A Jolinda Hackett recipe.his recipe uses store-bought salsa and taco seasoning to make a super-quick vegetarian taco filling from TVP. The TVP has a texture similar to shredded chicken when cooked. Wrap in a flour tortilla or stuff in a hard shell with lettuce, tomatoes, avocado, and green onions.

2 cups textured vegetable protein
2 cups water
2 tablespoons soy sauce
2 tablespoons olive oil
1 (1 1/4 ounce) package taco seasoning (one pack)
1 red pepper, cut into strips
1/4 cup salsa
flour tortillas or taco shell

Steps:

  • In a large skillet, heat the water over medium heat, and add the TVP, stirring well. Allow the TVP to reconstitute for 2-3 minutes.
  • Add oil and soy sauce, then peppers and taco seasoning, stirring well.
  • Allow to cook for another 3-5 minutes, stirring frequently. Mix in salsa and remove from heat.
  • Serve wrapped in a flour tortilla or hard taco shells with your choice of toppings.

1 cup textured vegetable protein, granules
1 cup boiling water
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon garlic powder
3 tablespoons tamari soy sauce
2 tablespoons olive oil
1/2 onion, chopped
1/2 bell pepper, chopped
1 garlic clove, chopped
salt and pepper

Steps:

  • Pour boiling water into dry TVP granules and stir. Let sit until water is absorbed, about ten minutes.
  • Saute onion and garlic in olive oil until onions turn soft, about 6-8 minutes.
  • Add bell pepper and sauté 2 more minute.
  • Add TVP, and stir.
  • Add tamari and spices, and continue simmering until all ingredients are well-blended.
  • Some people like extra tamari or extra spices...adjust according to your taste. Serve in hard taco shells or soft tortillas, with shredded lettuce, chopped tomatoes, salsa, refried beans, etc.

1 1/2 cups whole wheat macaroni
1 cup textured vegetable protein (TVP)
3 tablespoons dried onion flakes
2 tablespoons dried parsley flakes
1 tablespoon chili powder
1/2-1 teaspoon cumin
1 teaspoon dried oregano
1 teaspoon dried basil
1 pinch dried chili pepper flakes
1/2 teaspoon salt (optional, I don't usually add this)
1 tablespoon olive oil
1 cup onion, Chopped
1 cup red pepper, Chopped
1 cup green pepper, Chopped
1 cup mushroom, Chopped
1 -3 garlic clove, minced (l like loads of garlic)
1 (28 ounce) can tomatoes (I prefer stewed)
2 cups water (beef or chicken or vegetable) or 2 cups broth (beef or chicken or vegetable)
1 cup frozen peas or 1 cup frozen corn
2 -5 dashes hot sauce (optional) or 1 tablespoon jalapeno, chopped (optional)
2 cups Baby Spinach
1/2 cup fresh cilantro, chopped (corriander)
1 cup salsa
1 cup cheese, Grated (optional)

Steps:

  • Combine the first 10 ingredients (dry ingredients), (This can be done ahead of time for use at a later date and store in an air-tight jar or plastic bag.).
  • To prepare, sauté onion, mushrooms, garlic, and red and green peppers in olive oil for 5 minutes in a large skillet or saucepan. Add tomatoes with juice and broth or water, crushing the tomatoes, and bring to a boil.
  • Stir in Macaroni and TVP dry mix to skillet.
  • Simmer, covered, for 10 minutes, stirring occasionally to prevent sticking.
  • Mix in frozen peas or corn, hot sauce, spinach and cilantro and cook for another 5 minutes, or until macaroni is tender.
  • Mix in the Salsa and sprinkle with Cheese.

