EASY UNCOOKED TOMATO SAUCE FOR PASTA

Easy Uncooked Tomato Sauce for Pasta image

I love this! This is a great warm weather meal you can put together the sauce in the morning b4 work or even the night b4 and it will be perfect by the time you get home. Using canned tomatoes makes this even easier but you can use fresh if you can get good ones or even roast some Romas for this dish. This is also great B4 or with a rare charcoal grilled steak or as part of a larger Italian meal. Cook time is the marinating time.

Provided by Ilysse

Categories     European

Time 3h5m

Yield 4-6 serving(s)

Number Of Ingredients 5

1 (28 ounce) can tomatoes, your favorite type,i like cento
1 clove garlic, peeled and smashed
1/4 cup good extra virgin olive oil (quality matters)
fresh oregano or dried oregano, to taste
1 lb uncooked pasta, of choice,i like fettucini or 1 pasta, that holds the sauce like a shell penne or rigatoni

Steps:

  • Lightly drain the tomatoes (if they are in a tomato puree or a tomato sauce than by all means keep the sauce but if in water get rid of most of it).
  • Place tomatoes in a bowl, large jar, or sealable container.
  • If the tomatoes are whole you should crush them up with a fork (I use a potato masher) or dice them; you can also use diced tomatoes.
  • Add the remaining ingredients except pasta.
  • I use either fresh Basil or dried Oregano, alot of it.
  • By crushing the garlic rather than chopping you will get more garlic flavor so don't be tempted to use too much more than what I have listed unless it is from a jar or diced.
  • Cover container and place in the fridge for at least 3-6 hours; the longer it sits the better it is.
  • Remove the garlic clove from the sauce and take out of the fridge just b4 cooking the pasta You want it to be someplace between cold and room temperature If it is too warm you will not have as big a flavor burts when the hot pasta meets the sauce If too cold it will cool the pasta too much.
  • Cook pasta until al dente, drain and toss with the cold sauce.
  • Eat and enjoy, serve with hot crusty bread and a tossed green salad.

THE ULTIMATE TOMATO SAUCE RECIPE BY TASTY

The Ultimate Tomato Sauce Recipe by Tasty image

Here's what you need: canned whole tomatoes, garlic, olive oil, unsalted butter, large onion, kosher salt, pepper, anchovies, red pepper flakes, tomato paste, dry red wine, water, spaghetti, parmesan cheese

Provided by Rie McClenny

Categories     Dinner

Yield 8 servings

Number Of Ingredients 14

28 oz canned whole tomatoes, 2 cans
8 cloves garlic
¼ cup olive oil
2 tablespoons unsalted butter
1 large onion, finely chopped
kosher salt, to taste
pepper, to taste
2 oz anchovies, 1 tin or jar
1 teaspoon red pepper flakes
½ cup tomato paste
½ cup dry red wine
1 cup water
1 lb spaghetti, or paste of choice, dry
1 parmesan cheese, for grating

Steps:

  • Add the tomatoes to a deep, large bowl. Using your hands, crush the tomatoes until no large pieces remain, just a coarse tomato puree.
  • Peel the garlic cloves and finely chop.
  • Heat the olive oil and butter in a large pot over medium heat. Add the onion and garlic and season with salt and pepper. Cook, stirring occasionally, until the onion is softened but not browned, about 10 minutes.
  • Add the anchovies and the oil they are packed in. Cook, stirring occasionally, until dissolved into the oil, about 2 minutes.
  • Add the red pepper flakes and stir to combine.
  • Add the tomato paste and cook until it turns a dark, brick-red color, about 4 minutes (this caramelizes the sugars in the tomato, which will give a really great flavor and take the edge off that raw tomato-y taste).
  • Add the wine and cook for about 1 minute, just to burn off the alcohol.
  • Add the tomatoes and stir everything together, making sure to scrape the bottom of the pot to get all those good bits. Add water and bring it to a boil.
  • Reduce the heat to medium-low and cook the sauce for 1½-2 hours at a very low simmer; there should just be a few bubbles here and there. If medium-low is too high (every stove is different), reduce the heat to low. Stir every 30 minutes.
  • Ladle out about 2 cups of sauce: This is what is known as your "extra sauce." You'll serve it alongside the pasta or freeze it for later.
  • To serve, cook the spaghetti in a large pot of salted boiling water.
  • Drain the pasta and add it to the sauce. Serve it right out of the pot, or transfer to a serving bowl. Top with grated Parmesan cheese.
  • Enjoy!

