OVER THE TOP CHILI
Kissed by smoke and loaded with big, beefy goodness, Over The Top Chili is a must-try for smokers and chili lovers!

Steps:
- Mix the ground beef with the Worcestershire sauce and Montreal Steak Seasoning. You can also use 1/2 teaspoon of salt, 1/2 teaspoon of pepper, and 1/2 teaspoon of garlic powder instead.
- Form the meat mixture into a giant meatball, then flatten it down a wee bit but leave it quite thick.
- In a large skillet or Dutch oven, heat the oil over medium-high heat and sautee the onions, garlic, and bell pepper for 4-5 minutes or until the onions are translucent.
- Add the spices to the sauteed veg and cook for an additional minute or until fragrant.
- Add the crushed tomatoes, diced tomatoes, diced chilis, drained and rinsed canned beans, tomato paste, and beef broth to the veggies. Bring this up to a simmer. Season with the salt.
- Fire up your Traeger or pellet smoker to 225-F.
- Put the chili on the bottom rack of your smoker, and position the giant beef flattened meatball on the rack above the chili, placing it directly ABOVE the chili pot so that all the beef drippings go into the chili.
- Cook it at 225-F for about an hour, then turn the heat up to 325-F and cook for an additional 40-60 minutes or until the beef comes to an internal temperature of 165-F. Use your probe or digital meat thermometer to check the temperature.
- Stir the chili every 30-40 minutes, and if it starts to get too thick, add up to 1 cup of beef broth a bit at a time so it doesn't get too runny. Heat the broth first so you don't drop the temperature of the chili.

SMOKED TOMATO CHILI
Smoked tomatoes are cooked on a smoker, or BBQ grill while burning flavored wood chips. The tomatoes I used when creating this recipe were smoked using a combination of mesquite, hickory, oak and cherry wood, but any flavor works. This chili was delicious over a bed of shredded lettuce and broccoli slaw, with crushed tortilla chips, sour cream, and shredded cheese. It was also good over cooked spaghetti noodles (what we call Cincinnati style), and don't hesitate to try it with a simple side of corn bread.

Steps:
- Brown beef, onion, green pepper, and garlic in dutch oven, or other large pan, over medium-high heat until meat is cooked through. Drain.
- Add the broth, beans, tomatoes, wine, Worcestershire, brown sugar, sea salt, cumin, and chili powder. Stir well.
- Cover and reduce heat to low. Simmer for 30-45 minutes, stirring occasionally.
- If it's too thick, add more broth; if it's too thin, remove lid and simmer uncovered until your desired consistency is reached.

TOMATO CHILI
This is a great recipe for using all the extra tomatoes from the garden along with any other vegetables on hand. Ground chicken, pork or sausage can be added to make the meal a little more substantial.

Steps:
- Heat oil with garlic over med-hi heat.
- (if using meat, add meat and brown. Drain excess grease).
- Add onions and cook 5 min.
- Add peppers and cook until soft.
- Add beans and corn and cook 1 min, just to warm.
- Add blended tomatoes, chicken stock, cilantro, and cooked rice.
- Season to taste with salt and pepper.
- Simmer 15-20 minutes, or until desired thickness is achieved.
- Serve topped with green onions, chopped cilantro and a dab of (fat free) sour cream.

- Heat the mustard and coriander seeds in a dry frying pan, stirring over a medium heat until they start to pop. Remove from the pan and lightly crush in a pestle and mortar or with a rolling pin. Set aside.
- Place prepared tomatoes, onions, chillies, garlic, ginger, sugar, vinegar, 1 tb smoked paprika, the crushed mustard and coriander seeds, 1 tsp salt and some chilli flakes (optional) into a large, stainless steel or enamel lined saucepan.
- Put a lid on the pan while bringing to the boil, then remove the lid, turn down the heat and simmer gently until the vegetables are soft (approx 1 hour).
- Take the saucepan off the heat and, using a handheld stick blender, reduce the mixture to a chunky puree.
