- Whisk together the eggs, onion, beef base, and pepper in a bowl. Tear the bread into large pieces, and place into the bowl. Let the bread soak for a few seconds and add the ground beef. Mix the meat into the egg-bread mixture, and form into 8 patties.
- Heat a large heavy skillet over medium-high heat, and fry the patties until they are browned and the meat is no longer pink in the center, about 8 minutes per side. Set the patties aside.
- Remove the excess grease from the skillet, and whisk the mushroom soup, water, and Worcestershire sauce together in the skillet until smooth. Place the patties back into the skillet, spoon sauce over them to cover, and bring to a boil over medium-high heat. Reduce the heat to a simmer, and cook until the sauce is thickened and the flavors have blended, about 20 minutes.

HAMBURGER STEAK WITH ONIONS AND GRAVY
An easy-to-make classic featuring tasty hamburger 'steaks' smothered in gravy and onions. Traditionally served with hot white rice or potatoes, it's a great way to dress up a pound of ground beef and you probably have all the ingredients on hand!

- In a large bowl, mix together the ground beef, egg, bread crumbs, pepper, salt, onion powder, garlic powder, and Worcestershire sauce. Form into 8 balls, and flatten into patties.
- Heat the oil in a large skillet over medium heat. Fry the patties and onion in the oil until patties are nicely browned, about 4 minutes per side. Remove the beef patties to a plate, and keep warm.
- Sprinkle flour over the onions and drippings in the skillet. Stir in flour with a fork, scraping bits of beef off of the bottom as you stir. Gradually mix in the beef broth and sherry. Season with seasoned salt. Simmer and stir over medium-low heat for about 5 minutes, until the gravy thickens. Turn heat to low, return patties to the gravy, cover, and simmer for another 15 minutes.

Steps:
- Combine egg, ground beef and soup mix. Shape into 4 patties. Brown patties, add white parts of onions to saute with patties.
- When the onions are softened, add the gravy and green onion tops. Cover and simmer for 15 minutes.
- Serve with Garlic Mashed Potatoes with Spinach and Sweet Peas.

SMOTHERED HAMBURGER STEAK

- 1. Note: If using lean ground beef, you may want to add a couple TBLS of olive oil to the meat to keep it moist during cooking.
- 2. Place 1/2 chopped mushrooms, & 1/2 c. finely chopped onions, 1/2 c. finely chopped celery & 1 tsp of olive oil in microwavable bowl. Stir ingredients to lightly coat veggies with O.O. Microwave for 2 min. or till nice & tender. Cool.
- 3. Mix together ground beef, seasoning & micro veggies. Form into oval shaped patties. Fry in skillet till done. Remove from skillet.
- 4. In same skillet used to cook patties, add 2 TBL of olive oil & saute 1 1/2 c of sliced onions & mushrooms till tender. Remove from skillet. Add alittle more olive oil if needed, add 1/2 c flour & make a roux, scraping bottom of pan to release the yummies, add alittle salt & pepper if desired. Cook on med heat for a couple of minutes to brown roux. Add beef stock stirring till thickened, return sauted onions & mushrooms to pan, mix in.
- 5. Place patties over a slice of toasted bread, cover with gravy, also great on mashed potatoes.
GREEK HAMBURGERS
I was craving some Greek food one night, but was also interested in a cheeseburger. I had some Mediterranean-esque ingredients in my fridge. Thankfully, the burgers came out AMAZING! Every person that has had the burgers though they were amazing, too. Enjoy! Serve with yogurt sauce, toasted hamburger buns, lettuce, and tomato. Try also with ground lamb.

- Dice onion and add to the ground beef. (If using onion soup mix, blend well in ground beef.).
- Mix and form into patties.
- Fry the patties in skillet on medium heat until cooked to your liking.
- I usually fry until they are medium-well to well done.
- While patties are cooking, mix 1 can cream of mushroom soup, 1/2 to 1 cup water or milk, and brown gravy packet/mix in a bowl, stirring well.
- After patties are browned and ready, add the soup mixture to the skillet. Reduce heat to simmer; spread the mixture over the patties and turn them once or twice as the mixture warms.
- Stir mixture occasionally.
- Simmer for 5 to 10 minutes or until gravy is good and hot.
- Serve with mashed potatoes, your choice of veggies, a good salad, hot rolls or bread, and a cold glass of iced tea.
- Of course, this recipe can be doubled. Serving size depends on how hungry your family or company is! ;).
- Kind of a "blue-plate" special!

- 1. In a large bowl, crumble meat - to this add soup mix, salts, pepper, egg, crumbs, milk, A-1 steak sauce, worcestershire sauce and mix just until combined. Make into desired size patties.
- 2. Preheat oven to 375 degree F. Grease a 9 x 13 baking dish. In a large skillet, over med high heat add oil and 3 tablespoons butter. Once butter has melted into the oil, carefully add your burgers. Cook until browned well on each side.
- 3. Place evenly into prepared dish.
- 4. In the same skillet with juices, saute the mushrooms until starting to brown, add the garlic nowcand cook another minute or two.
- 5. Spoon mushrooms over the burgers evenly.
- 6. Melt 1 tablespoon butter in same skillet and cook onions until golden. Spoon over the mushrooms. Preheat oven to 375 degree F.
- 7. In a med bowl, whisk together broth, kitchen bouquet, worcestershire sauce and buillion. To the same skillet, melt 2 tablespoons butter and to this whisk in the flour, stirring constantly for at least 1 minute. To this slowly whisk in the broth mixture, making sure to smooth out any lumps. Stir in sherry if using. Cook until becomes a gravy thickness. Doesn't take but a minute.
- 8. Pour this evenly over the steaks. Cover tightly with foil and bake for 40 - 45 minutes. Should be good and bubbly.
- 9. Remove foil and serve while good and hot, along side of whipped potatoes or noodles. The rich, tasty gravy would be great with either. Enjoy!

- Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and garlic in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease. - In a large glass bowl combine lean ground beef, Panko breadcrumbs, Cajun seasoning, onion powder, kosher salt, and freshly ground black pepper. Once combined form 6 balls from the meat mixture and form 6 patties. Place on a plate, cover with plastic wrap, and refrigerate until needed.
- Heat a large cast-iron skillet on medium heat, place 1 tablespoon of olive oil in the cast iron skillet, add the 6 hamburger patties in the skillet ( you may need 2 pans or to do in batches if your skillet is smaller) Leave the patties to cook 5-6 minutes on one side without moving. Flip the patties and cook another 5 minutes on the other side. Remove the patties from the skillet and place them on a plate.
- Do not drain cast iron skillet of pan drippings/oil. If you have used lean ground bee,f you should have close to 3 tablespoons of oil (if no,t use 3 tablespoons of butter for gravy.) At this time, add the sliced yellow onions and cook on medium heat for about 5 minutes in pan drippings of butter. Add the flour, and stir onions and flour in the pan drippings or butter until the flour taste has cooked off. This should only take a few minutes.
- Once the flour and onions are done add 2 ½ cups of strong beef broth (not stock), Worcestershire sauce, Kosher salt, and Freshly Ground black pepper. Stir for 2-3 minutes until the gravy starts forming and tightening. Once the gravy tightens add the hamburger patties back in the cast iron skillet, reduce heat to the lowest setting and cook for about 25 minutes. Stir occasionally and flip patties over.