RAW TOMATO SAUCE

Raw Tomato Sauce image

The best tomato sauce is raw tomato sauce. Use the juiciest, sweetest summer tomatoes you can find for this light, fresh sauce, and toss it with 1/2 lb. of well-drained hot spaghetti and lots of freshly grated Parmigiano-Reggiano. Or use it to spoon onto Pizza Dough; over poached, fried, or scrambled eggs; or on grilled fish, chicken, or zucchini.

QUICK, EASY, CREAMY, TOMATO PASTA SAUCE

Quick, Easy, Creamy, Tomato Pasta Sauce image

A delicious and simple tomato pasta sauce which I've been using for years and is the first one I taught my kids how to make. The fresh garlic at the end, uncooked, is what makes it really tasty. I hesitate to post it because the cream will curdle if the heat is too high. It sometimes takes a couple of times before you get the feel of how much heat it will take. It will still taste ok, but won't look really yummy. Do remember to dilute the paste with water first. Very important. All quantities are flexible. Substituting with milk or garlic powder will absolutely not work.

Provided by Jangomango

Categories     Sauces

Time 10m

Yield 3 serving(s)

Number Of Ingredients 7

1 can tomato paste, mixed with about
2 -3 tablespoons water
1 -2 tablespoon olive oil
3 -5 tablespoons cream
1 -2 clove crushed garlic
fresh ground black pepper
chopped fresh basil or other fresh herb

Steps:

  • Heat a saute pan on medium heat.
  • Pour in the olive oil.
  • Stir the tomato paste gently into the oil.
  • It may not completely mix just yet.
  • (Don't get the heat too high).
  • Add the cream and stir into the tomato mixture.
  • Heat it gently so that it almost starts to simmer.
  • At this point it is done.
  • Add the crushed garlic and fresh ground pepper.
  • Serve immediately over or in your pasta, and garnish with lots of fresh chopped basil.

REAL AUTHENTIC ITALIAN TOMATO SAUCE (NO CAN'S HERE)

Real Authentic Italian Tomato Sauce (No Can's Here) image

Here's the deal....if you want REAL authentic Italian tomato sauce, you've come to the right place. Sure you can save yourself all the time by opening a couple cans of diced/peeled tomatoes, but then again, that's not authentic at all. You can freeze this sauce for later use. This sauce is perfect for anything that requires a tomato sauce: e.g. spaghetti, lasagne, pizza sauce, etc. My girlfriend learned this authentic recipe while living in Italy for several years. It's simple, but takes a lot of time and a lot of love, but its well worth the effort! This is for your free Saturday or Sunday when you will be in the house for the day. Add more tomatoes, garlic, or basil if you wish. There really is no set amount for each of these, but I do suggest a minimum of 10 whole red ripe tomatoes, and a minimum of 5 garlic cloves. Add some crushed red pepper to give it a kick if you wish. This recipe is the rundown of how I make the sauce now. It took me several attempts to really master this, but once you get it down you can make more tomatoes at a time. I usually work with two pots and start out with 10 in each pot, skin all the tomatoes in both, combine and start more in the empty pot to really make a large pot to freeze. The local vegetable stand sells 25 lb. baskets for $9 while in season. We do 50 lbs. a week for a month, so we can freeze and have great sauce all during the winter. I'm going to put this makes 4 servings, but I'm really not sure. The amount of sauce used per person differs.

