SMOKY LIME-CHILE DIPPING SAUCE

This spicy dipping sauce is particularly good with fish, shrimp or chicken. You'll need a medium-hot charcoal fire to make it. Either start cooking when the main dish comes off the fire or, if making this sauce separately, light a charcoal fire in your grill, putting all the coals on one side, and wait until it has died down to medium. Remove some or all of the pith and seeds from the jalapeños if you prefer a milder sauce.

3 to 4 limes, halved crosswise
2 red or green jalapeños, halved lengthwise
2 tablespoons vegetable oil
1/4 cup soy sauce
1/4 cup fish sauce
2 tablespoons minced ginger
1 tablespoon minced garlic
2 tablespoons sugar
3 tablespoons roughly chopped Thai basil

Steps:

  • Coat limes and jalapeños lightly with oil and place on grill over medium heat, cut sides down. Cook until cut sides are golden brown streaked with black, 4 to 5 minutes. Flip over and move to side or back of grill where temperature is low. Cook until limes and chiles are soft enough to yield easily when squeezed with tongs, at least 5 and up to 20 minutes. Remove from grill and refrigerate, covered, until ready to use.
  • To make sauce, mince jalapeños and place in medium-size bowl. Squeeze 1/3 cup juice from limes and add to bowl with jalapeños, then add all remaining ingredients and whisk together. This sauce keeps, covered and refrigerated, about 3 days.

1/2 cup mayonnaise
1/2 cup sour cream
1 chipotle in adobe, plus 1 tablespoon adobe sauce
2 tablespoons freshly squeezed lime juice
Kosher salt and freshly cracked black pepper
1/4 cup chopped fresh chives

Steps:

  • Place the mayonnaise, sour cream, chipotle, adobe sauce and lime juice in a blender and puree until smooth. Season with salt and pepper. Transfer to a dipping bowl and garnish with the chives.

This chili lime sauce is a great side sauce for dipping everything from pork kebabs and chicken tenders, to topping fajitas.

2 small green serrano chiles , seeded, finely chopped
1/2 cup freshly squeezed lime juice
2 tablespoons lime zest , from 2 limes
1/3 cup chicken stock
1/4 cup fresh cilantro
2 to 3 cloves garlic, quartered
1 teaspoon sugar
1 teaspoon salt
A pinch freshly ground black pepper

Steps:

  • Gather the ingredients.
  • Place all ingredients into a food processor blender. Blend mixture well.
  • Bring sauce to a simmer over medium-high heat for 1 to 2 minutes. Reduce heat to low and let simmer for 5 more minutes. Stir occasionally. Remove from heat and let cool 5 to 10 minutes before serving.
  • Follow the above directions, if using as a marinade, but let the sauce cool for 30 minutes before using. Marinade beef for 6 to 12 hours, chicken and pork for 4 to 6 hours, fish, seafood, and vegetables for 30 minutes.
  • Make this sauce ahead of time and store in an airtight container in the refrigerator for up to one week after preparation.

  • In a small bowl, whisk together the lime juice, fish sauce, garlic, jalapeños, and brown sugar. (Or, in a 12-ounce/180-ml or larger jar with a lid, combine the ingredients, cover, then shake vigorously.) Dip a piece of lettuce in the dressing and check the seasonings; add more jalapeños, if you like. The sauce should have a balance of hot, sweet, sour, and salty, which is typical of Thai foods. 4 to 6 lemons, halved crosswise
1 red or green jalapeño, stemmed and halved lengthwise
2 tablespoons vegetable oil
1 1/2 cups roughly chopped parsley
1/4 cup minced garlic (roughly 8 large cloves)
1 cup extra-virgin olive oil
1 tablespoon cumin seed
Kosher salt and freshly cracked black pepper to taste

Steps:

  • Coat lemons and jalapeño lightly with oil and place on grill over medium heat, cut side down. Cook until cut sides are golden brown streaked with black, 4 to 5 minutes. 10 garlic cloves
1 tbsp olive oil , plus a drizzle extra
pinch of caster sugar

Steps:

  • Remove the stems from the chillies, then tip onto a sheet of foil with the garlic cloves, a drizzle of olive oil, caster sugar and some salt. Lift the sides of the foil up and scrunch to close.
  • Grill on the barbecue (or roast at 160C/140C fan/gas 3) for 30 mins until the garlic is soft. Tip into a large pestle and mortar or food processor with 1 tbsp olive oil, and crush or blitz to a chunky sauce. Will keep in the fridge for up to two days.

1/2 cup water
6 tablespoons distilled white vinegar, preferably a Thai brand
1 cup sugar
1 teaspoon kosher salt
7 red Thai chiles, fresh or freshly frozen, or canned pickled Thai red chiles
8 cloves garlic, smashed and peeled

Steps:

  • To a small saucepan, add water, vinegar, and sugar; bring to a simmer over medium-high heat. Meanwhile, roughly slice chiles and garlic. Place in a food processor with salt and pulse to a rough chop; add to the pot. Turn heat to low to maintain a steady simmer and cook, uncovered, until the liquid thickens slightly and becomes just slightly syrupy, 8-12 minutes. Cool to room temperature. The sauce will thicken further as it cools. Makes ¾ cup. You can store it in the refrigerator in a sealed container for months; the flavor improves as the ingredients continue to meld.
