QUICK SOFT BREADSTICKS
Our family likes these breadsticks because they are soft and chewy. I like to make them when I am in a hurry because they rise quickly.

Steps:
- Make dough using your favorite method- bread machine, mixer or by hand.
- Roll out into a 10x12 inch rectangle.
- Cut into strips about 3/4 inch wide.
- Give each strip a twist and place on a greased cookie sheet.
- Let rise for at least 20 minutes or more if you have time.
- Bake at 375 for 10-15 minutes.
- Brush with butter and sprinkle with garlic salt and parmesan cheese.
ALMOST-FAMOUS BREADSTICKS

- Make the dough: Place 1/4 cup warm water in the bowl of a mixer; sprinkle in the yeast and set aside until foamy, about 5 minutes. Add the flour, butter, sugar, fine salt and 1 1/4 cups plus 2 tablespoons warm water; mix with the paddle attachment until a slightly sticky dough forms, 5 minutes.
- Knead the dough by hand on a floured surface until very smooth and soft, 3 minutes. Roll into a 2-foot-long log; cut into 16 1 1/2-inch-long pieces. Knead each piece slightly and shape into a 7-inch-long breadstick; arrange 2 inches apart on a parchment-lined baking sheet. Cover with a cloth; let rise in a warm spot until almost doubled, about 45 minutes.
- Preheat the oven to 400 degrees. Make the topping: Brush the breadsticks with 1 1/2 tablespoons of the butter and sprinkle with 1/4 teaspoon kosher salt. Bake until lightly golden, about 15 minutes. Meanwhile, combine the remaining 1/4 teaspoon salt with the garlic powder and oregano. Brush the warm breadsticks with the remaining 1 1/2 tablespoons melted butter and sprinkle with the flavored salt.

- Measure your flour, salt, garlic powder, parsley, and baking powder into a big bowl. Stir the dry ingredients together so that they are evenly distributed throughout the flour. Now, pour in the milk. Stir with a big spoon until you have a ball of dough that leaves the sides of the bowl. You may have to dust the ball of dough with a little flour if it seems sticky to you. Gently knead the ball of dough right there in the bowl 5 or 6 times. Now place your dough on the counter. You may use a piece of waxed paper under the dough if you like. Using a rolling pin roll out the dough to a rectangular shape. If the edges become uneven, use your hands to reshape into a rectangle. It doesn't have to be perfect. You are aiming for a rectangle that will fi into a 9- by 13-inch pan. When you get the dough the right size, set it aside.
- Meanwhile, place the margarine in the 9- by 13-inch pan and place the pan in a 425F oven to melt the margarine. When the margarine is melted, carefully remove the pan from the oven, so as not to burn yourself. Sprinkle the second teaspoon of garlic powder and the 1/2 teaspoon of salt into the pan. You do not have to use the extra salt. Now, very carefully, lay your rectangle of dough into the pan, over top of the margarine. Next cut the rectangle into narrow strips. One method of doing this is to cut the dough in half, then cut each half again, quartering the dough, and then cut each quarter into narrow strips. The margarine will creep up between the strips. This is normal. It is what gives these bread sticks their texture. After cutting your strips, place the pan in the oven, still at 425F, and bake them for 20 minutes. They will be browned and crispy when they are done.
- The parsley is simply for decoration. It makes the bread sticks look more gourmet, but it adds little to the flavor or the texture. Leave it out if you don't have any, or are running low. If desired, you may sprinkle the bread sticks with a little bit of parmesan cheese before or after baking. This tastes good, but once again, is optional.

- In bread machine pan, place the first nine ingredients in order suggested by manufacturer. ONION-FENNEL BREADSTICKS
Steps:
- Heat heavy medium skillet over high heat. Add fennel seeds and stir until just golden brown and aromatic, about 1 minute. Transfer fennel seeds to large bowl. Reduce heat to medium. Add butter and minced onion to same skillet. Sauté until onion is golden brown, about 20 minutes. Cool slightly.
- Preheat oven to 400°F. Add 2 cups flour, yeast, sugar and salt to fennel seeds in large bowl. Stir in hot water and onion mixture. Mix in enough of remaining flour, 1/4 cup at a time, to form soft dough. Knead dough on lightly floured surface until smooth and elastic, adding more flour if dough is sticky, about 8 minutes.
- Form dough into ball. Place on lightly floured surface. Cover with towel. Let dough stand 10 minutes.
- Dust 4 cookie sheets with flour. Divide dough in half. Roll each half out on floured surface to 12-inch square. Dust well with flour. Fold each square in thirds and cut crosswise into 1/2-inch-wide strips. Unfold strips. Let dough rest 5 minutes. Stretch each strip to 14 inches. Place strips 1/2 inch apart on prepared cookie sheets. Let breadsticks rest 10 minutes.
- Brush breadsticks lightly with water. Sprinkle lightly with coarse salt. Bake breadsticks until golden brown, about 20 minutes. Cool 15 minutes.
- Reduce oven temperature to 300°F. Return breadsticks to oven and bake until crisp, about 12 minutes. Cool completely. (Can be prepared 2 days ahead. Store in airtight container.)
CHEESY ONION BREADSTICKS
Basic biscuit mix gets a makeover with cheese, green onions and garlic powder. Brushing the breadsticks with melted butter when they come out of the oven adds to the eye appeal.

- Place all dough ingredients in your bread machine pan according to manufacturers direction.
- Select dough setting.
- When dough cycle is complete, turn out onto floured board and divide dough in half.
- Cut each portion into 12 pieces and roll each piece into a 4 to 6" rope.
- Place 2" apart onto greased baking sheets.
- Cover and let rise in a warm place for about 20 minutes or until doubled.
- Bake at 350° for 15 minutes or until golden brown.
