Lemons are a kiwi favorite. This simple, yet stunning, lemon spread is divine over hot scones, toast, or muffins. Use nice, juicy lemons with a bright yellow rind. A special thank you to Nana for sharing her recipe.

Number Of Ingredients 4

2 eggs (lightly beaten)
2 1/2 cups sugar
4 ounces butter (cubed)
4 lemons (rind and juice of)

Steps:

  • Note about lemon rind: use only the yellow part of the rind. The white part can be bitter.
  • Place all ingredients in large microwave safe bowl and mix lightly. You may want to cover lightly with a lid.
  • Cook on high for 4 minutes.
  • Stir and cook on high for a further 4 minutes.
  • Stir again and let cool for a while.
  • Put in small jars and place in the refrigerator.

Fast fix up makes broccoli not the same old same old! My teens love this and will only eat broccoli like this or smothered in cheese- this is healthier! I created this recipe after the broccoli served at my fave Chinese place. The variety of ingredients apply to many regional cuisines such as Italian, Asian and SW.

Number Of Ingredients 7

1 (14 ounce) bag frozen broccoli florets or 2 heads fresh broccoli, cleaned and cut into florets
1/4 cup water
2 tablespoons olive oil
1 tablespoon lemon juice, bottled is fine
2 garlic cloves, minced or 1 teaspoon garlic powder
1 teaspoon red pepper flakes (optional)
1 teaspoon salt, adjust to your liking

Steps:

  • Microwave broccoli and water in covered bowl on high for 6 minutes or til crisp tender.
  • While it is cooking mix the rest of the ingredients together.
  • Drain cooked broccoli.
  • Pour lemon garlic mixture over broccoli and mix to coat.
  • If using fresh garlic cover the dish and let sit for about 2 minutes to allow heat from broccoli to "cook" and remove the raw taste from the garlic.
  • If using garlic powder you are ready to serve.

1 cup broccoli floret
1 tablespoon butter
4 ounces velveeta process American cheese
1/4 cup lemon juice
1/4 teaspoon black pepper

Steps:

  • Heat the butter in a 2 cup microwave safe dish until melted (about one minute) Add cheese, pepper, and lemon juice and microwave on high for two minutes.
  • Then remove and stir until the cheese is melted.
  • At the same time as you are finishing the cheese, place the broccoli florets on a microwave plate and cover with a damp paper towel.
  • Microwave on high for 2 minutes.
  • Remove towel and pour cheese over the broccoli.

12 ounces broccoli florets
2 teaspoons lemon zest
1 teaspoon minced garlic
1 tablespoon lemon olive oil (recommended: O Olive Oil)
1 tablespoon water
2 tablespoons lemon juice
Salt and freshly ground black pepper

Steps:

  • In a microwave-safe bowl, add broccoli florets, lemon zest, minced garlic, lemon olive oil, and 1 tablespoon water. Toss to combine.
  • Cover bowl with plastic wrap and microwave on high setting for 4 to 5 minutes. Check for doneness; cook 1 more minute if necessary. Sprinkle with lemon juice and toss. Season, to taste, with salt and freshly ground black pepper. Serve immediately.

1/4 cup onion, chopped
1/2 cup walnuts, coarsely chopped
1/2 cup milk
1/4 cup butter, melted
2 eggs
1/2 cup Bisquick
1/4 teaspoon garlic salt
1 cup cheddar cheese, shredded

Steps:

  • Heat oven to 375.
  • Grease a 9x9x2" pan.
  • Mix the broccoli, corn, onion and walnuts.
  • Place in the pan.
  • Beat the remaining ingredients except for the cheese until smooth, stopping frequently to scrape down the sides of the mixer if necessary.
  • Pour evenly into the pan on top of the vegetable mixture.
  • Bake until a knife inserted into the center comes out clean, about 23-25 minutes.
  • Sprinkle with the cheese.
  • Bake until the cheese is melted, 2-3 minutes longer.
  • Cool for 30 minutes, then cut into triangles or squares.

Make your own fresh homemade cheese easily in a microwave with only two ingredients! Yield is a guess.

Number Of Ingredients 2

2 cups milk (or heavy or whipping cream for richer taste)
2 tablespoons fresh lemon juice or 2 tablespoons white vinegar

Steps:

  • Microwave milk for 30 seconds or until just slightly warm.
  • Mix in lemon juice (or vinegar) and stir a few times until lemon juice has reached all parts of the milk.
  • Microwave the mixture for 40 seconds. You should see small pieces of a soft white substance (your cheese) floating in a clear yellowish liquid (whey).
  • Put the mixture over a strainer and drain out the whey by pressing with a spoon. Flip the cheese upside down and strain again. Press a clean napkin against the strainer under the cheese towards the end of the straining process.
  • Move the cheese to a bowl and enjoy.
  • If not used immediately, spread cheese on a cheesecloth or a clean tablecloth and let sit over a bowl or cup for at least one hour to drain away more of the whey. Squeeze cloth to get rid of the last bit of liquid.
  • Run cheese in a food processor if you wish for a smoother texture. Use within a week.
