1 (14 ounce) package Butterball® Smoked Turkey Dinner Sausage, halved lengthwise, and cut into 1/4-inch-thick slices
1 cup diced green onions, white and green parts
1 ½ tablespoons olive oil
10 large eggs, slightly beaten
¾ cup shredded mozzarella cheese
⅓ cup freshly grated Parmesan cheese
16 torn fresh basil leaves
¼ cup chopped sun-dried tomatoes
¼ teaspoon ground black pepper
1 pinch Freshly grated Parmesan cheese
1 leaf Fresh basil leaves

Steps:

  • Preheat oven to 350 degrees F.
  • Cook and stir sausage and onions in oil in heavy oven-proof 10-inch skillet on medium heat 5 minutes or until light golden brown.
  • Combine remaining ingredients in medium bowl. Stir egg mixture into skillet mixture. Cook on medium heat, lifting with a rubber spatula once or twice, to allow uncooked portion to flow underneath. Cook just until egg mixture begins to set, about 6 minutes.
  • Place skillet in oven. Bake 5 to 7 minutes or until egg mixture is firm to the touch and top is golden brown.
  • Remove skillet from oven. Carefully run a spatula around edge of frittata to loosen from skillet. Invert skillet onto serving platter. Cut frittata into quarters. Garnish each portion with Parmesan cheese and basil, if desired.

2 cups red potatoes, cubed and cooked
8 eggs
1/4 cup parmesan cheese, grated
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup tomatoes, seeded and chopped
2 green onions, thinly sliced

Steps:

  • Cook sausage in large nonstick skillet over medium heat 4-5 minutes or until hot. Stir in potatoes.
  • Beat eggs, cheese, salt and pepper in large bowl with wire whisk. Pour over sausage mixture.
  • Cook over medium-high heat 2 minutes, occasionally lifting edge with spatula and tilting skillet to allow uncooked egg to flow underneath. (Do not stir.).
  • Reduce heat to medium-low; cover. Cook 14-17 minutes or until eggs are set.
  • Top with tomato and onions. Cut into 8 wedges to serve.

Extra-virgin olive oil
3 links hot Italian sausage, removed from the casing and crumbled
1 red bell pepper, 1/4-inch dice
1 yellow bell pepper, 1/4-inch dice
1 cup grated Parmigiano-Reggiano
12 eggs, beaten with 1/4 cup water
Salt

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat a nonstick 10-inch saute pan with olive oil. Add the sausage and brown. Add the peppers and saute until they are soft.
  • In a bowl, add the Parmigiano to the beaten eggs and season lightly with salt. Using a heat-proof rubber spatula, stir the eggs into the pan with the sausage and peppers. Stir the eggs to evenly distribute the sausage and peppers throughout the eggs. Once the eggs set on the bottom and around the sides of the pan, place the pan in the preheated oven for 7 to 8 minutes or until the eggs are cooked through. Remove from the pan. Cut into wedges and serve hot or a room temperature.

¼ cup diced onion
6 eggs
½ cup milk
¼ cup sour cream
salt and pepper to taste
1 ½ cups shredded Cheddar cheese, divided

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Cook the sausage and onion in an oven-proof skillet over medium heat until the sausage has browned, about 10 minutes. Drain excess grease from the skillet. Whisk together the eggs, milk, sour cream, salt, and pepper. Sprinkle the sausage with 1 cup of the Cheddar cheese, then pour the egg mixture overtop.
  • Bake in the preheated oven until a knife inserted into the center comes out clean, about 18 minutes. Sprinkle with the remaining Cheddar cheese, and return to the oven until the cheese has melted. Cut into wedges to serve.

2 ripe plantains, sliced on bias in ¼-inch (6 mm) slices
10 eggs
½ cup whole milk
6 oz smoked sausage, (pork, turkey, chicken or beef), thinly sliced
½ red bell pepper, chopped
½ green bell pepper, chopped
½ large yellow onion, chopped
2 roma tomatoes, seeds removed and diced
3 cloves garlic, minced
kosher salt, and freshly ground black pepper
olive oil
fresh cilantro, for garnish
avocado, for garnish

Steps:

