It's ooey and gooey, full of cheese and decadent rich lobster, this truly is an Incredible Lobster Mac and Cheese. Perfect for a special night or occasion, it's a macaroni and cheese that's sure to impress.

5-6 lobster tails (cooked and chopped)
4 1/2 cups cheddar cheese (freshly shredded and divided)
1 cup gruyere cheese (shredded)
1 cup parmesan cheese (grated)
1 stick butter
6 tablespoons flour
5 cups whole milk
2 teaspoons salt
1 teaspoon garlic powder
1 teaspoon mustard powder optional
1/2 teaspoon nutmeg optional
pepper to taste
1 pound elbow macaroni (or cavatappi pasta cooked)
flat leaf parsley chopped (optional)

Steps:

  • Cook the lobster according to preference. I like to broil my lobster.
  • Heat oven to 400 degrees with rack in the middle of oven.
  • Melt butter in a large saucepan over medium heat. Add flour to melted butter and stir until thickened, about 3 minutes.
  • Slowly whisk in milk a little at a time. The slower you add the milk the thicker the sauce will be.
  • Stir in 3 cups of cheddar cheese, gruyere cheese, and 1/2 cup parmesan cheese into the sauce. Reserve 1 1/2 cups cheddar and 1/2 cup parmesan for the top.
  • Add salt, pepper, garlic powder, mustard powder and nutmeg to the sauce, stir until combined.
  • Stir together the cooked macaroni noodles, lobster and the sauce and transfer to a 9 x 13 baking dish, that has been prepped with cooking spray if needed. Sprinkle with remaining cheese and bake in the oven until golden and bubbling, 20-25 minutes.
  • Sprinkle with flat leaf parsley if desired.

Vegetable oil
1 pound cavatappi or elbow macaroni
1 quart milk
8 tablespoons (1 stick) unsalted butter, divided
1/2 cup all-purpose flour
12 ounces Gruyere cheese, grated (4 cups)
8 ounces extra-sharp Cheddar, grated (2 cups)
1/2 teaspoon freshly ground black pepper
1/2 teaspoon nutmeg
1 1/2 pounds cooked lobster meat
1 1/2 cups fresh white bread crumbs (5 slices, crusts removed)

Steps:

  • Preheat the oven to 375 degrees F.
  • Drizzle oil into a large pot of boiling salted water. Add the pasta and cook according to the directions on the package, 6 to 8 minutes. Drain well.
  • Meanwhile, heat the milk in a small saucepan, but don't boil it. In a large pot, melt 6 tablespoons of butter and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. Still whisking, add the hot milk and cook for a minute or two more, until thickened and smooth. Off the heat, add the Gruyere, Cheddar, 1 tablespoon salt, the pepper, and nutmeg. Add the cooked macaroni and lobster and stir well. Place the mixture in 6 to 8 individual gratin dishes.
  • Melt the remaining 2 tablespoons of butter, combine them with the fresh bread crumbs, and sprinkle on the top. Bake for 30 to 35 minutes, or until the sauce is bubbly and the macaroni is browned on the top.

Kosher salt and freshly ground black pepper
1 pound dry rigatoni
4 cups heavy cream
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
3 shakes of your favorite hot sauce, optional
8 ounces cream cheese
8 ounces Gouda, shredded
1 pound ham, diced
1 cup panko breadcrumbs
1/2 cup grated pecorino
1/2 cup sliced scallions, optional

Steps:

  • Heat a large pot of salted water to a boil. Cook the pasta according to package directions for al dente, then drain and set aside.
  • Set up your grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat. Heat a deep 12-inch cast-iron skillet over direct heat.
  • Combine the cream, paprika, cayenne and hot sauce if using in the skillet. Season with salt and pepper. Bring to a simmer and simmer until the cream mixture is reduced by half and thickened, about 5 minutes. Whisk in the cream cheese and Gouda until fully melted. Stir in the ham and cooked pasta and continue to mix until fully combined.
  • Stir together the panko, pecorino and scallions if using in a medium bowl. Sprinkle the panko mixture evenly over the mac and cheese. Move the skillet to indirect heat, cover the grill and cook until golden brown and bubbly, about 5 minutes.
  • (Alternatively, you can make the mac and cheese in a 12-inch cast-iron skillet on a stovetop over medium-high heat, then top with the panko mixture and bake in a 400 degrees F oven for 10 minutes.)

By adding a partner cheese with a less assertive flavor and higher melting property, like deli muenster, you can achieve both melting and flavor perfection.

Eight 1/3- to 1/2-inch-thick slices Pullman bread
4 ounces smoked gouda, very thinly sliced with a cheese slicer
4 slices muenster cheese (about 4 ounces)
1 medium jarred roasted red pepper, drained, dried and thinly sliced
2 cups baby arugula
6 tablespoons unsalted butter, softened

Steps:

  • Lay out 4 slices of the bread on a work surface. Layer each with some of the smoked gouda, 1 slice of the muenster, a thin layer of sliced red pepper (about 2 tablespoons), 1/2 cup of the baby arugula and another layer of smoked gouda. Close the sandwiches with the remaining bread. Thinly and evenly spread the butter on both sides of the bread using about 1 1/2 tablespoons of the butter for each sandwich.
  • Place 2 sandwiches into a medium nonstick skillet over medium heat. Cover the skillet with a lid and cook until the bread is evenly golden brown, about 2 minutes. Flip, cover again and cook until the bread is golden brown and the cheese is visibly melted, about 2 minutes more. Repeat with the remaining sandwiches.

