Number Of Ingredients 10

4 1/2 pounds tomatoes
1 medium onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1/4 cup extra-virgin olive oil
1 teaspoon sweet pimentón (smoked paprika)
3 garlic cloves, peeled
1 teaspoon cumin seeds
1/2 cup coarse bread crumbs (from a day-old baguette)
2 cups fresh figs or seedless green grapes, halved

Steps:

  • Cut a shallow X in bottom of each tomato. Blanch in batches in a pot of boiling water 15 to 30 seconds, then transfer to an ice bath. Peel and seed tomatoes, then coarsely chop.
  • Cook onion and bell peppers in oil with 1/2 teaspoon salt in a wide 5-quart heavy pot over medium heat, stirring occasionally, until soft, about 15 minutes. Stir in tomatoes, pimentón, and 1/2 teaspoon salt and cook, uncovered, stirring occasionally, until tomatoes are tender and falling apart, about 20 minutes.
  • Meanwhile, crush garlic to a paste with cumin using a mortar and pestle (or crush cumin with side of a heavy knife, mince and mash garlic, and stir together).
  • Stir garlic-cumin paste and bread crumbs into tomato mixture. Purée soup in batches in a blender until smooth (use caution when blending hot liquids) and return to cleaned pot. Thin to desired consistency with water and season with salt and pepper.
  • Serve soup topped with figs or grapes, depending on the season.

Plan to use whatever bounty we gather - just make sure to use a fresh white-fleshed fish & whatever fresh shellfish you can get your hands on. JeanMarie Brownson recalled the seafood of Spain in this recipe for her column, Dinner at Home, in October, 2008. From the editors of Food & Drink Weekly - one of their Top Picks for 2008. They included the following recipe for garlic mayonnaise but there are much better recipes here on Zaar to do this soup justice - like Recipe#57644. Garlic mayonnaise - Mix 1/3 cup mayonnaise and 1 tablespoon fresh lemon juice in a small bowl. Use a garlic press to crush in 1 large clove of garlic; mix well. Add a pinch of salt if needed. This can be made up to 1 day in advance; cover and refrigerate.

8 ounces clam juice or 8 ounces water
1/2 cup dry white wine

24 clams, cherrystones, scrubbed clean
1/2 lb shrimp, peeled, deveined (26-30 count)
1 lb white fish fillet (boneless, skinless, white-fleshed)
1/2 lb bay scallop

Steps:

  • If using fresh tomatoes - heat the broiler to high; put tomatoes on a foil-lined baking sheet. Broil 6 inches from the heat source, turning occasionally, until the skin is lightly charred on all sides, 10-12 minutes. Cool, peel and chop coarsely, collecting all the juices.
  • Heat the oil in a 4- to 5-quart Dutch oven or deep saucepan. Cook the shallots and leek until soft, about 4 minutes. Stir in the red pepper and garlic; cook 1 minute.
  • Add the tomatoes, broth, clam juice, wine, tomato paste, salt and paprika. Simmer 15 minutes.
  • Add the scrubbed clams; cook 3 minutes. Add the shrimp and fish; cook 2 minutes. Add the scallops; cook 1 minute or until all fish is opaque but still tender.
  • Ladle the soup into wide serving bowls.
  • Place a dollop of aioli into the center. Sprinkle with parsley and chives.

1 small clove garlic, smashed
3 slices white sandwich bread, torn into 2-inch pieces
1/3 cup blanched almonds, toasted
1 tablespoon plus 1 teaspoon sherry vinegar
1/3 cup extra-virgin olive oil
Coarse salt and freshly ground pepper
Assorted accompaniments, such as chopped hard-cooked eggs, tuna in olive oil, sliced ham or prosciutto, Spanish olives, Marcona almonds, manchego cheese, and crackers

Steps:

  • Make a 1/4-inch-deep X in bottom of each tomato with the tip of a paring knife, then core. In a large pot of boiling water, blanch tomatoes 30 seconds. Transfer to a large bowl of ice water and let stand until cool. Drain; peel and quarter tomatoes.
  • Transfer tomatoes to a blender along with garlic, bread, almonds, vinegar, and oil. Puree until smooth, about 1 minute; season with salt and pepper. Refrigerate until well chilled, at least 1 hour and up to 2 days. Serve soup with accompaniments.

2 tablespoons olive oil, divided
1 medium red bell pepper, chopped
½ medium onion, finely chopped
3 cloves garlic, finely minced
1 (15 ounce) can diced tomatoes
2 tablespoons all-purpose flour
1 ½ teaspoons smoked paprika
1 ½ teaspoons sweet paprika
1 teaspoon dried oregano
1 teaspoon ground cumin
½ teaspoon salt
¼ teaspoon pepper
1 pound beef stew meat
1 tablespoon butter
2 cups water
2 tablespoons red wine vinegar
¼ cup chopped pimento-stuffed green Manzanilla olives

Steps:

  • Heat 1 tablespoon oil in a Dutch oven over medium heat. Add bell pepper, onion, and garlic. Cook until onions are tender and start to caramelize around the edges, about 5 minutes. Add diced tomatoes.
  • Combine flour, smoked paprika, sweet paprika, oregano, cumin, salt, and pepper in a resealable plastic bag. Add beef stew meat and shake to coat.
  • Heat remaining oil and butter in a skillet over medium-high heat and brown coated beef on all sides, 3 to 5 minutes per side.
  • Transfer browned stew meat to the Dutch oven. Add water and vinegar; stir to combine. Cook over low heat for 1 1/2 hours.
  • Remove the lid and add olives. Cook stew for an additional 30 minutes. Adjust seasonings to taste.

100 g bacon, diced

  • Blanch tomatoes and skin them, or just use canned tomatoes.
  • Cook bacon; take out; saute onions and red peppers in bacon grease.

  • Return bacon and bring to a boil.
  • Simmer 1 hour, stirring.

1 tbsp soft butter
1 tbsp olive oil
1 large onion , chopped
1 celery stick , chopped
1 large carrot , chopped
2 bay leaves
2 garlic cloves , crushed
2 x 400g cans chopped tomatoes
500ml vegetable stock
1 tbsp sweet smoked paprika
1 tsp brown sugar
2 tsp sherry vinegar
1 small garlic clove , very finely chopped
1 red chilli
1 tbsp chopped coriander leaves
125g pitted green olives , roughly chopped
4-5 tbsp extra virgin olive oil
1 tbsp white balsamic or sherry vinegar
1 preserved lemon or 1/2 if you are using homemade ones, rind cut into slivers (discard the flesh)
1⁄2-1 tsp preserved lemon brine, from the jar

Steps:

  • Heat the butter and oil in a large saucepan on a medium heat, add the onion, celery and carrot and fry until tender, without turning golden, about 10 mins. Add the bay and garlic, and fry for a minute before adding the tomatoes and stock. Simmer for 10 mins, stirring occasionally.
  • Remove the bay leaves, and blend the soup in a liquidiser or with a stick blender until smooth. Season well and add the smoked paprika, sugar and vinegar to balance the soup with sweet, smokiness and a little acidity.
  • For the salsa, crush the garlic with a pinch of salt using a pestle and mortar. Halve and deseed the chilli and chop roughly. Add to the mortar with the coriander and olives and bash, gradually adding the oil and vinegar until you have a rough paste (it should be chunky). Mix in the preserved lemon, then stir in the brine from the jar to taste.
