SWEET AND SALTINES

- Preheat the oven to 425 degrees F. Line 1 large or 2 small jelly-roll pans with aluminum foil, spray with nonstick spray and arrange the saltines salt-side down in a single layer. In a medium saucepan, melt the butter and brown sugar together and boil until it turns a caramel color, a few minutes. Remove from the heat and pour over the crackers, covering them evenly. Put the jelly-roll pan into the oven and bake for 3 to 5 minutes, or until just bubbly, watching carefully. Remove from the oven and pour the chocolate chips over the crackers. When the chips melt a bit, spread them over the crackers with a knife. Transfer the pan to the freezer for 15 to 20 minutes, or until completely cold. They will form one big sheet. Break up into pieces. Store in an airtight container.
OLD-FASHIONED SODA CRACKERS
When I was in Mexico, one of the silliest but best things I remember eating, were homemade soda crackers that were served with our meal. They were still warm right out of the oven, and heavenly. We had them in a quaint little restaurant in a village called Taxco. These are just like them! It makes a lot, but you won't believe how quickly you'll go through them!!

Steps:
- In large bowl, combine flour, baking soda and salt.
- Cut in butter til crumbly.
- Add water, stir just until mixed.
- Turn dough out onto lightly floured surface and knead til thoroughly mixed. About 3 minutes.
- Roll out dough, a fourth at a time, on well-floured surface to 1/8" thickness.
- Cut into 2" squares.
- Place 1" apart on ungreased cookie sheets.
- Prick 2 or 3 times with a fork, then sprinkle with salt.
- Bake in preheated 350º oven for 20-25 minutes or til lightly browned.

MICROWAVE CRACKER TOFFEE
Steps:
- Line a cookie sheet with parchment paper. Arrange the saltines in a square on the lined cookie sheet and set aside.
- Put the butter, sugar, salt and 1/4 cup water in a large microwave-safe bowl but do not stir.
- Microwave on high until the mixture just begins to turn lightly golden, about 8 minutes. Continue to microwave in additional 30-second or 1-minute increments if needed to achieve the golden color.
- Carefully pour the cooked candy over the saltines on the cookie sheet. Let stand 1 minute. Sprinkle the chocolate chips over the hot toffee and let stand until the chips are shiny, 1 to 2 minutes. Use an offset spatula to spread the melted chips over the toffee. Sprinkle with sea salt, if using. Chill in the fridge until the chocolate is firm, about 20 minutes. Break the candy into bite-sized pieces.
CHOCOLATE SALTED SODA CRACKERS
Steps:
- Preheat oven to 350 degrees F.
- Completely cover a baking sheet with salted soda crackers.
- In a saucepan, melt the butter and sugar. Pour melted mixture over the salted soda crackers, try to cover all of them. Bake crackers in 350 degree F. oven for exactly 10 minutes. Remove from oven after 10 minutes and pour chocolate chips over the crackers immediately. Let sit about 5 minutes, until chips have softened. Spread the softened chips completely over the crackers and sprinkle with whatever topping you like. Place in refrigerator until cool. Break into pieces and enjoy.
CHOCOLATE BRITTLE SURPRISE

- Preheat oven to 350 degrees F (180 degrees C). Cover cookie sheet with foil. Spray foil with cooking oil spray.
- Place crackers on foil in 5 x 7 inch rows.
- Microwave butter on high for 2 minutes. Add brown sugar and stir. Microwave on high for 2 more minutes, stirring every 30 seconds.
- Pour over crackers. Bake 17 - 20 minutes (should bubble but not burn).
- Sprinkle chocolate chips over hot crackers. Spread after 2 minutes (chips have softened). Sprinkle nuts on top.
- Refrigerate 1 hour. Break into pieces. Can be frozen.

