy sauce, cayenne, sambal, ginger, sugar, garlic and water, set aside, you will use this after you fried the tempeh.
- In a wok or frying pan, heat the tablespoon of oil, fry the onion and garlic for one minute, add the coriander, cumin and if you use them the chili peppers, fry this for two minutes.
- Add the carrots, beans and tomatoes, fry until you see the tomatoes going soft, add the stock, bring to the boil and simmer for about 10 minutes.
- Heat the oil in a frying pan large enough to hold the tempeh strips in one layer.
- Fry the tempeh until golden, it will soak up the oil, this is normal.
- Lower the heat when you see them starting to color but fry for a few minutes more, add the soy mix, stir to coat and add to the vegetables, mix.
- By now the tomatoes should have made a sauce and have dissolved.
- Taste to see if you want to add more sambal and/or sugar.
- Now add the bean sprouts, cook further until you see them go limp.
- Transfer to serving dish, sprinkle with 2 tablespoons of the coconut and peanut mixture, serve with rice and the remaining topping on the side.
SOME LIKE IT HOT...VICHYSSOISE...SOME LIKE IT COLD!
This is simple to prepare and makes a good potato soup. It can be prepared in advance up to the addition of the half and half. Just refrigerate at that point and when ready to serve add the half and half and serve or heat and serve. As the Title says, Some like it hot, some like it cold!

Steps:
- Melt butter in your soup pot.
- Saute leeks and onion in butter until they're a light yellow or golden color.
- Add broth, potatoes and pepper.
- Bring to a boil, reduce heat and simmer for about 20 minutes or until potatoes are done.
- Using a blender or food processor run the soup, including all the liquid until it is velvety smooth. You may have to do this in batches.
- Taste and adjust seasonings if necessary.
- If serving cold or if you are making it in advance put in fridge until it's ready.
- When ready to eat add the half and half and stir. You may need to add more half and half to get the consistency you like.
- If eating it hot microwave or put it on the stove to reheat.
- Add any garnish and enjoy.