Provided by iN TRAiNiNG

Categories     Sauces

Time 7h10m

Yield 4-6 serving(s)

Number Of Ingredients 6

10 red ripe whole tomatoes (beefsteak, use more for romas)
5 garlic cloves
1 cup fresh basil leaf
2 tablespoons extra virgin olive oil
salt
crushed red pepper flakes, for arrabiata sauce (angry sauce) (optional)

Steps:

  • Wash, and core tomatoes. I also like to cut the little "nub" off of the bottom of the tomato. Just the nub, and this will make it easier to remove the skins from the tomatoes.
  • Place whole tomatoes in a large pot and drizzle 2 tablespoons of extra virgin olive oil over tomatoes. Place lid on pot and heat over medium.
  • After about 15 minutes give the tomatoes a stir (I use a fork to do this), ensuring not to break them up. This moves the ones on top to the bottom to help the skins to become loose and to prevent burning any skins. Cover and allow to cook for 15 more minutes.
  • After 15 minutes, take a fork and fish out a tomato from the bottom. Keeping the tomato in the pot, use two forks, or a fork and wood spoon to start removing the skins. If you like, you can take the tomato out and place on a plate or in a bowl to do this, just make sure you keep the juices. If the tomatoes are not fully ready to be skinned, put the lid back on and check every 5 minutes. (This is the most time consuming part, but once you get the hang of it, it becomes really simple.).
  • After all or most of the skins have been discarded, lower the temperature to medium low and allow to simmer uncovered. This is simply stewed tomatoes at this point.
  • Once an hour, check the sauce and stir thoroughly. Using a wooden spoon, start to break up the tomatoes over the period of checking them. (Note: Don't break them all the way up on the first, second of even third time of checking them. Break them down over time).
  • After about 5 hours, smash all tomatoes with whatever instrument you can find that will work. Add garlic cloves whole, use more than 5 if you like, I DO! (Do not mince/chop garlic) Allow to simmer for another hour. (Note: If you feel the sauce has reached your desired consistency or is nearing, you can add the garlic earlier).
  • After 1 more hour, the garlic should be soft enough to smash easily on the side of the pot and the garlic will literally disintegrate into the sauce. If sauce is at your desired consistency, you can remove from the hot eye at this point and go to the next step, if you like your sauce a little less runny, or thicker, leave on and continue to monitor to your liking.
  • Once the sauce is to your desired consistency, remove from heat and add 1 cup of fresh basil leaves, stir. Fresh is important to making really good sauce. Salt to taste. If you like a little spice, add some crushed red pepper.

UNCOOKED FRESH TOMATO SAUCE

Uncooked Fresh Tomato Sauce image

Provided by Robert Farrar Capon

Categories     lunch, weekday, side dish

Time 30m

Yield 1 1/2 cups of sauce

Number Of Ingredients 9

6 large, ripe tomatoes
1/2 teaspoon salt
Juice of 1 lemon
1 large clove garlic, minced
Chopped fresh basil leaves (about 1/2 cup)
Salt and pepper to taste
1/2 cup high-quality olive oil
Sprigs of basil for garnishing
Grated Parmesan

Steps:

  • Boil several quarts of water in a deep pot. Score the tomatoes top and bottom with an ''x,'' just breaking the skin, and add the tomatoes to the water. Let the water return to the boil and continue boiling 30 seconds. Remove the tomatoes, run them under cold water and peel off the skins.
  • Slice the tomatoes in half crosswise, place a sieve over a bowl and, holding each half over the sieve, push the seeds and juice out and into the sieve. Press out the juice and save for another use.
  • Lightly sprinkle the cut surfaces of the tomatoes with salt and let them stand 10 minutes. Gently squeeze them to get rid of any additional juice and coarsely chop the tomatoes.
  • Put the tomatoes into a bowl and add lemon juice, garlic, basil, salt and pepper, adjusting seasonings to taste.
  • Serve over hot, very thin pasta (capellini, for example), garnishing each serving with a sprig of basil and grated Parmesan.
