Best Damn Roasted Salsa image

The Best Damn Roasted Salsa is SUPER easy, quick, fresh and delicious with a lovely complex smoky flavor that can't be beat!

Number Of Ingredients 8

2 1/2 pounds tomatoes, chopped (I used about 6 of varying sizes)
2 medium jalapeno peppers (leave the seeds in for an extra kick of spice)
1 small white onion
3 garlic cloves
1/2 cup fresh cilantro
2 teaspoons ground cumin
1 teaspoon sea salt + more to taste as needed
2 tablespoons lime juice, about 1 lime, juiced

Steps:

  • Clean veggies and remove stems. Slice onion in half. Keep skin on garlic. Heat broiler on high, with rack in top position. Place tomatoes, jalapenos, onion and garlic in a single layer on a rimmed baking sheet that is covered with foil.
  • Broil until vegetables are blistered and slightly softened, rotating sheet and flipping vegetables frequently, 6 to 8 minutes (garlic may need to be removed earlier, if it is browning too quickly).
  • Discard garlic skins and add all ingredients to the bowl of a food processor. Pulse about 3-4 times and until all ingredients are combined and chopped. Roasted salsa is more liquidy than regular salsa.
  • Taste the salsa and add more cumin and/or salt as desired.
  • Transfer to a bowl and enjoy with tortilla chips! Also, great served over eggs, tacos and more.
  • I prefer to refrigerate salsa for 1 day prior to serving to allow the flavors to marry and meld. Salsa will keep for about 1 week in an airtight container or jar in the fridge.

8 ripe plum tomatoes
1 tablespoon vegetable oil
4 poblano peppers
4 Anaheim chile peppers
1 jalapeno chile pepper, or more to taste
1 large green bell pepper
2 tablespoons chopped cilantro leaves
2 tablespoons white vinegar
¼ onion
2 cloves garlic
2 teaspoons salt
¼ teaspoon mesquite flavored liquid smoke concentrate

Steps:

  • Preheat an outdoor grill for medium heat.
  • Rub tomatoes with oil and grill for 10 minutes, turn. Place poblano, Anaheim, jalapeno chiles, and the green pepper on the grill. Grill 5 to 7 minutes per side, being careful not to let them burn. The skins should blister and brown. Remove tomatoes to a separate bowl. Place the chiles and pepper in an airtight container to let them steam while they cool so they're easier to peel.
  • Peel tomatoes and drain excess liquid. Peel and seed peppers.
  • Place the tomatoes, chiles, green pepper, cilantro, vinegar, onion, garlic, and salt in the container of a food processor. Pulse 4 or 5 times. Add liquid smoke and more jalapenos if desired. Pulse until salsa is as chunky or smooth as you like.

I love the roasted flavor that grilling gives food, so I decided to make a salsa from grilled vegetables. I think this recipe would also taste great using plum tomatoes. 1 cup soaked mesquite wood chips
2 medium onions
12 garlic cloves, peeled
3 teaspoons barbecue seasoning, divided
2 pounds tomatillos, husks removed (about 12)
2 pounds plum tomatoes (about 8)
6 jalapeno peppers
1-1/2 cups cider vinegar
1-1/4 cups packed brown sugar
1-1/2 teaspoons salt
1/2 teaspoon pepper
1/3 cup minced fresh cilantro

Steps:

  • Add wood chips to grill according to manufacturer's directions. , Cut onions in quarters; place in a small bowl. Add garlic and 1-1/2 teaspoons barbecue seasoning; toss to coat. Arrange on grilling grid; place on greased grill rack. Grill, covered, over medium heat 10-15 minutes or until tender, turning occasionally., Meanwhile, cut tomatillos, tomatoes and jalapenos in half; place in a large bowl. Add remaining barbecue seasoning; toss to coat. Grill in batches, covered, over medium heat 4-6 minutes or until tender, turning occasionally., When cool enough to handle, chop vegetables. Transfer to a Dutch oven; stir in vinegar, brown sugar, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes or until slightly thickened. Immediately stir in cilantro. , Carefully ladle hot mixture into 4 hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.

2 red peppers , halved lengthways
6 ripe tomatoes , halved
1 garlic clove , crushed
juice 1 lime
1 tbsp extra-virgin olive oil
2 tsp chipotle paste
1 red onion , finely chopped
20g pack coriander , roughly chopped

Steps:

  • Heat grill to high. Put peppers onto a baking sheet, skin-side up, grill until skins are black, then put into a bowl and cover. Leave until cool, then peel skins away.
  • Scoop out and discard tomato seeds. Put tomatoes into a food processor with garlic, lime juice, oil and chipotle paste. Add peppers, then pulse until chunky. Stir onion and coriander through, then serve.

