OVEN ROASTED SMOKED SAUSAGE AND POTATOES
Steps:
- Preheat the oven to 400*F.
- Line a large baking sheet with tin foil, and spray with cooking spray. Set aside.
- Cut sausage into rounds. Chop the onions and potatoes the same size. This helps with cooking time.
- Add the sausage rounds, onions, and potatoes into a large bowl. Drizzle with a tablespoon of olive oil and season with salt, pepper, and paprika. Toss together with your hands until everything is evenly distributed. Pour this out onto the sheet pan and spread out the sausage and potatoes.
- Place into the heated oven and roast for 45 minutes to an hour, stirring every 15 minutes or so, until the potatoes are golden brown and tender. Turn off the oven.
- Makes 8 servings, divide into 8 equal servings

SAUSAGE POTATO CASSEROLE
Steps:
- Preheat oven to 350° and spray a 3 quart baking dish or 13 x 9 baking dish with non stick spray right before filling.
- Add diced potatoes to large saucepan, cover with water, and boil for 15-20 minutes. Drain and return potatoes to pan.
- In a large frying pan, add ⅓ cup of water, smoked sausage and onions. Cook until sausage has browned on both sides. Add more water, if needed.
- Stir minced garlic into sausage and onions and continue cooking for an additional minute. Remove from heat and place on a plate lined with paper towels, set aside.
- Mix soups, broth, all three cheeses and seasonings into potatoes. Stir.
- Add in sausage and onion mixture. Stir until combined.
- Pour into prepared baking dish and bake for 40 minutes uncovered. Carefully remove from oven, let sit for 10 minutes before serving.
- Optional: top with sour cream, green onions, cilantro

We make this all the time! I got the recipe from a website quite awhile ago, I don't remember where exactly. It is so simple. You just make it in your MICROWAVE! How great is that??? By the way...we prefer the skinless sausage but by all means use what you like.

Steps:
- Cut potatoes into chunks and leave the skin on.
- Cut peppers into strips.
- Toss potatoes, peppers, garlic, rosemary and olive oil together and place in a microwave safe bowl.
- Cover and microwave on high 5 minutes, stir, re-cover, then microwave 5 more minutes on high.
- Add cut up sausage and microwave for another 5 minutes.
- Check potatoes for doneness and sprinkle with parmesan cheese if you'd like.

Steps:
- Set oven to 400 degrees.
- Grease or butter a 13x9-in casserole dish.
- In a skillet over medium heat; saute onions, garlic, mushrooms, seasoning salt and pepper for about 5 minutes, or until liquid is evaporated; let cool slightly.
- Layer half of the potatoes in prepared baking dish.
- Sprinkle with all the grated Parmesan cheese.
- Top with sausage, onion, mushroom and garlic mixture, then half of the cheese.
- Top with remaining potatoes; sprinkle with remaining cheese.
- Pour the half and half cream and whipping cream over top.
- You can top with more shredded cheese or Parmesan cheese if desired before baking.
- Cover, and bake for 30 minutes.
- Remove from oven and uncover, using spatula, gently press potatoes down into the cream.
- Return to oven and bake for another 25-35 minutes pressing potatoes down once, or until the potatoes are tender and golden brown and bubbly.
- Let stand for 10 minutes before serving.

- In a large saucepan, bring the water, milk, 4 tablespoons butter and salt to a boil. Remove from the heat; stir in potato flakes. Let stand for 30 seconds or until liquid is absorbed. This was another one of our favorites in the 70's Very inexpensive and very easy to make. Just recently found this recipe hand-written by my Mom, and the warm feelings flood back to me, because this was a true favorite in our house. Little did I know that she was on such a tight budget, yet made things like this that we all loved!! NOTE: The meat that was used in this recipe always varied, according to whatever we had available at the time.

Steps:
- Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
- Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
- Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.).
- Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top.
- Bake in preheated 350°F oven for 35-45 minutes (watch, until golden brown on top).
- NOTE: You can substitute: 1/2 lb. hot dogs, sliced into 1/2-inch slices OR 1/2 lb. ham diced into 1/2-inch dices OR 12 oz. can of Spam diced into 1/2-inch dices, instead of the smoked sausage.