6 large flour tortillas
1 cup textured vegetable protein, granules
1/2 cup onion, chopped
8 ounces tomato sauce
16 ounces canned vegetarian refried beans
2 tablespoons chili powder
1 tablespoon cumin
1/2 tablespoon oregano
1 cup lettuce, shredded
2 fresh tomatoes, chopped

Steps:

  • On large cookie sheet, place 6 oven-proof soup bowls or bowl-shaped aluminum foil.
  • Wrap tortillas in damp paper towels and microwave on high 1 minutes or set in warm oven 3-5 minutes.
  • Press center of tortillas into the bowls, crimping edges as needed to fit.
  • Brush edges with oil if desired.
  • Place tray in oven and bake until edges begin to brown lightly, 12-15 minutes.
  • Cool shells.
  • If not using them immediately, tightly wrap them in a plastic bag.
  • Mix together TVP and 7/8 Cups boiling water and let stand 5 minutes.
  • Saute onion in skillet.
  • Stir in tomato sauce, beans, chili powder, cumin, oregano, and TVP.
  • Mix well.
  • Cover tightly and microwave on high 5 minutes, stirring once (or simmer on top of stove 15-20 minutes).
  • Place a tortilla shell on each plate.
  • Place shredded lettuce in each shell and spoon TVP mixture over lettuce.
  • Top with tomato.

I use textured vegetable protien (TVP) a lot when money gets tight. It is a cheap way to get your protien and a lovely substitute for ground beef with out the expense. No, it isn't exactly the same but most people couldn't tell the difference when I didn't tell them it wasn't ground beef. This is a nice way to use tvp crumbles.

1 cup textured vegetable protein, crumbles
1/4 cup onion, diced
1/4 cup green pepper, diced
1 (4 ounce) package crescent rolls
1 (14 1/2 ounce) can pinto beans, use only half
1 evelope taco seasoning
8 ounces tomato sauce
1/2 cup cheddar cheese

Steps:

  • Preheat oven to 375.
  • Brown beef, onion, and green pepper; drain.
  • Spray and 8 x 8 inch pan with cooking spray. Unroll the cresent rolls (they will unroll right into the pan) and pinch together to form a crust.
  • Bake 6 minutes.
  • Add tomato sauce, beans and seasonings to the tvp crumbles, mix thoroughly.
  • Top crust with meat mixture and bake an additional 10 minutes.
  • Top with cheese and bake another 5 minutes.

I found this recipe in Woman's Day magazine. My future hubby and I really liked this dish. When I made this I used instant white rice. We decided to leave off the tomatoes and not serve this with the tortilla chips, but I think I'll use crushed tortilla chips next time. I did also add kidney beans to this before cooling. I did also find myself the water did not completely absorb but it really wasn't that big of a deal once mixed in.

1 1/4 ounces low salt taco seasoning mix
2 cups water
16 ounces thick & chunky salsa
11 ounces Mexican-style corn
2 cups instant brown rice
1 cup shredded mexican cheese or 1 cup taco blend cheese
2 cups shredded lettuce
1 large tomatoes, chopped
1/2 cup reduced-fat sour cream
baked corn tortilla chips

Steps:

  • Cook turkey in a large nonstick skillet over high heat, stirring to break up meat, 5 minutes or until browned. Stir in seasoning mix, water, salsa and corn; bring to a boil. Stir in rice. Cover and remove from heat; let stand 12-15 minutes, until liquid is aborbed. Sprinkle with cheese; cover and let stand 1-2 minutes to melt cheese.
  • On plates, top rice mixture with lettuce, tomato and sour cream. Serve with tortilla chips.

1 (1 1/2 ounce) package chili seasoning mix
1 (10 1/2 ounce) can tomato soup
1/2 cup water
1 (10 1/2 ounce) can diced tomatoes with green chilies
1 (15 ounce) can whole kernel corn
1 (15 ounce) can black beans, low sodium, rinsed and drained
1 cup shredded cheddar cheese, Divided
8 flour tortillas
8 ounces sour cream (optional)

Steps:

  • Brown beef in skillet, drain fat.
  • Add pkg of chili seasoning mix, Tomato Soup, then half cup (or half can of water).
  • While slowly bringing to a boil, cut flour tortilla shells in one inch squares. A pizza cutter comes in handy to cut 2 at a time!
  • Throw in shells. Add the can of tomatoes with green chilies, can of corn, beans (rinsed and drained) and 1/2 cup of cheese.
  • Cover, bring down to low simmer. Stirring until well blended and tortillas have softened. Add remaining 1/2 cup of shredded cheddar.
  • Serve hot with a heaping spoon of sour cream (if desired).