This Smoky Roasted Salsa is the little black dress of the salsa world; non-traditional, smoky, fine-textured, and slightly spicy with a bold flavour that'll knock you out, this salsa is equally wonderful when dunked with chips, poured over meats in a slow-cooker, or spooned and baked on enchiladas. I have yet to find a commercially available salsa that matches this for depth, complexity, and utter fabulousness. I make this salsa in bulk -to the tune of a bushel each of tomatillos and plum tomatoes- every summer because the boys and their friends alike act neglected and depressed if we run out before summer rolls around. While it is far and away best when prepared in season, you can make it year 'round in a salsa emergency. Believe me when I tell you if you run out, it will be a salsa emergency.Yield: about 6 pintsReprinted from "Not Your Mama's Canning Book"

12 dried chipotle peppers (stems and seeds removed)
12 dried guajilllo peppers (stems and seeds removed)
2 cups boiling water
2 small to medium sized onions
1 head garlic (separated into cloves but not peeled)
2 lbs plum or Roma tomatoes
2 lbs tomatillos (husks removed)
1 cup bottled lime juice
1 tablespoon honey (agave, or raw sugar)
1 1/2 teaspoons kosher salt

Steps:

  • In a heavy, dry skillet (cast iron, for example) toast the chiles in batches until pliable. Place in a stainless steel or glass bowl. Pour boiling water over the chiles and weigh down with a plate or weight. Let soak for 20 minutes.
  • Meanwhile, place the tomatillos, tomatoes, onions, and garlic on a half sheet pan under the broiler. Turn all of them occasionally until blistered all over and blackened in places.
  • Transfer the tomatillos to a blender or food processor. Pulse until smooth: add to a large stockpot. Transfer the onions and garlic to a cutting board. Leave the tomatoes in the half sheet pan and cover with a second, inverted sheet pan or with plastic wrap to allow it to cool.
  • While the tomatoes cool, peel and roughly chop the onions and garlic. Add them to the blender or food processor and pulse until finely chopped or smooth. Add to the tomatillos in the stockpot.
  • Add the soaked chile peppers to the blender or food processor, strain the soaking liquid through a fine mesh sieve, add the liquid to the food processor or blender, and blend on high until smooth. Add to the stockpot.
  • Turn your attention to the tomatoes. The skins should peel easily from the tomatoes. Discard the skins and add the tomatoes and juice to the blender. Pulse until the tomatoes are your desired texture. (See Cook's Notes)
  • Add to the stockpot with the lime juice, honey, sugar, or agave, and salt. Bring to a boil, stirring frequently to prevent scorching. Lower heat to medium, and simmer for 15 minutes or until slightly less thick than ketchup. Ladle into prepared pint or half pint jars to within 1/2-inch of the rim. Fix jar lids in place and tighten appropriately.
  • Use canning tongs to transfer jars to a boiling water canner with boiling water to cover by 2 inches. Put the canner lid in place and bring to a full rolling boil. Boil for 15 minutes. Transfer jars to a wire rack or towel lined counter. Cool completely (at least 12 hours) before removing rings, wiping clean, and labeling. Store in a cool, dark place for up to a year.

SMOKY ROASTED CHICKEN AND CITRUS SALSA



Smoky Roasted Chicken and Citrus Salsa image

1 whole (3-1/2-pound) free-range chicken
1/2 cup smoked olive oil
Kosher salt and freshly cracked black pepper
1 -1/2 pounds baby creamer potatoes in assorted colors
2 limes
1 navel orange
1 grapefruit
Extra-virgin olive oil
Kosher salt and freshly cracked black pepper
6 breakfast radishes
3 tablespoons finely chopped fresh chives
Flowering cilantro buds
Fleur de sel

Steps:

  • Roast the chicken. Preheat the oven to 375 degrees F. Using a sharp knife or kitchen shears, cut along both sides of the backbone and discard it. Flatten the chicken and cut it in half through the breast so you have two halves-each with a leg and breast. Rub all over with some of the smoked olive oil, ensuring it gets in all the crevices. Season all over with salt and pepper.
  • Set the chicken in a large roasting pan over two burners and heat over medium-high heat. When the pan is hot, add the chicken halves skin-side down and sear for 4 to 5 minutes. Turn the chicken over, add the potatoes to the pan, and drizzle with more smoked olive oil. Season with salt and pepper. Roast in the oven for 45 minutes, or until an instant-read thermometer inserted in the joint between the thigh and drumstick reads 160 degrees to 165 degrees F. The potatoes should be golden on the outside and tender in the middle. Remove from the oven and allow the chicken to rest for 5 minutes.
  • Make the citrus salsa. Use a sharp knife to cut away the rind and pith from each of the citrus fruits. Holding the fruit over a bowl, carefully cut between the membranes to free the segments. Let the juices and segments fall into the bowl. Add about cup extra-virgin olive oil to the bowl and season with salt and pepper. Cut the radishes into very fine matchsticks on a mandoline or with a sharp knife. Fold them into the citrus salsa, and add the chives.
  • Serve the roasted chicken with the potatoes and citrus salsa, and garnish with flowering cilantro. Season with fleur de sel.
