BROWNIE BASE:
200 g of dark chocolate (70% cocoa solids)
200 g of butter
160 g of caster sugar
3 eggs (beaten)
100 g of ground almonds
50 g of ground hazelnuts
10 snickers bars
CHEESECAKE TOPPING
400 g of cream cheese (at room temperature)
100 g of caster sugar
2 eggs
100 g of dark chocolate (melted)

Steps:

  • Preheat the oven to 170 degrees celsius (340 farenheit) and line a 20cm by 30cm baking tin with baking paper.
  • Melt the chocolate and butter gently over a low heat in a saucepan and set aside to cool a little. Add the beaten eggs to the melted chocolate mixture, along with the ground almonds, hazelnuts and sugar mix to combine.
  • Pour the mixture into the prepared baking tin. Unwrap the Snickers and smush into the batter, ensuring they are coated, but not sitting on the bottom.
  • To make the cheesecake topping place the cream cheese and sugar in the bowl of an electric mixer fitted with a paddle attachment and beat until combined. Add the eggs and beat until smooth. Pour over the top of the brownie mixture and then drizzle with the melted chocolate, using a toothpick to create swirl patters.
  • Bake for 25 to 35 minutes or until the edges of the brownie are starting to lightly crispen. Let the cheesecake brownies come to room temperature before refrigerating and cutting into squares.

These brownies are a great way to use up some of that leftover Halloween candy! These are made with Snickers® bars, but you can substitute Milky Way® candy bars for a different variation.

1 ½ cups white sugar
¾ cup all-purpose flour
½ cup unsweetened cocoa powder
½ teaspoon salt
¼ teaspoon baking powder
¾ cup butter, melted
3 eggs
1 teaspoon vanilla extract
2 cups chocolate-coated caramel-peanut nougat candy (such as Snickers®), chopped, divided

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking pan.
  • Mix sugar, flour, cocoa powder, salt, and baking powder together in a mixing bowl.
  • Mix butter, eggs, and vanilla extract together in a separate bowl; add butter mixture to the bowl with the flour mixture and stir batter until well mixed.
  • Pour 1/2 the batter into the prepared baking pan. Top with 1/2 the candy bar pieces. Spread remaining batter on top, covering candy completely.
  • Bake in the preheated oven until edges are brown and center is set, about 30 minutes.
  • Remove brownies from the oven and spread remaining candy bar pieces on top, lightly pressing them in while the brownies are still hot. Let brownies cool completely before serving, about 30 minutes.

1/3 cup butter, cubed
1 cup sugar
2 tablespoons water
6 ounces semisweet chocolate, chopped
1 teaspoon vanilla extract
2 large eggs
3/4 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
CREAM CHEESE LAYER:
10 ounces cream cheese, softened
1/3 cup sugar
1 large egg, beaten
1 teaspoon vanilla extract
4 Snickers candy bars (2.07 ounces each), cut into 1/2-inch pieces
GLAZE:
1/2 cup heavy whipping cream
4 ounces semisweet chocolate, chopped

Steps:

  • Preheat oven to 325°. In a heavy saucepan, bring butter, sugar and water to a boil, stirring constantly. Remove from heat. Stir in chocolate until melted; cool slightly. Stir in vanilla., In a large bowl, beat eggs until lightly beaten. Gradually add chocolate mixture; mix well. Combine flour, baking soda and salt; gradually add to egg mixture. Spread into a greased 9-in. deep-dish pie plate. Bake 20 minutes. Cool on a wire rack 10 minutes., Meanwhile, in a large bowl, beat cream cheese, sugar, egg and vanilla just until blended. Arrange candy bar pieces over brownie layer; spread cream cheese mixture over top. Bake 18-20 minutes or until top is set and edges are lightly browned. Cool on a wire rack for 1 hour., For glaze, bring cream to a simmer; remove from heat. Add chocolate and stir until smooth. Cool 15 minutes; pour over pie. Refrigerate until serving.
