S'MORES DIP
Bring the flavors of your favorite campfire treat indoors with this crowd-pleasing dessert dip. For an even quicker version, use 1 1/2 cups of your favorite prepared fudge sauce instead of making it from scratch.

Steps:
- Combine the chocolate chips, heavy cream, corn syrup, butter and 1/8 teaspoon salt in an 8-inch cast iron skillet (see Cook's Note). Put over medium heat. Stir periodically as the mixture comes to a gentle simmer. Simmer for 6 minutes, stirring frequently, until the sauce is smooth and slightly thickened. Turn down the heat if the sauce comes to a full boil. Remove from the heat and let cool at least 15 minutes.
- Preheat the broiler.
- Cover the fudge sauce with a single dense layer of marshmallows. Place under the broiler and broil until the marshmallows are toasty brown, 2 to 3 minutes (watch carefully as they may brown more quickly depending on your broiler.) Serve right away with dippers.

- In a medium sauce pan add chocolate chips, milk and 1 cup of your mallows. Mix continuously over medium heat until melted and smooth. Using a rubber spatula, scrape chocolate mixture into a small casserole dish. Top with remaining mallows. Place dish under your oven broiler for approximately 60 seconds or until the top has started to brown. Dip your graham crackers and enjoy!
WARM RANCH CRACK DIP RECIPE WITH BACON AND CREAM CHEESE
Steps:
- Preheat the oven to 350 degrees F (177 degrees C).
- Heat the cream cheese gently in the microwave on medium power, or on the stove in a double boiler, until it's warm and easy to stir. (Don't get it scalding hot, just warm. If it's too hot, wait for it to cool to be just warm before the next step, to avoid curdling the ranch and sour cream.)
- Stir the ranch dressing into the cream cheese, until smooth, then stir in the sour cream. Stir in remaining ingredients.
- Transfer the dip into a 1/2 quart (1/2 liter) glass or stoneware baking dish like this one.
- Bake for about 15 minutes, until hot and bubbly at the edges underneath. Serve hot or warm, with veggies or low carb crackers.

- Heat the chocolate, milk and 200g of the marshmallows in an ovenproof frying pan over a low heat until melted and smooth. Top with the remaining marshmallows in circles so that the whole surface is covered.
- Grill on high for 1-2 mins until the marshmallows are toasted. Serve with digestives and strawberry and pineapple skewers for dunking.

- Heat broiler.
- Microwave milk and chocolate in large microwaveable bowl on HIGH 1 min.; stir. Microwave additional 30 sec. to 1 min. or until chocolate is completely melted and mixture is well blended when stirred.
- Reserve 10 marshmallows for later use. Add remaining marshmallows to chocolate mixture. (Do not stir.) Microwave 1 min. Let stand 1 min.; stir just until marshmallows begin to melt. Spoon into pie plate.
- Cut reserved marshmallows in half; place, cut sides down, on dip. Broil, 6 inches from heat, 1 min. or until marshmallows are golden brown.