Smoked Gouda Cheese Macaroni image

6 cups water
1 teaspoon salt
1/8 teaspoon vegetable oil
1 pound ditalini or small elbow macaroni
2 tablespoons plus 1/2 teaspoon unsalted butter
2 tablespoons bleached all-purpose flour
2 1/2 cups milk
1/4 teaspoon freshly ground white pepper
1/4 pound smoked Gouda cheese, grated
Parsley

Steps:

  • Preheat the oven to 375 degrees F. Put the water, 1/2 teaspoon of the salt, and the oil in a large, heavy saucepan over high heat and bring to a boil. Add the macaroni and cook, stirring occasionally, until tender, about 8 minutes. In a small, heavy saucepan, melt 2 tablespoons of the butter over medium heat. Add the flour and cook, stirring constantly, for 2 minutes. Slowly add the milk, whisking constantly. Add the remaining 1/2 teaspoon salt and the white pepper and continue whisking until the sauce is smooth and thick enough to coat the back of a wooden spoon, about 8 minutes. Remove the white sauce from the heat and stir in the cheese. Continue stirring until the cheese melts. Lightly grease a 6 1/2 by 10-inch casserole dish with the remaining 1/2 teaspoon butter. Combine the cheese sauce and macaroni in a large mixing bowl and mix well. Pour into the prepared casserole and bake until lightly golden on top, about 20 minutes. Remove from the oven and serve hot. Garnish with parsley.

21 ounces smoked gouda cheese, shredded

Steps:

  • Heat the milk in a large saucepan over medium-low heat to 185 degrees F.
  • In a separate large pot over medium heat, make the roux by melting the butter and slowly whisking in the flour and onion powder. Once the milk has reached temperature, add the roux and the cheese. Using an immersion blender, carefully blend all ingredients until smooth. Season with salt and pepper. Stir in the macaroni.

1/4 cup unsalted butter
1 small garlic clove, chopped
1 shallot, peeled and minced
3 ounces all-purpose flour
3 cups 2% low-fat milk
1 bay leaf
1 pinch nutmeg
2 cups aged white cheddar cheese, grated
1 cup parmigiano-reggiano cheese, grated
salt and pepper
1 cup panko breadcrumbs or 1 cup regular breadcrumbs
1 ounce smoked bacon
1 ounce parmigiano-reggiano cheese, grated
1 1/2 lbs lobsters, cooked and shelled, cut into 1/2-inch pieces
3 ounces smoked bacon, chopped and slightly cooked
2 cups dry elbow macaroni

Steps:

  • SAUCE: In a heavy-bottomed pot over medium heat, melt butter. Add garlic and shallot to butter and cook for 1 minute. Add flour and stir with a wooden spoon until a roux is formed. Gently whisk in milk, 1 cup at a time, being sure to work out any lumps.
  • Add bay leaf and nutmeg and let slow simmer for 5 minutes on low heat. Stir in cheeses and seasoning and continue cooking and stirring until cheese is completely melted and incorporated.
  • CRUMB TOPPING: Place all crumb topping ingredients in a food processor and mix on low speed until bacon is fully incorprated.
  • NOODLES: In a large pot of boiling water (not salted), cook noodles until al dente. Strain noodles from water.
  • TO ASSEMBLE: Add noodles into sauce with lobster and bacon. Place in a casserole dish and top with crumb mixture. Bake in a 350F oven until crumb topping is golden. Remove from oven and serve.

1/3 cup whole wheat bread crumbs
8 ounces uncooked rotini (or other pasta)
2 tablespoons all-purpose flour
1 1/4 cups 1% milk
1/4 cup heavy whipping cream
2 tablespoons lemon juice
1/4 cup sour cream
4 ounces smoked Gouda cheese, grated
6 ounces sharp cheddar cheese, grated
6 ounces raw lobster tail meat, cut into pieces (thaw if frozen*)
1 1/2 teaspoons medium grind black pep

Steps:

  • Preheat oven to 400 degrees. Fill a large pot with water and bring to a boil. Meanwhile, melt 1 tablespoon butter. In a small bowl, combine melted butter, 1 teaspoon Seafood Seasoning and bread crumbs. Set aside. Add rotini to the boiling water and cook until al dente, according to package directions. Drain pasta and reserve. In a large saucepan, melt 4 tablespoons butter and add flour. Cook over medium heat, whisking, 3 to 4 minutes, until golden. Gradually add milk to flour mixture, whisking. Bring to a boil, whisking constantly, then reduce heat to low.
