MAPLE BARBECUE GRILLED CHICKEN
Sweet, sticky, charred, and crispy: Barbecued chicken is one of the surest signs of summer. Store-bought sauce has nothing on this easy homemade version, which uses maple syrup for sweetness and Sriracha for heat. Use whatever bone-in chicken parts you like and save the leftover sauce for everything else you plan to grill this week.

- Heat olive oil in a small saucepan over medium. Cook garlic, turning occasionally, until golden brown, about 4 minutes. Add tomato paste and cook, stirring constantly and scraping bottom of pan, until slightly darkened, about 3 minutes. Add maple syrup, soy sauce, Worcestershire sauce, vinegar, and Sriracha. Bring to a boil, then reduce heat to medium-low and simmer until flavors have come together, about 1 minute. Remove from heat. Transfer about half of barbecue sauce to a heatproof bowl and set aside for serving.
- Prepare a grill for medium-high indirect heat (for a charcoal grill, bank coals on one side of grill; for a gas grill, leave one or two burners off); oil grate. Season chicken generously with salt. Grill chicken over direct heat, turning every minute, until browned on all sides, about 5 minutes. Move chicken over indirect heat. Cover, positioning vent (if your grill has one) over chicken, and continue to grill, keeping grill covered as much as possible and turning every 5 minutes or so, until an instant-read thermometer inserted into thickest part registers 140°F-145°F, 18-25 minutes depending on the size of the pieces. Baste chicken with barbecue sauce and grill, turning and basting occasionally, until an instant-read thermometer inserted into thickest part registers 160°F for breast and 165°F for dark meat, about 10 minutes longer.
- Arrange chicken on a platter. Serve with reserved barbecue sauce alongside.
- Do Ahead: Barbecue sauce can be made 2 weeks ahead. Transfer to an airtight container; cover and chill.
GRILLED BBQ CHICKEN

- If using boneless skinless chicken breasts, place the chicken breasts one at a time in a 1-gallon zip-lock bag; using a meat mallet, pound the breasts to an even ½-inch thickness. (Skip this step if using tenderloins.)
- In a large bowl, whisk together the oil, garlic, salt, brown sugar, smoked paprika, cumin, chili powder, and cayenne. Place the chicken in the bowl and, using tongs, toss until the chicken is evenly coated with the marinade. Cover the bowl and place in the refrigerator to marinate for at least 6 hours or up to 24 hours.
- Preheat the grill to high and oil the grates. Grill the chicken, covered, for 2 to 3 minutes. Flip the chicken, and then brush with some of the barbecue sauce. Cook for 2 to 3 minutes more. (Note that tenderloins will cook faster than breasts.)
- Transfer the chicken to a serving platter and serve with the remaining barbecue sauce alongside.

This is not only quick and easy but great tasting as well. Had I not tasted this delicious grilled chicken I likely would never have chosen to make a barbecue sauce that had horseradish as one of the ingredients, but having tasted it I just had to have the recipe. Good friends share!

- Make Sauce: In a small saucepan combine ketchup, cider vinegar, horseradish, brown sugar, minced garlic, thyme and black pepper; whisk together to mix ingredients. Bring to a boil over medium/low heat. Cook about five minutes until thickened. Remove from heat.
- Brush chicken breasts with sauce (both sides) and place in foil lined pan.
- Broil or grill basting with remaining sauce until no longer pink in centre. Allow to stand five minutes before serving.
SMOKY MAPLE BARBECUED CHICKEN BREASTS

- Crumb Topping : combine the 8th,9th,10th,11th,and 12th ingredients to make the crumb topping.
- Barbecue Sauce:
- 1. combine the ketchup, chili sauce, brown sugar, vinegar and garlic in a small saucepan. Bring to boil over the medium low heat. Cook uncovered, stirring frequently, until thickened, about 5 minutes. remove from heat. add a grinding of black pepper.
- 2. Heat the oven to 400 degrees F. Place a sheet of heavy-duty alumiunum foil on a baking sheet and crimp the edges up slightly so the juices won't drip over.
- 3. Coat the undersides of the chicken breasts lightly with the barbecue sauce. Place the breasts sauce side down, on the foil lined baking sheet. Coat the tops of the chicken breasts with the remaining barbecue sauce, dividing it evenly.
- 4. meanwhile, heat the olive oil in a medium skillet Add the garlic and saute over medium heat for 1 minute. Add the crumbs, thyme and a pinch of salt and a grinding of black pepper. Saute the crumbs, stirring frequently, until lightly toasted, about 5 minutes. Spoon the crumbs evenly on top of the chicken breasts.
- 5. Bake the Chicken for 15 minutes. Let stand until slightly cooled. Cut each breast into 1/2 inch slices.
