GUACAMOLE SHRIMP APPETIZERS
I wanted something different than a cheese-based appetizer. That's what you'll have in this fresh and flavorful snack. s for out by the pool. Tortilla chips are topped with a creamy guacamole and zippy shrimp mixture. It's yummy!-Ann Deren-Lewis, Bradbury, California

Steps:
- Broil peppers 4 in. from the heat until skins blister, about 5 minutes. With tongs, rotate peppers a quarter turn. Broil and rotate until all sides are blistered and blackened. Immediately place peppers in a small bowl; cover and let stand for 20 minutes., Peel off and discard charred skin. Remove stems and seeds. Place the roasted jalapenos, cilantro, pine nuts and garlic in a food processor; cover and pulse until chunky. While processing, gradually add oil in a steady stream; set aside., In a large skillet, saute the shrimp, corn and red pepper in oil for 3-5 minutes or until shrimp turn pink. Remove from the heat; cool for 5 minutes. Add pesto mixture; toss to coat. Cover and refrigerate., For guacamole, place the avocado, cilantro, onion, lime juice and sour cream in food processor. Cover and pulse until smooth. Cover and chill., Just before serving, top each tortilla chip with guacamole., Place 2 teaspoons shrimp mixture on each.,

CREAMY GUACAMOLE
This is a recipe handed to me by my Aunt Shawna. It's smooth, rich, creamy, definately not your average guacamole. Even my picky three-year-old daughter loves this. I usually eyeball ingredients when I make this, so the measurements are guesses. You can adjust to suit your taste! This guacamole is great served with tortilla chips, but I love to spread it on my sandwiches, too!

- Peel the avocados and remove the pits, reserving one for garnish, if desired, and place the flesh in a bowl.
- With a fork, gently mash the avocados, leaving some small chunks.
- Add remaining ingredients, mix well.
- Serve in a bowl garnished with reserved pit.

- Preheat oven to 425 degrees F. Spray cups of a 24 cup mini muffin tin or a standard size 12-cup muffin tin with nonstick cooking spray.
- To make tortilla cups: Using a 3 inch cookie cutter or cup, cut about 8-9 medium circles out of each tortilla. Brush each circle with olive oil or spray with cooking spray. Press each circle into a muffin cup. Bake 10-12 minutes or until cups are golden and crispy.
- To make guacamole: In a medium bowl, mash together the avocados. Mix in onion, tomatoes, cilantro, cayenne, salt and lime juice. Stir until fully combined, cover and set aside in the fridge until ready to use.
- To cook shrimp: Combine shrimp with taco seasoning in a large bowl or ziplock bag. Heat a large heavy-duty or cast iron skillet on high heat for 2 minutes. Add the olive oil and shrimp. Cook shrimp in a skillet on medium-high heat until pink and cooked through, about 5 minutes. Remove from heat and set aside.

- Place a rack in the center of your oven and preheat the oven to 400 degrees F. Place the shrimp in a large mixing bowl, drizzle with olive oil, then sprinkle with chili powder, cumin, smoked paprika, and kosher salt. Toss to coat, then spread the shrimp on in a single layer on a large baking sheet. Roast for 4 to 6 minutes, just until the shrimp are opaque and cooked through. (Do not overcook, or the shrimp will be chewy.) Set aside.
- To assemble the bites: Top each tortilla chip with a spoonful of the guacamole and a roasted shrimp. Garnish with additional fresh cilantro and cheese. Serve at room temperature.
