SOFT ITALIAN BREAD TWISTS
Although my heritage is strictly Dutch, my family loves Italian food. These seasoned breadsticks are a great accompaniment to lasagna or pizza.

Steps:
- In a food processor, combine the sugar, 3/4 teaspoon salt, yeast and 2 cups flour. Cover and process for 5-10 seconds. While processing, gradually add warm water and oil in a steady stream. Process for 1 minute or until smooth and elastic. Add 1 to 2 tablespoons of water or flour if needed. , Turn onto a floured surface. Roll into a 15x12-in. rectangle. Cut into 12 strips. Fold each strip in half lengthwise; twist each strip several times. Pinch ends to seal. Place 2 in. apart on a greased baking sheet. , In a small bowl, combine the butter, garlic powder, paprika and remaining salt. Brush some over dough. Sprinkle with Italian seasoning or Parmesan cheese if desired. Cover and let rise in a warm place until doubled, about 25 minutes. , Bake at 425° for 6-8 minutes or until golden brown. Brush with remaining butter mixture.

SOFT ITALIAN BREADSTICKS
Steps:
- Place the sugar in a large mixing bowl, and add the warm water and yeast. Set aside for 5 minutes, or until the yeast has dissolved and looks foamy.
- Add 3 cups of bread flour, the olive oil, and the salt, and mix on low speed until a stiff dough forms. (If the dough seems sticky, add up to 3/4 cup additional flour (1/4 cup at a time), until it pulls cleanly away from the sides of the bowl.)
- Knead until dough is smooth and elastic, about 10 minutes.
- Mist the bowl with non-stick spray, place the dough inside, and cover with plastic wrap.
- Allow the dough to rise for 30 minutes.
- Divide the dough into 16 equal portions, and shape each one into a rope (about 6 inches long), placing them on a parchment-lined baking sheet.
- Mist a sheet of plastic wrap with non-stick spray, place it loosely over the unbaked breadsticks, and allow them to rise for 30 minutes.
- Preheat the oven to 350 degrees F, and lightly brush the breadsticks with egg wash.
- Bake the breadsticks for 12 to 14 minutes, or until just beginning to turn golden at the tips.
- Stir the melted butter, salt, garlic powder, and Italian seasoning together, and brush the mixture over the warm breadsticks.
SOFT GARLIC PARMESAN BREADSTICKS
These are better than the ones served at pizza parlors! I usually have to make two batches, because they go so fast! I use my food processor to do the mixing.

- Fit your food processor with a steel blade. Place the bread flour, yeast, sugar, salt, Italian seasoning, garlic, 1/4 cup grated Parmesan and softened butter in the processor; pulse to blend. Stir together hot water, milk and egg. Start the processor and slowly pour in the milk mixture into the feed tube until a ball forms around the blade. Run for 30 seconds to knead. Remove dough from processor and knead briefly by hand. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
- Deflate the dough, and turn it out onto a lightly floured surface. Roll the dough into a 10x12 inch rectangle. Use a knife or pizza cutter to slice the dough lengthwise into ten strips, and then cut these strips in half. Brush tops of strips with 2 tablespoons melted butter, and sprinkle with 1/4 cup Parmesan cheese. Cover, and let rise until nearly double, about 30 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
- Bake in preheated oven for 18 to 23 minutes, or until golden brown. Turn broiler on, and brush breadsticks with remaining melted butter and Parmesan cheese. Broil just until the cheese starts to turn light brown, about 2 to 3 minutes. Serve warm.

- Make dough using your favorite method- bread machine, mixer or by hand.
- Roll out into a 10x12 inch rectangle.

- Place all dough ingredients in your bread machine pan according to manufacturers direction.
- Select dough setting.
- When dough cycle is complete, turn out onto floured board and divide dough in half.

- Combine dry ingredients and gradually add milk to form a soft dough.
- Knead gently 3 or 4 times on a floured surface.
- Roll out into a rectangle about 10 x 5 inches and cut into 12 sticks or shape into bread sticks with your hands.
- Put the melted butter into a large baking dish (I use a 9 x 13 inch; rectangular glass dish) and turn the breadsticks to coat them with the butter or spray with butter flavored non-stick spray for a healthy alternative to butter. Sprinkle with sesame seeds, Italian seasoning and/or garlic salt, if you like.
- Bake at 450°F for 14 to 18 minutes.
- Serve warm.

ITALIAN BREADSTICKS

- Combine the flour, yeast, salt and sugar in the bowl of a food processor and pulse once or twice. Add 2 tablespoons oil and pulse a few more times. With the machine running, add 1 cup water through the feed tube. Continue to add water, a tablespoon at a time, until the mixture forms a ball. The dough should be a little rough and rather sticky.
- Put some olive oil in a bowl and transfer the dough ball to it, turning to coat well. Cover with plastic wrap and let it rise in a warm place until about double in size, about 1 hour. Knead lightly, forcing out the air, for about 3 minutes. Reshape the dough into a ball, return it to the bowl, cover and let rise in the refrigerator for several hours or up to overnight.
- Heat the oven to 400 degrees F. Lightly grease two baking sheets with olive oil and sprinkle lightly with semolina.
- Cut the dough into 3 pieces; keep the remaining 2 pieces covered while you work with the first. On a well-floured surface, roll a piece of dough out as thinly as possible into a large rectangle about 8 inches long. Use a sharp knife or pastry wheel to cut the dough into roughly 1/4-inch wide breadsticks (slightly smaller is better than slightly bigger).
- To roll thinly with a pasta machine, roll out the dough to a 1/4 inch thickness by hand. Put the dough through the machine with the rollers fixed on the largest setting, then cut the dough into breadsticks roughly 1/4 inch wide and 12 inches long. Repeat with the remaining dough.
- Once you've cut each strip, twist it, as though you were wringing out a washcloth, to create twisted rods. Transfer to the baking sheets, spaced apart, and brush with olive oil. Bake until crisp and golden, 10 to 20 minutes. Cool completely and serve. Breadsticks will keep in an airtight container for up to 1 week.

- Combine 1 cup flour, yeast, sugar and salt in large bowl. Stir in oil.
- Add water (1 1/4 cups) and combine well until well blended (2 minutes with an electric mixer or a bit longer by hand).
- Beat (or stir in) in enough of the remaining flour to make a soft dough.
- Turn dough out onto a floured board and knead for one minute or until smooth. Divide dough in half.
- Working with one half at a time, Roll one half into a 10-inch log.

- Add the wet and dry ingredients in the bread machine pan in the order recommended by your bread machine manufacturer.
- Close the lid and start the "Dough" cycle.
- Once "Dough" cycle completes, remove the dough on a lightly floured surface and knead for a few seconds.
- Roll the dough into about a 12 by 12 inch square.
- Cut it into 16 strips using a pizza cutter.
- Lift each strip and pinch it along the length from the bottom side and then roll with your palms into a smooth and even stick.
- Arrange all the rolled dough sticks in a baking tray about an inch apart.
- Cover the tray with another tray or plastic wrap and place in a warm place to rise.
- After about 60 minutes the dough sticks will be double in volume and done through their second rise.
