A dear friend shared this recipe when she moved from Hawaii to Colorado. Now it's one of my favorite ways to eat ham. I get lots of requests for the recipe when I make it for guests. -Dawn Wilson, Buena Vista, Colorado

Ingredients

1 can (8 ounces) crushed pineapple, drained
2 tablespoons orange marmalade
1 tablespoon minced fresh cilantro
2 teaspoons finely chopped seeded jalapeno pepper
2 teaspoons lime juice
1/4 teaspoon salt
1 bone-in fully cooked ham steak (1-1/2 pounds)

Steps:

Preheat broiler. In a small bowl, mix the first six ingredients. , Place ham steak on an ungreased baking sheet. Broil 3 in. from heat 3-4 minutes on each side or until a thermometer reads 140°. Cut ham into serving-size pieces. Serve with pineapple salsa.

Ingredients

1 (1 ounce) package McCormick® Grill Mates® Baja Citrus Marinade
½ cup mango nectar or orange juice
2 tablespoons honey
2 tablespoons lime juice
1 (12 ounce) can canned ham, such as Spam® Classic, cut into small cubes
4 cups finely chopped fresh pineapple
½ cup finely chopped red onion
1 jalapeño pepper, finely chopped
½ cup chopped macadamia nuts

Steps:

Mix Marinade Mix, mango nectar, honey and lime juice in large bowl. Remove 1/4 cup of the marinade mixture; set aside.
Cook cubed canned ham and 1/4 cup of the reserved marinade mixture in large skillet on medium heat until lightly browned. Remove from heat.
Stir pineapple, onion and jalapeno into remaining marinade mixture in large bowl until well blended. Top with ham mixture. Sprinkle with nuts. Serve dip with tortilla chips.
