CRANBERRY SAUCE WITH ORANGES
Here is a gourmet way to make homemade Cranberry Sauce with Orange. Cook the whole fresh cranberries with apples, orange juice, allspice and less sugar than traditional sauces. Then add in fresh orange zest and orange segments at the end for a fresh and unique cranberry sauce to share on Thanksgiving.

- Stir together cranberries, apples, brown sugar, orange juice, allspice and salt in a large saucepan. Place over medium heat and bring to a simmer, stirring often. Continue cooking, stirring often until the cranberries have popped and the mixture thickens, about 5 minutes. Remove from heat.
- Meanwhile, zest orange. To supreme the orange: Cut skin and white pith off the orange. Cut between membranes to remove individual segments, working all the way around the orange. Gently stir the zest and orange segments into the compote. Discard orange membrane and peel. Cool compote completely, about 2 hours.

PEAR HONEY CRANBERRY SAUCE

- In a medium saucepan, stir together the water and sugar over medium-high heat. Bring to a boil. Stir in pears, and reduce heat to medium. Cook, stirring frequently for 3 minutes, then stir in cranberries and honey. Continue to cook until cranberries pop and the mixture thickens slightly, about 5 minutes.
- Remove from heat and stir in the lemon juice and lemon zest. Cool to room temperature, then store covered in the refrigerator for up to one week.

- Add all of the ingredients except the orange liquor, to a large pot. Bring to a boil and reduce to a simmer. Allow the mixture to simmer for 35 to 45 minutes, stirring occasionally. You will know the cranberry sauce is done when most of the cranberries have popped and the sauce has reduced and become thick (see photo in post above).
- With the heat off stir in the orange liquor. Taste and add more sugar if needed.
- allow the sauce to mostly cool before transferring to airtight containers and storing in the fridge. Allow it to chill in the fridge for at least 4 hours (or overnight). This recipe is best made up to 2 days in advance so the flavors can really develop. You can make it up to 1 or 2 weeks in advance as it keeps for a long time in the fridge. Serve cold.

- First, rinse the cranberries well and drain off excess water. Pick through the cranberries and discard any squishy ones.
- In a medium saucepan, combine the cranberries, honey and water. Bring the mixture to a boil over medium-high heat, then reduce heat to medium-low and cook, stirring occasionally, until the cranberries have popped and the mixture has thickened to your liking, about 5 to 10 minutes.
- Remove the pot from heat and stir in the orange zest. If you'd like to add cinnamon or orange juice, add it now. Taste and, if the mixture is too tart (keeping in mind that cranberry sauce is supposed to be a little tart!), add more orange juice, honey or maple syrup to taste.
- The sauce will continue to thicken as it cools. It will keep in the refrigerator, covered, for up to 2 weeks.

- Pick through cranberries and throw away any bad ones. In a medium saucepan set to medium-high heat, add cranberries, water, orange juice, and honey. Bring to a boil and reduce heat to low.

CRANBERRY APPLESAUCE WITH ORANGE AND PEARS
Slightly tart cranberry applesauce, a favorite of my step-daughter and my 16-month-old grandchild. I use orange juice and pears to sweeten the sauce in lieu of granulated sugar. I finish with a small amount of honey -- so small that the pediatrician cleared this for the grandchild at 6 months. I use a 6-1/2 quart Le Creuset pot, and puree to desired consistency in a Vitamix. For the 6-mo.-old, her mom froze this in ice cube trays; today her dad froze this in 1-quart heavy-duty resealable freezer bags. If you prefer a decidedly sweet sauce, add 1/2 cup brown sugar to the orange juice and heat until sugar has dissolved before adding apple slices, etc., or adjust at the end by adding simple syrup to desired sweetness. This mixture will keep in an airtight container in the refrigerator for 4 days.

- Peel, core and slice one apple at a time, adding slices to pot and tossing slices in the liquid (to prevent browning).
- Peel, core and slice one pear at a time, adding slices to pot and tossing slices in the liquid.
- Add cranberries and honey and mix well. Immerse the cinnamon stick in the middle.
- Bring to a boil, stirring occasionally. Reduce heat and simmer until apples are very soft, about 15-20 minutes. Remove the cinnamon stick and discard.
- If using a Vitamix, the mixture does not need to cool before pureeing; otherwise, let mixture cool 20 minutes before pureeing in batches to desired consistency.
