S'MORE PIZZA
Steps:
- Preheat the oven to 400 degrees F.
- Form the pizza dough into two 12-to-14-inch rounds, 1/4 inch thick. Bake, preferably on a pizza stone or pizza pan, for 4 to 6 minutes, or until just beginning to brown. Leave the oven at 400 degrees F.
- While the pizza crust is baking, toast the almonds in a medium dry skillet over medium-high heat. Transfer the almonds to a plate to cool.
- Melt the butter in the skillet. Add the graham cracker crumbs, chili powder, cayenne and salt. Cook for 2 to 3 minutes, until the crumbs are well coated. Remove from the heat and set aside.
- For each pizza, top the crust with half of the marshmallows and scatter half of the chocolate over the marshmallows. Return to the oven for 3 to 5 minutes, until the marshmallows are puffed and lightly browned. Sprinkle the pizza with half of the graham cracker mixture and top with half of the almonds. Let rest 3 to 4 minutes, slice and serve. Repeat to make the second pizza.

Yield about 12 (2-inch) squares
Number Of Ingredients 13
Steps:
- Position a rack in the lower third of the oven and heat oven to 325 degrees F. Line an 8 by-8-inch square baking pan with foil so it hangs over the edges by about 1 inch.
- For the crust: Lightly butter the foil with some of the melted butter. Stir the rest of the butter together with the crumbs, sugar, and salt in a medium bowl. Press the crumb mixture evenly over the bottom of the pan. Bake until golden brown, about 20 minutes.
- Meanwhile, make the brownie. Put the butter and chocolate in a medium microwave-safe bowl. Melt in the microwave on 75 percent power for 2 minutes. Stir, and microwave again until completely melted, about 2 minutes more. Alternatively, put the butter and chocolate in a heatproof bowl. Bring a saucepan filled with 1 inch or so of water to a very slow simmer; set the bowl on the pan without touching the water. Stir occasionally until melted. Stir the light brown and white sugars, vanilla and salt into the melted chocolate. Add the eggs and beat vigorously to make a thick and glossy batter. Add the flour and stir until just incorporated.
- Pour batter into the prepared pan. Bake until the top is crispy and a toothpick inserted into the middle comes out mostly clean, with a few crumbs, about 40 to 45 minutes.
- Remove from the oven and carefully position a rack about 6 inches from the broiler and preheat on low. Layer marshmallows across the top and toast under the broiler until golden, (keep an eye on it, it can go quick), about 2 minutes. Cool on a rack, gently removing the brownies from the pan using the aluminum flaps. Carefully separate any marshmallow from the foil and fold away. Cut into 12 (2-inch) squares.

Steps:
- Bake brownies according to recipe. Let them cool for 30 minutes after removing from oven.
- With a wooden spoon handle, poke holes in cooled brownies, about an inch apart. Go through to the bottom of the pan.
- In a microwave safe bowl, heat marshmallow fluff for 30 seconds. Remove, then, stir in water until smooth and easy to pour. Pour over brownies. Let the fluff soak in for 20-30 minutes.
- Take half of the chocolate syrup and spread on top of marshmallow fluff.
- Then, sprinkle on broken graham crackers, then, top with mini marshmallows.
- To get marshmallows toasted, place brownies in preheated broiler for just 2-3 minutes.
- Drizzle top of toasted marshmallows with chocolate fudge topping before serving. You don't have to use the whole remaining syrup (you can if you want!), just whatever amount you desire.
- Cutting brownies is much easier if you spray a sharp knife with non stick cooking spray.

