1 1/2 pounds lean ground beef
2 cups chopped onion
1 (15-ounce) can light red kidney beans, drained
1 (15-ounce) can dark red kidney beans, drained
1 (15-ounce) can cannellini beans, drained
1 (15-ounce) can butter beans, drained
1 (15-ounce) can pinto beans, drained
2 (14 1/2-ounce) cans diced tomatoes with jalapenos
2 (1 1/4 ounce) packets chili seasoning mix
1 (8-ounce) can tomato sauce
1 cup water
Salt and pepper
Suggested servings: cornbread, sour cream, cheese, chips, and fresh cilantro

Steps:

  • In a skillet over medium-high heat, brown ground beef with the onions. Be sure to break up clumps as much as possible. Put the mixture in a slow cooker.
  • Add remaining ingredients and stir together. Cover and cook on high setting for 4 hours or on low for 7 to 8 hours.
  • Ladle into bowls and serve with your favorite chili fixings.

3 cloves garlic, minced
1 1/2 tablespoons chili powder, preferably Mexican style
2 teaspoons salt
1 1/2 teaspoons ground cumin
1 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper
1/8 teaspoon ground coriander
1/8 teaspoon ground cinnamon
2 bay leaves
1 (28-ounce) can whole peeled tomatoes, broken up with your hands
3 cups beef stock or canned, low-sodium beef broth
1 1/2 cups great northern beans
1 1/2 cups cooked and drained pinto beans
1 1/2 cups cooked and drained kidney beans
1 1/2 cups cooked and drained black beans
1 1/2 cups cooked and drained navy beans
2 tablespoons chopped cilantro leaves
Sour cream, grated Cheddar and chopped green onions, for garnishing, optional

Steps:

  • In a cast iron pot or Dutch oven over medium-high heat, cook the meat until well browned, stirring occasionally, 4 to 6 minutes. Add the onions, bell pepper, garlic, chili powder, salt, cumin, black pepper, cayenne pepper, coriander, and cinnamon, and cook until vegetables are soft, 4 to 6 minutes. Add the bay leaves, tomatoes, and stock; bring the mixture to a simmer, partially cover, and cook for about 40 minutes, stirring occasionally. Add all of the beans, stir to combine, and continue to cook another 20 to 30 minutes, or until the flavors have come together and the chili has a nice, thick consistency. Add the cilantro, taste and adjust the seasoning, if necessary.
  • Serve hot, garnished with sour cream, grated cheese, and chopped green onions, if desired.

1½ tbsp rapeseed oil
1 onion , sliced
2 peppers , sliced
2 garlic cloves , crushed
1 tbsp ground cumin
1 tbsp ground coriander
2 tsp hot smoked paprika
400g can chopped tomatoes
400g can mixed beans , drained
400g can black beans , drained
pinch of sugar
250g brown rice
½ small bunch coriander , chopped
soured cream or guacamole, to serve (optional)

Steps:

  • Heat the oil in a casserole dish and fry the onion and peppers for 10 mins over a medium heat until the onion is golden brown. Add the garlic and spices, and fry for 1 min. Pour in the tomatoes, both cans of beans, 50ml water, then add the sugar and season. Simmer, stirring regularly, for 15-20 mins until thickened.
  • Meanwhile, cook the rice following pack instructions. Serve the chilli on the rice and scatter over the coriander. Top with a spoonful of soured cream, or guacamole, if you like.

12 oz dark beer
3 fresh Thai peppers, sliced

1/2 cup hot banana pepper rings
1 cup green bell pepper, chopped
1 cup red bell pepper, chopped
1 red onion, finely chopped
1 1/2 Tbsp cayenne pepper sauce

Steps:

  • Combine chorizo and chicken in skillet and cook over medium-high heat until sausage is cooked through and chicken is no longer pink. Meanwhile prepare the peppers, onion, and garlic; drain and rinse the beans.
  • Drain chorizo and chicken mixture of excess grease and put into extra large cooking pot. Combine with beans, peas, tomatoes, spices, vegetable stock, beer, peppers, onion, hot sauce, and garlic. Stir until ingredients are well mixed.
  • Bring chili to boil stirring frequently. Once brought to a boil, reduce heat to medium and simmer 1 hour covered stirring occasionally. Serve in bowl with sour cream and shredded Monterey Jack cheese.

Steps:

  • 1. Combine anchos and 1½ cups water in bowl and microwave until softened, about 3 minutes. Drain and discard liquid. Process anchos, tomatoes and their juice, remaining 2 cups water, tortilla chips, chipotle, and adobo sauce in blender until smooth, about 1 minute; set aside.
  • 2. Heat 2 teaspoons oil in Dutch oven over medium-high heat until just smoking. Add beef, 1 teaspoon salt, and ½ teaspoon pepper and cook, breaking up pieces with spoon, until all liquid has evaporated and meat begins to sizzle, 10 to 15 minutes. Drain in colander; set aside.
  • 3. Heat remaining 4 teaspoons oil in now-empty Dutch oven over medium-high heat until simmering. Add onions and jalapeños and seeds and cook until onions are lightly browned, about 5 minutes. Stir in garlic, cumin, chili powder, oregano, coriander, sugar, and cayenne and cook until fragrant, about 30 seconds. Pour in beer and bring to simmer. Stir in beans, reserved ancho-tomato mixture, and reserved cooked beef and bring to simmer. Cover, reduce heat to low, and cook, stirring occasionally, until thickened, 50 to 60 minutes. Season with salt to taste. Serve.

