1 ½ pounds ground beef
1 cup chopped onion
½ cup water
1 (1 ounce) package taco seasoning mix
1 (10 ounce) can refried beans
½ cup salsa
1 (6 ounce) can sliced black olives
1 (4 ounce) can diced green chiles
15 taco shells, broken up, or more to taste
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Cook ground beef and onions in a skillet over medium heat until beef is browned, 7 to 10 minutes; drain grease. Stir in water and taco seasoning; cook, stirring often, until thickened, about 2 minutes. Add refried beans, salsa, olives, and green chiles. Cook and stir over low heat until ingredients are warmed through, 3 to 4 minutes.
  • Place half of the taco shells in the bottom of the baking dish. Pour in half of the ground beef mixture; sprinkle with half of the Cheddar cheese. Repeat with remaining taco shells, ground beef mixture, and Cheddar cheese.
  • Bake in the preheated oven until cheese is melted and bubbly, 20 to 25 minutes.

ALL ingredients can be adjusted to suit taste. It is best to prepare this casserole and bake right away as the broken tacos will get too soggy.

1 1/2 lbs ground beef
1 large onion, finely chopped
2 tablespoons minced fresh garlic (or to taste)
1 bell pepper (use red or green, seeded and chopped)
seasoning salt
black pepper
1 cup water
2 teaspoons dried chili pepper flakes (or to taste)
1 (215 ml) bottle taco sauce (can use two bottles of taco sauce if desired)
2 (4 ounce) cans diced green chilies
1 (14 ounce) sliced ripe olives, drained and divided (can use green or black()
1 (1 1/4 ounce) package taco seasoning mix
1 (4 1/2 ounce) package taco shells or 1 (4 1/2 ounce) package white corn tortillas, broken into pieces
4 cups shredded cheddar cheese, divided
1 large firm tomatoes (can use 2 tomatoes)
3 sliced green onions (optional)

Steps:

  • Set oven to 350 degrees.
  • Cook beef, onion, bell pepper, chili flakes and garlic until beef is no longer pink; drain then season with seasoning salt and black pepper (or cayenne pepper).
  • Stir in water, taco sauce, green chiles, half of the olives and taco seasoning mix (you can use 2 packages of seasoning mix if desired for this).
  • Cook over low heat for about 6-8 minutes.
  • Layer HALF of broken shells on bottom of greased 13x9 baking pan; cover with HALF of meat sauce, then sprinkle with 2 cups (or to taste) cheddar cheese.
  • Repeat with remaining broken taco shells, meat sauce and then top with remaining cheese (to prevent the cheese from getting hard, you can sprinkle on the last 10 minutes before the end of baking time and return to oven until melted).
  • Bake for 20 minutes or until bubbly, and cheese is melted.
  • After baking, sprinkle with remaining olives, tomatoes and green onions.
  • **NOTE** I sometimes drizzle bottled salsa sauce (mild or spicy) on top of the ground beef and then on top before baking.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir ground beef in a large skillet over medium-high heat until crumbly, evenly browned, and no longer pink, 5 to 7 minutes. Drain and discard any excess grease. Stir salsa, onion, mayonnaise, chili powder, and cumin into the beef. Remove from heat.

3 tablespoons chili powder

One 15-ounce can pinto beans, strained and rinsed

Steps:

  • Heat the oil in a large skillet over high heat. When the oil is shimmering, add the beef and sprinkle with the chili powder, cumin, oregano, 1 teaspoon salt and a few grinds of pepper. Cook, breaking up the meat into smaller pieces, until browned, about 5 minutes. Add the onions and garlic and cook until the onions are soft, about 5 minutes more. This is one of my mother-in-law's only recipes. So easy and absolutely yummy. . .but you have to eat it all in one setting as the leftovers don't heat up well. I have subbed lean ground turkey in the past and it is a bit more bland than the beef, so if you take that route, make sure you brown with the turkey with a clove of garlic and a couple tbsp diced onion.

1 (4 1/2 ounce) can green chilies, chopped

0.75 (13 ounce) bag Doritos (or any other taco flavored chip, you won't use the entire bag)

Could be done with chicken as alternative too. I served this with cooked spinach and put my portion of casserole over the spinach.

1 (10 1/2 ounce) can mushroom soup
1 (8 ounce) can beef broth

6 slices cheddar cheese
1 (8 ounce) bag tortilla chips

Steps:

  • Brown ground beef.
  • Add taco seasoning, mushroom soup, beef broth, and Rotel tomatoes.

1 lb ground chicken or 1 lb ground beef
1 small onion, minced
2 garlic cloves, minced
1 tablespoon chili powder

10 ounces tomatoes and green chilies, undrained (Rotel)
14 ounces pinto beans, drained
1 cup corn kernel
10 ounces tortilla chips
2 cups monterey jack cheese, shredded

Steps:

  • Brown meat, onion and garlic in large skillet until no pink remains and onion is clear. Drain grease.
  • Add spices, tomatoes, beans and corn and mix well.
  • Continue to cook over medium heat until some of the liquid has evaporated. You want a little liquid but not alot- like a sloppy joe mixture.
  • In an 8x8 greased pan crush a handful of chips and place on the bottom of the pan, adding more chips until you have a good layer. **** I like to get it as dry as possible here so that it holds together like a lasagna. PLEASE use your taste and judgment here and make it as dry or as liquid as you like. :)
  • Layer meat mixture on top of chips.
  • Crush some more chips and place on top of meat. Press down on chip layer to draw some moisture into the top layer of chips.
  • Top with cheese.
  • Bake at 350F for about 20 minutes or until cheese is thoroughly melted.