Steps:
- Preheat the oven to 350 degrees F.
- Put the graham crackers in a large plastic bag. Using a rolling pin or skillet, crush the crackers into fine crumbs.
- In a bowl, combine the graham cracker crumbs, sugar and melted butter. Press the mixture into the bottom of lightly greased (8- by 8-inch) baking dish. Bake the crust until slightly darkened and firm to touch, approximately 10 to 12 minutes. Remove the crust from the oven and reduce the temperature to 325 degrees F, while preparing the brownie batter.
- Melt the butter and semisweet chocolate together in a double boiler over simmering water. Allow to cool slightly (but not harden), then add the eggs, vanilla, and sugar. Sift together the flour, baking powder and salt, and add to the chocolate mixture. Add additional chocolate chips, if desired, at the last minute, folding them in to combine.
- Pour the brownie batter over the graham cracker crust and bake for 35 to 40 minutes, taking care not to overbake. A tester stuck into the brownies will not come out clean when done cooking. The idea is to create a center with a texture close to fudge. Remove the brownies from the oven and allow to cool before topping with marshmallows.
- To serve, top the brownies with marshmallows and broil until the marshmallows are melted, golden and bubbling. Serve immediately and enjoy.

- Preheat oven to 350° F. Spray an 8 or 9-inch square baking pan and line with a piece of foil or parchment paper, allowing a couple of inches of over-hang on two sides.
- For the Graham Base: Combine cracker crumbs, brown sugar and salt in a medium bowl and stir. Add melted butter and stir together until cracker crumbs are coated in butter. Gently press mixture into prepared pan and bake in the pre-heated 350° F. oven for 8-10 minutes. Set aside to cool completely before proceeding.
- For the Brownie Layer: Melt the butter and chocolate together in a medium metal bowl set over a pan of simmering water (don’t let the bowl touch the water). *Or do this in the microwave, if you prefer.
- Let the chocolate cool slightly before stirring in the sugar, salt and vanilla. Add the eggs one at a time, stirring each time until blended. Add the flour and cocoa and beat until the mixture is smooth, 30-60 seconds. Batter will be thick. Scrape the batter on top of the cooled graham cracker base and smooth top. Bake in pre-heated 350° F. oven until the top is uniformly coloured, with no indentation and a toothpick inserted in the middle comes out almost clean, with a few moist crumbs clinging to it, about 22-28 minutes. Set aside to cool completely before proceeding.
SUMMER S'MORES BROWNIE CUPCAKES - FRESH FOOD IN A FLASH

- Preheat oven to 350°. Start with graham crackers or graham cracker crumbs. To make the crumbs, process the graham crackers in a food processor (or with a rolling pin in a zipper bag). Add melted butter and sugar and combine. This will take about a minute!
- Make the brownie mix. First melt butter and the chocolate chips in the top of a double boiler or a heat safe bowl over a saucepan with two inches of hot simmering water. Chocolate can burn, so this method achieves the best results. Once, the chocolate and butter on the bottom is halfway melted, take off the heat and stir to combine. The mixture will naturally melt together. Stir in the sugar. In a separate bowl, combine the flour, cocoa powder and salt. When chocolate mixture is cool to touch, stir in eggs quickly (so you don't have scrambled eggs). Last, add the dry ingredients and combine, just until the white from the flour disappears. Do not overmix.
- Assemble by first lining a muffin tin with cupcake liners. Scoop or spoon a heaping Tablespoon of the graham cracker mix into the liner and tamp down with a small flat surface like a bottle cap. I used a cocktail bar muddler. Then using an ice cream scoop, scoop the brownie mix onto the graham cracker layer filling the cupcake liner half full or more. Bake cupcakes for 15-20 minutes or until set.
- While the cupcakes are baking, make the marshmallow frosting. Heat a double boiler saucepan with two inches of water. Have a mixer with bowl and whisk attachment ready. Place egg whites, sugar and cream of tartar in the top of a very clean double boiler or a heat safe bowl. (Traces of fat from the brownie mix will inhibit the egg whites from whipping.) Whisk constantly until sugar is dissolved and mixture is hot, about 4 minutes. Remove from heat and continue whisking with an electric mixer, If using a stand mixer, pour the egg white mixture into the bowl and whisk until stiff glossy peaks form.
