A hint of maple makes these soft and chewy peanut butter cookies simply perfect.

1 cup butter (softened)
1/2 cup smooth peanut butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 tbsp maple syrup
2 tsp vanilla
2 cups flour
3/4 cups quick oats
1½ tsp baking powder
1 tsp baking soda
1 tsp salt
225 g peanut butter chips ((1 pkg))

Steps:

  • Preheat oven to 325º F.
  • Cream together butter, peanut butter and sugars (I use my electric beaters) until they are well-mixed.
  • Add eggs one at a time, beating well after each addition.
  • Beat in syrup and vanilla. Set aside.
  • In a separate bowl, combine flour and rest of dry ingredients. Stir well.
  • Add dry ingredients to peanut butter mixture, and stir in peanut butter chips.
  • Drop by heaping tablespoon onto cookie sheet or baking stone, leaving a couple of inches between between cookies.
  • Bake in 325º oven for 15 to 18 minutes until light-golden-brown.

1 ½ cups flour
1 teaspoon baking soda
¼ teaspoon salt
¾ cup creamy peanut butter
½ cup butter (room temperature)
¾ cup brown sugar
¼ cup granulated sugar ((plus 2 tablespoons for rolling))
1 large egg
1 ½ teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees and very lightly grease a baking sheet or line with a baking mat.
  • In a medium bowl whisk together flour, baking soda, and salt. Set aside.
  • In a large bowl cream together butter, peanut butter, brown sugar, and 1/4 cup granulated sugar for 2-3 minutes until light and fluffy. Mix in egg and vanilla until blended.
  • Add dry ingredients to wet ingredients and mix until combined (do not over mix). Roll dough into balls (two regular size cookie scoops or about 3 tablespoons, the balls should be fairly big - this is the key to a super soft texture!)
  • Roll cookie dough balls in remaining 2 tablespoons sugar, then place on baking sheet 2-3 inches apart. Use a fork to gently press a criss-cross pattern into each cookie dough ball, only pressing ball down about half way.
  • Bake for 8-9 minutes - DO NOT OVER BAKE. The cookies should just begin to crack on top. Allow to cool 1-2 minutes on baking sheet, then transfer to a cooling rack. Store in an airtight container at room temperature up to 5 days (they are softest on day 1 and 2!).

1 cup creamy peanut butter (I used Skippy Naturals)
1/2 cup unsalted butter (softened)
1/3 cup granulated sugar
3/4 cup brown sugar
1 egg (room temperature)
1 tbsp milk
2 tsp vanilla extract
1 1/3 cups flour
1 tsp corn starch
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/4 cup granulated sugar
1/4 cup butter
1/4 cup maple syrup
1 tsp maple extract
1 1/4 cups powdered sugar
2 tbsp milk
1/2 tsp ground cinnamon

Steps:

  • Cream peanut butter, butter, and sugars together in a mixing bowl.
  • Beat in egg, vanilla, and milk and continue mixing until well combined.
  • In a separate bowl, whisk together flour, corn starch, baking soda, baking powder, and salt.
  • Gradually add flour mixture to peanut butter mixture, mixing until dough comes together.
  • Refrigerate for at least 2 hours.
  • Preheat oven to 350F.
  • Scoop out dough using a cookie scoop. (You want about two tablespoons of dough.) Use your hands to form into a ball.
  • Roll balls in remaining 1/4 cup of sugar and place on parchment line cookie sheet. Use a fork to press down on the cookie, flattening it slightly.
  • Bake for 9-12 minutes, just until cookie is set. I like mine slightly underdone but you can go the fulll 12 minutes if you like.
  • Remove cookies and cool for 5 minutes on cookie sheet before moving to a cooling rack. Let cookies cool completely.

Steps:

1 cup packed brown sugar
1 cup white sugar
1 cup butter or 1 cup margarine, softened
2 eggs
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla extract
2 1/2 cups flour

Steps:

  • Cream butter, peanut butter and both sugars together.
  • Add eggs, one at a time, beating well.
  • Add baking soda, powder and vanilla.
  • Stir in flour.
  • Roll into balls, roll in sugar. Flatten cookies, using a fork, in a criss-cross pattern.
  • Bake on ungreased cookie sheet at 350 degrees for 6-7 minutes or adjust to suit your oven and size of cookies!

½ cup peanut butter
½ cup white sugar
½ cup packed brown sugar
1 egg
½ teaspoon vanilla extract

Steps:

  • Combine margarine, peanut butter, sugars, egg, and vanilla. Blend together very well.
  • Add flour, baking soda and salt with mixer. Chill dough 15 minutes in the refrigerator. Roll into balls by hand.
  • Place on sprayed cookie sheet and bake in a preheated 350 degrees F (175 degrees C) oven until edges very lightly browning (about 7 to 10 minutes). Don't overcook. We store them in a plastic storage containers, and they stay soft!

3/4 cup packed brown sugar

1 teaspoon maple flavoring

1 cup chopped pecans
MAPLE GLAZE:
1/3 cup butter, cubed
1-3/4 cups confectioners' sugar
1/3 cup maple syrup
1/4 teaspoon maple flavoring

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs and maple flavoring. In another bowl, whisk flour, baking soda and salt; gradually beat into creamed mixture. Stir in baking chips and pecans., Drop dough by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake 10-12 minutes or until golden brown. Cool on pans 2 minutes. Remove to wire racks to cool completely. , For glaze, in a saucepan, melt butter over medium heat. Remove from heat. 1 ¼ cups packed brown sugar

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • In a medium bowl, combine flour, soda, and salt. Mix well with a wire whisk set aside.
  • In a large bowl, blend sugars, using an electric mixer set at medium speed. Add butter, and mix to form a grainy paste, scraping the sides of the bowl. Add eggs, peanut butter and vanilla and mix at medium speed until light and fluffy.

1 tablespoon water

1/3 cup coarsely chopped peanuts

Steps:

  • Heat oven to 375°F (or 350°F for dark or nonstick cookie sheet).
  • In medium bowl, stir together cookie mix, oil, water, egg and peanuts until dough forms.
  • Shape dough into 24 (1 1/2-inch) balls (or drop by level tablespoonfuls). Place on ungreased cookie sheets.
