1 cup butter, softened
3/4 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 large eggs, room temperature
2-1/4 cups all-purpose flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
FROSTING:
1/4 cup butter, softened
3 cups confectioners' sugar
1 teaspoon almond extract
2 to 4 tablespoons hot water
Food coloring, optional

Steps:

  • Preheat oven to 350°. Cream butter and sugar until light and fluffy; beat in extracts and eggs, one at a time. In another bowl, whisk together flour, cream of tartar, baking soda, salt and nutmeg; gradually beat into creamed mixture. , Drop dough by rounded tablespoonfuls 3 in. apart onto parchment-lined baking sheets; flatten slightly with bottom of a glass dipped in sugar. Bake until edges begin to brown, 8-10 minutes. Remove from pan to wire racks; cool completely., For frosting, beat butter, confectioners' sugar, extract and enough water to reach desired consistency. If desired, tint with food coloring. Spread over cookies.

2 large eggs
2/3 cup vegetable oil
2 teaspoons vanilla
3/4 cup white sugar
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Beat together eggs, oil, vanilla and sugar; add flour, baking powder and salt and mix well.
  • Drop by heaping teaspoon approx 3" apart on an ungreased cookie sheet.
  • Flatten with bottom of glass moistened with water and dipped in sugar.
  • Bake at 400°F for 6-10 minutes or just until lightly golden.

4 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¼ teaspoon ground nutmeg
1 cup butter, softened
1 ½ cups white sugar
1 egg
1 teaspoon vanilla extract
½ cup sour cream

Steps:

  • Sift together the flour, baking powder, baking soda, salt and nutmeg; set aside. In a large bowl, cream together the butter and sugar until smooth. Beat in the egg, vanilla and sour cream until well blended. Stir in the sifted ingredients. Wrap dough in plastic wrap and chill overnight.
  • Preheat the oven to 375 degrees F (190 degrees C). On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto ungreased cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

CHARMIE'S SOFT SUGAR COOKIES

I know there are a ton of sugar cookie recipes here, but I couldn't find this one, and it's my favorite! It makes a nice thick and soft sugar cookie, that's perfect for all the holidays. Frost these with your favorite vanilla frosting (I often just used the store-bought stuff...shhhhh!). Cooking time includes chilling time. I'm guessing on the amount, but I'll adjust when I make these soon!

3/4 cup margarine or 3/4 cup butter
1 cup sugar
2 eggs
1/4 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon salt

Steps:

  • Cream margarine or butter with sugar.
  • Add eggs and vanilla and blend well.
  • Sift together dry ingredients and add to butter/sugar mixture.
  • Chill at least 1-1/2 hours.
  • Roll on floured board to 1/2 inch think.
  • Cut with desired cookie cutters.
  • Bake at 400º 8-10 minutes on a greased cookie sheet.
  • Cool and frost with your favorite frosting!

⅔ cup shortening
⅔ cup butter
1 ½ cups white sugar
2 eggs
2 teaspoons vanilla extract
3 ½ cups all-purpose flour

⅓ cup granulated sugar for decoration

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together the butter, shortening and sugar. Stir in the eggs and vanilla. Combine the flour, baking powder and salt, stir into the creamed mixture until dough comes together. Roll dough into walnut sized balls and roll the balls in sugar. Place them on an unprepared cookie sheet about 2 inches apart.
  • Bake cookies 10 to 12 minutes in the preheated oven, until bottom is light brown. Remove from baking sheets to cool on wire racks.

A soft and tender version of traditional roll-out sugar cookies--thanks to an extra egg. For a sparkly option, roll the dough in colored sanding sugar.

2 1/2 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon fine salt
1 cup sugar, plus more (about 1/3 cup) for rolling
1 1/2 sticks (3/4 cup) unsalted butter, cut into small pieces, at room temperature
2 large eggs, beaten
1 teaspoon pure vanilla extract

Steps:

  • Whisk together the flour, baking powder and salt in a small bowl.
  • Beat the sugar and butter with an electric mixer on medium speed in a large bowl until light and fluffy, about 5 minutes. Beat in the eggs and then the vanilla. Add the flour mixture and beat on medium-low speed until completely incorporated. Scoop out heaping tablespoonfuls of the dough, roll with your hands into balls and refrigerate until firm, about 30 minutes.
  • Position oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Put some sugar in a small bowl. Roll the chilled dough balls in the sugar and arrange on the prepared baking sheets about 2 inches apart.
  • Bake until the bottoms and edges are just barely golden and the tops are no longer glossy, 14 to 16 minutes, rotating the baking sheets about halfway through. Let the cookies cool on the sheets for a few minutes, then transfer them to a wire rack to cool completely. The cookies can be stored in an airtight container at room temperature for up to 3 days.

2 cups unbleached all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup unsalted butter, softened but still firm
1 cup granulated sugar
1 tablespoon light brown sugar
1 large egg
1 1/2 teaspoons vanilla extract
1/2 cup granulated sugar

Steps:

  • Heat oven to 375°F.
  • Line two large baking sheets with parchment paper.
  • Whisk together flour, baking powder and salt; set aside.
  • With mixer, beat butter, 1 cup granulated sugar and brown sugar at medium speed until light and fluffy, about 3 minutes.
  • Add egg and vanilla; beat at medium speed until combined, about 30 seconds.
  • Add dry ingredients and beat at low speed until just combined, about 30 seconds.
  • Place 1/2 cup sugar in shallow bowl.

1 cup (8 ounces) unsalted butter, at room temperature
3/4 cup granulated sugar
1/2 cup light brown sugar
2 large eggs
1 tablespoon vanilla extract
2 1/3 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
Sprinkles, for finishing (See Cook's Note)

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat the oven to 350 degrees F. Line two rimmed baking sheets with parchment paper.
  • Cream the butter, sugar and brown sugar in the bowl of a stand mixer fitted with the paddle attachment (or with an electric hand mixer), until light and fluffy, 3 to 4 minutes.
  • Add the eggs and mix on medium speed to combine, then scrape the bowl well. Beat in the vanilla on medium speed.
  • Whisk together the flour, baking powder and salt in a medium bowl. Add about half of the flour mixture to the bowl of the stand mixer and mix on low speed to combine. Scrape the bowl well, then add the remaining flour mixture and mix on low speed to combine.
  • Scoop the dough into 1/4-cup mounds. Place the sprinkles in a shallow bowl. Roll the balls of dough fully in the sprinkles and transfer to the prepared baking sheets, staggering the rows of cookies to allow them room to spread during baking. Gently press each cookie with your fingers to flatten.
  • Bake, switching the baking sheets halfway through and rotating them from front to back, until the cookies spread and are lightly golden around the edges, 10 to 12 minutes.
  • Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.