HOMEMADE SODA CRACKERS

Steps:
- Try Chuck's homemade soda crackers and you'll never go back to the store-bought ones.
- In a small bowl, sprinkle the yeast over the warm water; stir to dissolve and let stand for 5 minutes.
- In a large bowl, mix the flour, salt and baking soda. Add the yeast mixture and stir vigorously with a wooden spoon to blend. If the dough is sticky, add sprinkles of flour until a soft dough forms.
- Knead the dough until it is soft and has an elastic consistency, about 5 minutes. Add sprinkles of flour to control the stickiness. If using a mixer or a food processor, the dough will form a soft ball around the revolving dough hook and clean the sides of the bowl. Add flour, if necessary, to firm up the dough.
- Drop the dough into a buttered bowl, cover with plastic wrap and place in the refrigerator to rest for at least 1 hour and up to 18 hours (the longer the better.)
- Arrange the rack in the middle of the oven and preheat to 425 degrees F. Line a baking sheet with parchment paper.
- With a heavy rolling pin, roll the dough into a rectangle about 18 by 6 inches and no thicker than 1/8-inch. Fold the dough from the short ends, brushing off the excess flour, to make 3 layers for extra flaky crackers. Roll again using the rolling pin.
- Prick the dough with the tines of a fork to help cook evenly. Evenly cut the dough along the edge of a ruler or yardstick with a pizza or cookie cutter into desired shapes.
- Place the crackers close together on the prepared baking sheet. Sprinkle lightly with salt from 12-inches above the crackers to distribute evenly.
- Bake until lightly browned and crisp, 15 to 20 minutes, depending on the thickness of the crackers. Check the crackers several times during the baking period to make certain those on the outer edge of the baking sheet are not getting too brown. If so, switch the ones on the outside with the ones in the middle.
- Remove from the oven and brush the crackers with melted butter. Let cool on a metal rack.
SODA CRACKER SURPRISE
My mom found this recipe in the Friend magazine about 10 years ago and we still make it all the time. It's always a huge hit, I usually have to make 3 or 4 batches!

- Preheat oven to 350 degrees.
- Line a cookie sheet with parchment paper.
- Cover entire cookie sheet with a layer of saltines (I usually use almost one sleeve of crackers).
- Bring brown sugar and butter to rolling boil and stir constantly for 2 minutes.
- Pour evenly over crackers.
- Put in oven for 5 minutes.
- Pour chocolate chips over top and spread evenly as they melt.
- Put in the freezer or fridge until it hardens.
- Then break apart and enjoy!

- Line a jelly roll pan with aluminum foil and spray with vegetable oil spray.
- Place crackers in a single layer, (4 wide x5 deep), close together.
- Put butter and brown sugar in sauce pan and bring to boil.
- Boil for 3 minutes.
- Pour sugar mixture over crackers and spread evenly.
- Place in 350 degree oven for 5 minutes.
- Scoop toffee that has boiled off crackers back on crackers so that crackers are completely covered.
- Remove from oven and sprinkle chocolate chips over mixture. Spread chocolate to cover toffee as it melts.
- Sprinkle with nuts.
- Cut into squares while still warm.
- Number of servings depending on cut size of candy.

these are easy and delicate. Uses one envelope of Jello or Sheriffs brand lemon pie filling, and soda crackers.The pie filling this recipe uses is the type thats made with water and egg if instructed on the package not cooked with milk or instant..You can also pie lemon pie filling in the cans by E.D. Smith already prepared. I cannot seem to fix that part of this recipe below please no milk, and only one of the envelopes in the package of pie filling mix.

- Prepare the lemon pie filling according to the package direction.
- Remove from heat and let cool.
- Preheat oven to 350 degrees F.
- Grease a 9 inch square pan or a 7 x 11 brownie pan.
- Sift the all purpose flour with the baking powder.
- Rub in the room temperature butter until crumbs are formed.
- Add the crushed soda cracker (I usually use salted as those are the ones I always have).
- Add the sugar and coconut.
- Spread half crumb mixture into pan.
- Press to form crust.
- Pour cooked cooled lemon pie filling over evenly.
- Sprinkle and pat down slightly the remainder of the crumbs.
