TROPICAL OATMEAL SMOOTHIE



Tropical Oatmeal Smoothie image

This tropical-inspired smoothie is packed with fiber (6 grams per serving), thanks to the fruit and the clever addition of rolled oats. Feel free to take a tip from us and add oats-and fiber-to your favorite smoothie, too.

Number Of Ingredients 9

1/2 cup old-fashioned rolled oats
1 small banana, peeled and broken into 4 pieces
1 1/2 cups plain unsweetened coconut milk beverage
Juice of 1/2 small lemon (about 1 tablespoon)
1/2 teaspoon pure vanilla extract
Kosher salt
3/4 cup frozen unsweetened mango cubes
3/4 cup frozen unsweetened pineapple cubes
Fresh pineapple wedges, for garnish

Steps:

  • Add the oats to a blender, cover and blend to a fine powder. Add 2 ice cubes, banana, coconut milk, lemon juice, vanilla and 1/8 teaspoon salt, cover and blend until smooth. Add the mango and pineapple, cover and blend until smooth, at least 1 minute.
  • Pour the smoothie into two large chilled glasses and garnish with a pineapple wedge.

1 to 2 tablespoons honey

Steps:

  • Combine the banana, cherries, almond milk, yogurt and 1 tablespoon honey in a blender and puree until smooth. Adjust the sweetness with additional honey.

This pretty green smoothie is packed with fiber, vitamin C and lutein (which may be good for eyesight). Keep frozen grapes in your freezer so you can whirl this up in a pinch for breakfast or for a healthy refresher any time of day.

1 cup chopped fresh pineapple, plus a pineapple wedge for garnish
1 cup packed chopped kale (stems removed)
1 cup frozen green grapes
1 tablespoon fresh lemon juice
1 teaspoon finely grated fresh ginger
1 teaspoon ground flaxseed

Steps:

  • Put the pineapple, kale, frozen grapes, lemon juice, ginger and flaxseed into a blender. Blend on high until very smooth, turning off the blender and pushing down on the ingredients with a spatula or wooden spoon as needed to help the blending process. Add 1 to 2 tablespoons of water if needed to adjust consistency. Pour into a glass and garnish with a pineapple wedge.