1 large onion
4 garlic cloves, minced
1 bell pepper, chopped
2 jalapeno peppers, minced
1/4 cup chili powder
2 tablespoons chopped fresh oregano
1 tablespoon ground cumin
2 (14 1/2 ounce) cans tomatoes, diced undrained
1 1/2 cups beef stock
1 (15 1/2 ounce) can pinto beans, rinsed and drained
1 cup plain yogurt
1/4 cup chopped fresh cilantro
1/2 tablespoon chili powder
1/2 teaspoon cayenne pepper
3/4 cup grated colby cheese

Steps:

  • In a large skillet brown the beef, drain and set aside.Add onion and garlic sautee' on medium heat for about 5 minutes.
  • Using a slotted spoon scoop the beef into a large crock pot. Combine all the ingredients in the crock pot EXCEPT, spicy topping!
  • Stir to mix very well. Cook on low for 8-10 hours or on high for 4-5 hours. If you are cooking on high you must stir once and awhile.
  • In a bowl, combine all the ingredients for topping. Stir well to combine all the flavors together. Refrigerate until ready to serve. Drop a couple of spoon fulls on top! Sprinkle with colby cheese, Serve.

1 lb bacon, chopped
4 lbs lean beef chuck roast, cubed
1 1/2 lbs regular hamburger, preferably chuck
1 lb ground turkey
4 (15 ounce) cans kidney beans
8 whole cloves
4 medium onions
4 garlic cloves
6 ounces canned chilies, chopped (El Paso brand)
6 fresh jalapeno chilies, chopped
6 chipotle chiles, chopped
7 tablespoons dry Mexican chilies, freshly ground, anaheim if possible
3 tablespoons chili peppers (good quality)
2 tablespoons paprika
6 tablespoons fresh cumin seed, ground
1 1/2 tablespoons fresh black pepper, ground
2 tablespoons Tabasco sauce
3 tablespoons Worcestershire sauce
2 (12 ounce) bottles beer (Canadian)
2 (6 ounce) cans tomato paste
2 (14 ounce) cans stewed tomatoes

Steps:

  • Fry bacon in a heavy pot till crisp and the fat is rendered.
  • Remove and reserve bacon.
  • Pour off most of the bacon fat into a heavy cast iron skillet, leaving a small amount in the pot.
  • Brown the meat and garlic in the skillet.
  • Saute onions in the fat remaining in the pot until soft.
  • Add the meat, bacon, ground chilies, dried spices, the sauces, green chilies, Jalapenos, chipotle, beer and tomatoes.
  • Simmer for two hours.
  • Add remaining seasonings and sauces during cooking, as you check and stir.
  • Make sure last ingredients are added with at least one hour of cooking time remaining.
  • Allow the chili to sit in the refrigerator for 24 hours to give the spices a chance to intensify.
  • It is okay to serve it right off the stove, but it is almost always better as leftovers.

Everyone has their own chili recipe or a variation of someone else's. Heck, there are probably already TWO on this site that could be just like this one. I have been making this chili for more than 25 years. The ingredients have been tweaked here and there over the years until I found just the right flavor and this is it! All I know is when I make a pot of this chili, there are never any leftovers. Like any recipe, if you leave out or change an ingredient, it doesn't come out the same way. Try it this way, then go ahead and create your own version. If you like your chili really hot, instead of hot sauce use Recipe #88224. But most of all just ENJOY IT!

2 lbs ground sirloin
1 medium yellow onion (diced)
1 large green bell pepper (diced)
2 garlic cloves (minced)
2 (10 ounce) cans Rotel tomatoes & chilies (or your favorite brand)
2 (16 ounce) cans of bushs best chili magic chili starter (I like the Texas Medium or the Louisiana Hot)
20 ounces warm water
2 teaspoons hot sauce (optional)
1/2 cup chili powder
1 tablespoon onion flakes
1/2 tablespoon paprika
1/2 tablespoon cumin
1/2 tablespoon cayenne pepper
1/2 tablespoon italian seasoning
1/2 tablespoon masa harina flour (corn flour)
olive oil

Steps:

  • Lightly oil the bottom of a 3-quart pot with olive oil and lightly sauté the onions, peppers and garlic. Do not brown.
  • Add the ground sirloin and brown. Do not drain off fat; this adds to flavor of the chili.
  • Mix all the dry ingredients and the hot sauce in the warm water and stir until well dissolved.
  • Pour this seasoned water mixture into the meat, peppers, garlic and onions.
  • Add the beans and the tomatoes and green chilies.
  • Mix to blend all items. Bring to a gentle boil.
  • Reduce heat and simmer for 45 minutes to an hour, stirring occasionally.
  • Serve with bread or crackers.
  • *** If you want your chilli a bit more spiceier try adding a couple diced up habanerro peppers seeds and all.

  • Heat a large pan sprayed frying pan over medium heat. Add ground beef, 1 teaspoon salt, ½ teaspoon black pepper, 1 teaspoon cumin and 1 teaspoon chili powder. Brown for 5 minutes. Then, add olive oil to the pan with kielbasa (cut into small cubes). Add the chopped green pepper, onion and garlic. Continue to cook and stir occasionally for 15 minutes.
  • While the meats and vegetables are frying, begin the chili. In a large pot over medium heat, combine 2 tablespoons salt, 1 tablespoon black pepper, 1 tablespoon cumin, 1 tablespoon chili pepper, dark red kidney beans, cannellini beans, meat sauce, diced tomatoes, beef broth, worchestire sauce, garlic powder, smoked paprika, dried oregano, dried parsley, sriracha and crushed red peppers. Make sure to drain and rinse all of the beans going into the pot and half of the diced tomatoes. Stir very well until fully combined.
  • Once the ground beef and kielbasa mixture is finished cooking, add it to the large pot of chili. Turn the heat down to low. Cover and allow to simmer for about 2 hours.
