Time 2h

Yield 8

Number Of Ingredients 14

3 eggs
¼ teaspoon salt
2 cups all-purpose flour
2 cups milk
¼ cup vegetable oil
½ teaspoon ground cinnamon
4 Granny Smith apples, peeled and diced
½ cup white sugar
2 teaspoons cinnamon
2 tablespoons water
2 tablespoons cornstarch
1 tablespoon water
1 ½ tablespoons milk
8 teaspoons vegetable oil, divided

Steps:

  • Whisk eggs and salt together in a bowl. Gradually stir flour into eggs, alternately with 2 cups milk until fully incorporated. Beat 1/4 cup vegetable oil and 1/2 teaspoon cinnamon into flour mixture. Refrigerate batter for at least 1 hour.
  • Mix apples, sugar, 2 teaspoons cinnamon, and 2 tablespoons water in a pot.
  • Whisk cornstarch and 1 tablespoon water in a small bowl; pour into apple mixture.
  • Simmer apple mixture over medium heat, stirring often, until thickened, 8 to 10 minutes. Keep warm.
  • Whisk 1 1/2 tablespoons milk into chilled batter.
  • Heat about 1 teaspoon vegetable oil in a crepe or frying pan over medium heat. Pour about 1/3 cup batter into the heated oil; tip and rotate the crepe pan until the batter covers the entire area. Cook until the edges begin to curl away from the sides of the pan, about 30 seconds; flip the crepe and continue cooking until lightly golden on the other side, about 30 more seconds. Remove crepe from pan, add more oil, and repeat with remaining batter.
  • Spoon the apple filling into each crepe; fold crepe over the filling and serve.

Time 9h35m

Yield 8 to 10 servings

Number Of Ingredients 37

1 (5 to 6 pounds) pork butt
1/2 cup Pork Rub, recipe follows
1 tablespoon dry mustard
Olive oil
Apple chips, soaked in water
BBQ sauce, recipe follows
8 large rolls
1 small red onion, thinly sliced
2 large pickles, sliced into thin rounds
4 tablespoons brown sugar
4 tablespoons onion powder
4 tablespoons garlic powder
4 tablespoons dried thyme
4 tablespoons dried oregano
2 tablespoons mild paprika
2 tablespoons hot paprika
4 teaspoons cayenne
4 teaspoons ground coriander
2 teaspoons black pepper
2 teaspoons white pepper
2 tablespoons kosher salt
2 tablespoons vegetable oil
1/2 medium onion, minced
6 cloves garlic, minced
1 tablespoon chopped fresh oregano leaves
1 cup ketchup
1 cup tomato puree
1 tablespoon Worcestershire sauce
1/3 cup honey
1/3 cup brown sugar
2 tablespoons southern style hot sauce (recommended: Tabasco)
1 tablespoon smoked paprika
1 teaspoon cayenne
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Place the pork butt in a shallow pan. To the pork rub, add the dry mustard and mix well. Rub the whole surface with the Pork Rub. Drizzle the surface with olive oil and rub well again. Cover and refrigerate at least 6 hours or overnight in the refrigerator.
  • Soak the apple chips in cold water for at least 30 minutes. Preheat 1 side of the charcoal grill to medium. Drain the apple chips and place on the hot side of the grill in the wood chip tray or in a small metal tray by the fire. Keep the other half of the grill on very low heat.
  • Place the pork on the hotter side of the grill and sear until golden brown on all sides, about 15 minutes. Remove to the lower heat side of the grill. Cook slowly, over low heat, 300 degrees F, until the meat is tender and falling off the bone, about 2 1/2 hours. Turn the meat every 20 minutes or so.
  • Remove from the grill and let rest for 10 minutes. Slice or shred into bite-size pieces and place in a large bowl. Toss with desired amount of BBQ Sauce. Place on buns and top with red onions and pickles.
  • Mix all ingredients together and stir well.
  • Yield: about 1 cup
  • In a medium saucepan, over medium heat, add the vegetable oil. Saute the onions, garlic, and oregano until translucent, about 4 to 5 minutes. Add the remaining ingredients, ketchup, tomato puree, Worcestershire sauce, honey, brown sugar, hot sauce, paprika, cayenne, cumin, coriander, salt and black pepper. Bring to a boil, stirring occasionally, then lower heat to a simmer and allow to simmer for 1 hour 30 minutes.
  • Taste and adjust seasoning and heat to desired taste.
  • Yield: about 3 cups

APPLE SMOKED PORK LOIN

Apple Smoked Pork Loin image

In less than three hours time a luscious smoked pork loin can be prepared and served to your hungry guests. Instead of smoking for hours and hours until the pork is falling apart tender, the pork loin is smoked until it just reaches the stage of medium done...about 155 degrees Fahrenheit. A whole pork loin is one of two strips of meat that lie on each side of the porker's backbone. Many folks confuse the loin with the tenderloin. The difference is that the loin is on the outer side of the body cavity...the tenderloin is on the inside. The tenderloin is smaller and more tender than the loin. However, the loin is still pretty darned tender. And less expensive, too.

Time 2h20m

Yield 4-8 serving(s)

Number Of Ingredients 7

1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon white pepper
1/4 teaspoon ground cinnamon
1/4 teaspoon fresh grated nutmeg
4 -6 lbs whole pork loin

Steps:

  • This recipe begins with a light dry rub seasoning, continues with some apple wood smoke flavor, and ends with a tasty apple-cinnamon sauce.
  • Begin by removing all of the membrane (silver skin) and excess fat from the outside of the pork loin. Rub the loin with olive oil, then lightly season it with a bit of this dry rub mixture.
  • Smoke the loin (using apple wood) at 225 degrees Fahrenheit for two to three hours, or until the internal temperature reaches 155 degrees. Remove the smoked pork loin to a platter, covering lightly with foil and a kitchen towel. Let it rest for fifteen minutes before serving with the apple cinnamon sauce.
  • Apple Cinnamon Sauce.
  • Finely chop two large or three medium sweet apples (Fuji or Gala are great varieties for this) and place in a saucepan. Add one tablespoon sugar, one-half teaspoon each of cinnamon, paprika, salt and white pepper, and two tablespoons rice wine vinegar. Cover and bring to a boil over medium heat, then lower to a simmer. Cook gently until the apples are tender.
  • Slice the smoked pork loin and top with a spoonful of the sauce.

SMOKED PORK CHOPS WITH APPLES

Smoked Pork Chops With Apples image

I was looking for something new to do with some smoked pork chops and I found a recipe on cooks.com that I altered slightly. The original called for cranberry-apple drink rather than cider. The glaze never really thickened for me, but it the chops were still delicious. I used MacIntosh apples, unpeeled. My kids and husband cleaned their plates and my husband has already requested that I make it again.