  • Preheat the oven to 400-degrees. Line a baking sheet with parchment paper.
  • Toss plantain slices with 2 tablespoons olive oil and 1 teaspoon kosher salt in a large bowl and add to the prepared sheet in a single layer. Bake for 20 to 30 minutes until golden brown but soft on the inside. Set aside to cool.
  • In a large bowl whisk together the eggs and milk until evenly combined. Season with salt and pepper and set aside.
  • Meanwhile, heat 1 tablespoon of olive oil in a 10-inch (25 cm) cast iron skillet over medium heat. Add sausage and cook until evenly browned, about 5 minutes. Remove from the pan and set aside.
  • Add peppers and onions to skillet and cook until softened, about 5 minutes.
  • Add garlic and tomatoes; cook until garlic is fragrant, about 1 to 2 minutes.
  • Reduce heat to low and add egg mixture and cook for 1 to 2 minutes or until the edges start to set.
  • Remove from heat and top with cooked plantain slices.
  • Transfer to the oven and cook for about 15 to 20 minutes, just until the eggs are barely set.
  • Let cool for 10 to 15 minutes then garnish with cilantro and avocado slices.
  • Enjoy!

3 tablespoons quick-cooking grits
1/4 pound smoked kielbasa, sliced thin
1/2 cup finely chopped red bell pepper
1 1/2 tablespoons olive oil
4 large eggs
4 scallions, sliced thin
1/2 cup finely grated sharp Cheddar
cayenne to taste

Steps:

  • In a small heavy saucepan bring the water to a boil, add the grits and salt to taste, and cook the grits, covered, over low heat, stirring occasionally, for 5 minutes, or until they are very thick. Spoon the grits onto a sheet of plastic wrap, using the plastic wrap form them into a 1/2-inch-thick rectangle, and chill them, wrapped in the plastic wrap, for 15 minutes. Cut the grits into 1/2-inch dice.
  • In a 9-inch non-stick skillet cook the kielbasa and the bell pepper in 1 tablespoon of the oil over moderate heat, stirring, for 5 minutes. In a bowl whisk together the eggs, the scallions, the Cheddar, the cayenne, and salt to taste and stir in the kielbasa mixture and the diced grits, gently. In the skillet heat the remaining 1/2 tablespoon oil over moderate heat until it is hot but not smoking, pour in the egg mixture, and cook the frittata, without stirring, for 8 minutes, or until the edge is set but the center is still soft. If the skillet handle is plastic, wrap it in a double thickness of foil. Broil the frittata under a preheated broiler about 4 inches from the heat for 2 to 3 minutes, or until it is golden, and let it cool in the skillet for 5 minutes. Run a knife around the edge, slide the frittata onto a serving plate, and cut it into wedges. Serve the frittata warm or at room temperature.

3 tablespoons extra-virgin olive oil
2 large onions, sliced thin
2 slices white bread
2 eggs
5 egg whites
1/2 pound smoked sturgeon, salmon or whitefish, diced
1 tablespoon chopped fresh dill
Salt and freshly ground black pepper

Steps:

  • Heat two tablespoons of the oil in a heavy nonstick 10-inch skillet. Add the onions and cook very slowly, covered, until they are tender but not brown.
  • Meanwhile, remove and discard the crusts from the bread. Toast the bread, then dice it to make croutons.
  • Beat the eggs and egg whites together and stir in the fish and the dill. Season to taste with salt and pepper, bearing in mind that the fish will contribute to the saltiness of the dish.
  • When onions are tender, add croutons, stir, then add mixture of onions and croutons to the eggs.
  • Add the remaining oil to the skillet. Reheat the skillet, then pour in the egg mixture and cook over medium heat until the eggs have set and are lightly browned on the bottom but still creamy on top, five to seven minutes. Loosen the frittata with a spatula. Flip by placing a large plate on the pan, turning both plate and pan over together, then sliding the frittata back into the pan. Cook until the underside is golden, about three minutes more.
  • Divide in quarters and serve.

This is a Schwann's recipe idea that I made over. You can make most of this the night before, and bake it in the morning (see directions). My DH doesn't like anything spicy hot, so I don't use 1/2 the jalapeno cheese, but suit yourself!

1/2 cup butter, melted
2 cups shredded jalapeno pepper cheese

salt & pepper

Steps:

  • Preheat oven to 425 degrees.
  • Place hash browns into lightly sprayed 9"x11" pan and press down evenly to form a crust. Drizzle with butter and bake for 25 minutes.
  • Place cheeses, sausage, and bacon over the crust. If desired, cover at this point and refrigerate until the next day.
  • Beat milk and eggs together. Pour over cheese and meat.
  • Cook in a 350 degree oven for 30 minutes.
