CRACKER BARREL FRIED APPLES

I grew up eating fried apples and then as an adult I discovered Cracker Barrel and their fried apples. This recipe is from another site and is as close as I have seen to Cracker Barrel. The recipe says you can freeze the cooked apples. I have never done this as there is never any left.

2 cups apple juice, plus
1/2 cup apple juice
4 large golden delicious apples, with peel,cut 1/2 inch wedges
3 tablespoons cornstarch
1 teaspoon apple pie spice
4 tablespoons sugar

Steps:

  • In a medium skillet, combine the 2 cups apple juice and sliced apples.
  • Simmer gently until apples are fork tender but not mushy, turning apples frequently.
  • Remove apples from juice using a slotted spoon and place in an oven safe dish.
  • In a blender, combine the remaining 1/2 cup apple juice, cornstarch, apple pie spice and sugar.
  • Blend a few seconds until smooth.
  • Whisk mixture into hot apple juice in skillet and cook, stirring constantly on medium high heat until it bubbles and becomes thickened and smooth.
  • Pour thickened mixture over apples and serve.
  • Please note the cooking time is an approximate.

4 cups washed cored and sliced apples (I'm not sure of the variety, but I use a fairly tart apple.)
1/4 cup apple juice
1/2 cup brown sugar, to taste
1 teaspoon cinnamon, to taste
1/4 teaspoon nutmeg, to taste

Steps:

  • Place all ingredients in covered pan and cook on medium-high heat for about 10 minutes, or until tender and juices are gone.
  • Enjoy!

1/4 cup butter
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon cardamom
1/4 cup raisins (optional)

Steps:

  • Melt butter in skillet.
  • Add apples that have been sliced or chopped. Peel if desired but prettier with the skin.
  • Add remaining ingredients and cook on medium until apples are as soft as you would like them.
  • Really pretty when you use a mixture of red and green apples. Looks great at Christmas too.

each fall, I use these with pork chops, pork roast - whatever. They are wonderful, and so easy to make, from my Grandma Daisy's kitchen.

6 medium apples, peeled and sliced thinly, as for a pie
2 tablespoons lemon juice
1/4 cup sugar
2 teaspoons cinnamon
1/4 cup butter

Steps:

  • Melt butter in large skillet over medium heat. Add apples.
  • Sprinkle with sugar and cinnamon.
  • (If you're using sweet apples, like Delicious, Fuji or Gala, add the lemon juice. For tart apples, like Jonathans, omit it.) Stir until apples are blended with sugar/cinnamon.
  • Cover and cook for approx 15-20 minutes, frequently stirring gently.
  • Serve them warm, right on the pork chop or pork roast. They also double for a dessert dish served over vanilla ice cream.

In my growing up years, serving this dish meant that autumn had certainly arrived! Mom served these "fried apples", with their delicious cinnamon flavor, alongside hot buttered biscuits, and freshly ground homemade sausage. Yumm!! It also is a delicious accompaniment with meats at other meals, particularly ham or pork.

4 granny smith apples, sliced
1 cup brown sugar, packed
1 teaspoon cinnamon
4 tablespoons butter

Steps:

  • In a large skillet on medium-high heat, melt butter (If your butter browns a bit, don't get excited! This gives an even better flavor.
  • Add sliced, unpeeled apples, cover, and saute, stirring frequently.
  • In a bowl, mix brown sugar and cinnamon. (Sometimes, for a taste difference, I also throw in 1/2 cup chopped pecans, at this point).
  • When apples are just barely starting to get tender, stir in sugar-cinnamon mixture.
  • Continue cooking until sugar has dissolved into syrup.
  • Serve with hot buttered biscuits and sausage on the side; or alongside ham or pork.
