Steps:
- Preheat oven to 400°F Arrange bread on rimmed baking sheet. Bake until pale golden, then cool.
- Butter 8x14" glass baking dish. Melt butter with oil in heavy large skillet over medium-low heat. Add potatoes. Stir to coat and arrange in single layer. Cover and cook until almost tender. Uncover; increase heat to medium-high, and cook until potatoes are lightly browned and tender, stirring occasionally.
- Add shallots and sauté until soft, about 2 minutes. Remove from heat. Gently mix in bread and salmon. Transfer mixture to prepared dish.
- Whisk eggs and next 5 ingredients in medium bowl to blend well. Pour over potato mixture in dish. Let stand 15 minutes, occasionally pressing bread into custard. (Can be made 1 day ahead. Cover; chill. Let stand at room temperature 30 minutes before baking.).
- Bake casserole, uncovered, until custard is set, about 30 minutes. Cut into squares and serve hot.

SMOKED SALMON OMELETS WITH CAPERS AND RED ONION
I think I found this recipe in Bon Appetit a few yrs. ago when I was looking for something elegant for a brunch. Could certainly be served for breakfast. Whatever, they are very good and not too difficult. Hope someone enjoys them.

Steps:
- Whisk eggs, salt and pepper in a large bowl to blend.
- Melt 2 tsps. butter in an 8 inch nonstick skillet over a medium heat.
- Ladle 3/4 cup egg mixture into skillet.
- Cook until eggs are softly set, stirring often and lifting edges to allow uncooked portion to run under.
- Place 1/4 of salmon on half of omelet.
- Sprinkle with 1 tbls. onion and 1 teaspoons capers.
- Top with 2 tbls. cream cheese.
- Fold omelet in half and slide out onto plate.
- Repeat with remaining butter, egg mixture, salmon, onion, capers and cream cheese to make 3 more omelets.

Steps:
- Butter 13x9 baking dish.
- Arrange broccoli and half of green onions evenly over bottom of dish. Sprinkle with smoked salmon, Monterey Jack cheese, cream cheese pieces and remaining half of green onions. (Can be prepared 1 day ahead. Cover and refrigerate.).
- Preheat oven to 375.
- Mix eggs, milk, baking mix, salt and pepper in blender until smooth (or in bowl using beaters).
- Pour batter over salmon mixture.
- Bake casserole until just set in center, about 30 minutes.
- Let cool 10 minutes before serving.

- 1. Spray an 8 x 8 baking dish with non-stick cooking spray. 2. Evenly layer the Bagel Cubes in the bottom of the dish. 3. Sprinkle the Onions, Salmon, Tomatoes and finally the White Cheddar Cheese over the top of the Bagel Cubes. 4. In a medium size bowl whisk together the Eggs and Milk. Give your Pepper Mill a few turns over the mixture and whisk again. Set aside 5. Next scoop the Salmon flavored Cream Cheese into small dollops and put on top of the Cheese layer 6. Now pour the Egg mixture over the top of all, in the baking dish. Then sprinkle with the Fresh dill. 7. Cover the pan tightly with foil and refrigerate overnight. 8. In the morning, preheat your oven to 350 degrees. 9. Remove the Casserole from the refrigerator and let it sit on the counter for about 20 minutes prior to baking. 10. Place the foil covered baking dish in the oven and bake for 30 minutes. 11. Remove the foil and continue to bake for about 20-25 additional minutes. The Casserole will begin to puff up in the oven 12. All ovens cook differently so check for doneness. A knife inserted in the center should come out clean. 13. Remove the Casserole from the oven and immediately top with the Capers. Allow the Casserole to cool for about 5-10 minutes before serving. It will be piping hot! ~This is a great recipe for Breakfast or Brunch. Since you can prepare it the night before, and bake in the morning, it might be a nice dish to serve on mornings when you have guests. I served mine with a side of fresh Berries and Cream. SMOKED SALMON WITH YOGURT AND CAPERS
I found this idea in "Real Simple" magazine for an easy breakfast idea. It would also be good for a light lunch, brunch, or snack. If not serving right away (like a breakfast buffet) it would be best to change the order of the layering so that the salmon is next to the toast or else you will have icky soggy bread.

- Cut each toast in half and divide yogurt equally among the four portions; smooth to edges with the back of your spoon.
- Top each with an equal amount of the smoked salmon.
- Sprinkle with red onions and capers; season with black pepper.
- NOTE: If using regular plain yogurt, you can easily make it the consistency of Greek yogurt by what I call straining. I use a small clean strainer and spoon some yogurt into it and let it drip over a bowl for 15 to 20 minutes until it reaches the desired consistency.
