3/4 cup shortening
1-1/4 cups sugar, divided
1 egg
1/4 cup molasses
2 tablespoons milk
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
1-1/2 teaspoons baking soda
1 teaspoon ground cinnamon
3/4 teaspoon salt
3/4 teaspoon ground nutmeg

Steps:

  • In a large bowl, cream shortening and 1 cup sugar until light and fluffy. Beat in the egg, molasses, milk and vanilla. Combine the flour, baking soda, cinnamon, salt and nutmeg; gradually add to creamed mixture and mix well. Cover and refrigerate for 1 hour., Roll into 1-1/4-in. balls; roll in remaining sugar. Place 2 in. apart on greased baking sheets. , Bake at 350° for 10-14 minutes or until tops crack and edges are slightly firm. Remove to wire racks to cool.

FLOUR MIXTURE:
3/4 cups cooking oil
3/4 cups applesauce
2 cups brown sugar
2 eggs
1/2 cups molasses
4 cups flour
4 teaspoons baking soda
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon ginger

Steps:

  • Combine wet ingredients, then flour mixture separately. Gradually mix in flour mixture. Chill for 1 hour. Roll in granulated sugar. Cross hatch with fork. Bake at 350°F for 12 to 14 min.

1 cup applesauce
½ teaspoon salt

½ teaspoon nutmeg
2 cups flour
1 cup raisins
2 cups oatmeal
1 cup chocolate chips
1 cup chopped pecans

Steps:

  • Mix butter and sugar together until well blended.
  • Stir in egg, vanilla, and applesauce.
  • Add in salt, baking soda, baking powder, cinnamon, cloves, nutmeg, and flour.
  • Fold in raisins, oatmeal, chocolate chips, and pecans until combined together.
  • Roll dough into 1 1/4 inch balls and place on ungreased baking sheet.
  • Bake at 375 degrees for about 11 minutes until golden.

1-1/2 tsp. apple pie spice
1 tsp. baking powder
1/2 tsp. salt
1 egg
1 cup packed brown sugar
3/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
3/4 cup unsweetened applesauce
3/4 cup chopped walnuts
1/3 cup powdered sugar
2 tsp. water

Steps:

  • Heat oven to 325°F.
  • Combine first 4 ingredients. Beat egg, brown sugar, sour cream and applesauce in large bowl with mixer until blended. Gradually add flour mixture, mixing well after each addition.
  • Drop dough into 24 mounds, 2 inches apart, onto 2 parchment-covered baking sheets, using about 2 Tbsp. dough for each mound. Top with nuts; press gently into dough to secure.
  • Bake 16 to 18 min. or until tops of cookies are firm to the touch. Cool 3 min. Remove to wire racks; cool completely.
  • Mix powdered sugar and water until blended; drizzle over cookies. Let stand until glaze is firm.

My Mom has been making this for 20 years. This is a very dense, moist cake, maybe closer to a pound cake, but that's what I like about it. We added the raisins to the recipe, so you could omit them. I also like to add Walnuts, some day I may also add some coconut. This is great warm or cold.

1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 cup butter, softened
1 cup molasses
1 egg
1 cup applesauce
3/4 cup raisins, soaked in hot water to plump (drain)
1 1/2 teaspoons lemon juice
3/4 powdered sugar

Steps:

  • Sift dry ingredients, cut in butter. Stir in molasses, egg, applesauce, raisins.
  • Pour into greased and floured 8" square pan. Bake 350 for 40-45 minute.
  • Drizzle with glaze when cool.

3/4 cup butter flavor shortening
1 cup sugar
1/4 cup light molasses
1 large egg
2 cups flour
2 teaspoons baking soda
1/2 teaspoon clove
1/2 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon salt
1/3 cup sugar

Steps:

  • Melt shortening and let cool. Add 1 c sugar, molasses and egg. Beat well.
  • Sift dry ingredients, except the remaining sugar. Add to first mixture. Mix well.
  • Chill at least 1 hour. (Don't skip this step!).
  • Form in 1 inch balls and roll in remaining sugar. Bake at 375 degrees for 8-10 minutes on greased cookie sheets. (As low as 7 minutes in a convection oven).
  • NOTE: To get the texture just right, follow the directions closely. Specifically three things: don't substitute butter or margarine for the shortening, melt the shortening, and hand form the cookies.

Steps:

  • Combine applesauce, 1 cup sugar, and butter; beat at medium speed for 3 minutes.
  • Add molasses and egg; beat well.
  • Combine flours and next 5 ingredients (flours through cloves), stirring well with a whisk.
  • Gradually add flour mixture to sugar mixture, beating until blended.
