1 Tbsp extra-virgin olive oil
1/2 medium onion, peeled and diced
3 cloves garlic, peeled and minced
1/2 sweet red bell pepper, diced
1 lb ground beef
2 tsp chili powder
1 1/2 tsp cumin
1/8 tsp crushed chili pepper flakes or cayenne
1/2 tsp Mexican or regular oregano
1 tsp kosher salt or seasoning salt
3-4 corn or flour tortillas
Diced fresh tomatoes
Shredded lettuce
Grated cheddar or Monterey Jack cheese
Diced sweet onions
Diced fresh avocado
Salsa
Sour cream

Steps:

  • Heat a large-sized cast-iron skillet on the stovetop over medium heat. Once preheated, add 1 Tbsp of olive oil.
  • Once your olive oil is hot, toss in your diced onion, fresh garlic, and bell pepper. Cook, occasionally stirring until your onion is translucent and the veggies are soft.
  • Remove the ground beef from its package and add it into the skillet. Use a large spoon to break down the meat into smaller pieces and cook until the beef browns.
  • Carefully drain the excess grease from your pan before you add your seasonings. Pour the oil into a container for easy disposal - do not pour it down your drain!
  • Add in your beef seasonings - chili powder, cumin, red pepper flakes, Mexican oregano, and salt.
  • Cook for 2-3 mins, then taste and adjust seasonings as needed.
  • Scoop out some ground beef and place it on your taco shell, then top with all your favorites - tomatoes, grated cheese, and sour cream.
  • Serve and enjoy this easy soft taco recipe!

2 tablespoons flour
3/4 teaspoon salt
1/4 teaspoon dried onion flakes
1/4 teaspoon paprika
1 1/2 teaspoons chili powder
1 dash garlic powder
1 dash onion powder
1/4 cup water
5 small tortillas
lettuce
shredded cheese
sour cream
tomatoes, diced

Steps:

  • In a medium bowl combine the beef with the flour, salt, minced onion, paprika, chili powder, garlic powder and onion powder Use your hands to mix evenly.
  • Heat skillet to med/low heat.
  • Add beef mixture and water to the pan.
  • Brown the beef, breaking it up as it cooks.
  • Heat the tortillas in the microwave, wrapped in damp paper towels.
  • Spread meat into tortillas, top with cheese, tomatoes, lettuce and sour cream.

I use the Top Secret Recipe cookbooks and have found the Taco Bell Beef Soft Tacos taste pretty close, enough that we don't go there anymore! I use this meat for crunchy homemade tacos as well. This recipe calls for fat-free flour tortillas, and cheese. I have made them both ways-fat full and fat free.

1/2 lb lean ground beef (preferably 7% fat)
2 tablespoons all-purpose flour
3/4 teaspoon salt
1/4 teaspoon dried onion flakes
1/4 teaspoon paprika
1 1/2 teaspoons chili powder
1 dash garlic powder
1 dash onion powder
1/4 cup water
5 (6 inch) flour tortillas
1/2 cup shredded iceberg lettuce, plus
2 tablespoons shredded iceberg lettuce
5 tablespoons shredded cheddar cheese

Steps:

  • In a medium bowl combine the uncooked ground beef with flour and all the spices. Use your hands to throroughly incorporate everything into the ground beef.
  • Preheat skillet over medium heat and add the beef mixture to the pan along with the water. Brown the beef for about 5-6 minutes. Use a wooden spoon to break up the meat as it cooks.
  • You could heat up the tortillas a bit in the microwave by wrapping them in a moist cloth or paper towels. Heat for about 25 seconds.
  • Spoon 3 tablespoons of meat into center of tortilla. Place about 2 tablespoons of the shredded lettuce ontop.
  • Sprinkle about 1 tablespoon cheese over lettuce.

2 medium tomatoes, finely diced (seeds and juice squeezed before dicing)

I found this recipe on Y! Answers last week and finally tried it tonight. It did not disappoint. I used burrito size tortillas. I thought maybe that Taco Time's mixture is a little wetter, but the taste is spot-on! I used about 1/4 of a large onion and used a chopper. *Update - added some water as it was warming and it definitely helped. I didn't measure, but it was at least 4 T. Just add a little at a time.

100 g cheddar cheese
1 onion
4 garlic cloves
750 g ground top quality beef
1 tablespoon plain flour
1 teaspoon ground cumin
1 teaspoon chili powder
1 (400 g) can tomatoes, chopped
150 ml beef stock
salt, to taste
fresh ground black pepper, to taste
lettuce leaf, to serve
50 g stuffed green olives
8 ready-made taco shells
150 ml sour cream
paprika, to dust

Steps:

  • Grate the cheese coarsely, peel and finely chop the onion and garlic; gently heat the ground beef in a non-stick pan or wok, stirring until the juices start to run.
  • Add the onion, garlic, flour, cumin and chili powder, mix well and cook, stirring, for 3-4 minutes, or until the meat is brown; stir in the tomatoes and stock; bring to the boil; simmer for 25 minutes or until the sauce is thickened and season to taste.
  • Meanwhile, shred the lettuce and slice the olives; cover and chill until required; and gently warm the taco shells according to the packet instructions.
  • Press a little lettuce into each taco, top with mince then sprinkle over with olives and cheese; serve the tacos with spoonfuls of sour cream dusted with paprika.

Steps:

  • Add in the chili powder, garlic,, cumin, coriander, oregano, cayenne, and 1/2 teaspoon salt; cook, stirring constantly, until fragrant, about 1 minute.
  • Add in the ground beef and cook, breaking the meat up with a wooden spoon, until the beef is no longer pink, about 5 minutes.
  • Add the tomato sauce, chicken broth, vinegar, and brown sugar and bring to a simmer.
  • Decrease heat to medium-low and simmer, uncovered, stirring frequently and breaking the meat up so no chunks remain, until the liquid has reduced and thickened (mixture should not be completely dry), about 10 minutes.
  • Season with salt and pepper to taste.

1 -2 cup cooked rice (more or less, to taste, ie more rice makes it less spicy)
1 1/4 ounces taco seasoning
10 1/2 ounces cheddar cheese soup
14 ounces diced tomatoes
8 3/4 ounces kernel corn
8 -10 ounces tortilla chips
1 -2 cup taco-seasoned cheddar cheese (to taste)

Steps:

  • Brown ground beef, adding Taco seasoning when nearly browned with juice from tomato can, I leave in the fat from the burger, drain of you like before adding the seasoning.
  • Add tomatoes, cheese soup, and corn.
  • Meanwhile, crush the bag of tortilla chips, using more or less of the bag to line the bottom of your casserole dish.
