This smoked egg recipe is incredibly easy. I learned it from a neighbor and it is a fun way to use up the extra space in your smoker grill. The eggs turn a lovely brown color and have a consistency similar to boiled eggs. The insides have a tinted brown color, too. Reduce cook time if you prefer a softer boiled egg.

6 fresh raw eggs in the shell
salt and ground black pepper to taste

Steps:

  • Preheat a smoker grill to 225 degrees F (110 degrees C). Add wood chips according to manufacturer's directions.
  • Place whole eggs directly on the grate of the preheated smoker. Cook, without turning, for 2 hours, maintaining an even temperature.
  • Transfer eggs to a plate and allow to cool completely before peeling. Season with salt and pepper.

12 hard-cooked large eggs, peeled
1/2 cup Miracle Whip
1 teaspoon prepared mustard
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon paprika
Minced fresh parsley, optional

Steps:

  • Add wood chips to grill according to manufacturer's directions. Place eggs on grill rack. Grill, covered, over indirect medium heat until golden brown, 7-10 minutes. Cool slightly., Cut eggs lengthwise in half. Remove yolks, reserving whites. In a small bowl, mash yolks. Stir in Miracle Whip, mustard, salt, pepper and paprika. Spoon or pipe into egg whites. If desired, top with additional paprika and chopped parsley. Refrigerate, covered, until serving.

8 extra-large eggs
1/2 cup sour cream
2 ounces cream cheese, at room temperature
2 tablespoons good mayonnaise
1 tablespoon freshly squeezed lemon juice
2 tablespoons minced fresh chives, plus extra for garnish
4 ounces good smoked salmon, minced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 ounces salmon roe

Steps:

  • Place the eggs in a pot large enough to hold them in a single layer. Cover the eggs with cold water and bring to a full boil over high heat. As soon as the water boils, turn off the heat, cover the pot, and let the eggs stand for 15 minutes. Drain the eggs and fill the pot with cold water. Set aside until the eggs are cool.
  • Peel the eggs and then slice them in half lengthwise. Remove the yolks carefully. Place the yolks in the bowl of an electric mixer fitted with the paddle attachment and arrange the whites on a platter in a single layer with the cut sides up and sprinkle with salt.
  • To the egg yolks, add the sour cream, cream cheese, mayonnaise, lemon juice, chives, salmon, salt, and pepper. Beat on medium speed until fluffy. With a small spoon, fill the egg whites with the egg yolk mixture. Cover loosely with plastic wrap (you don't want to flatten the filling) and refrigerate for 30 minutes for the flavors to blend.
  • When ready to serve, garnish with a dollop of salmon roe and some extra chopped chives. Sprinkle with salt and pepper and serve.

1 tablespoon Dijon mustard
2 teaspoons chipotle adobo sauce from chipotle peppers in adobo

Steps:

  • Prepare a grill for medium-high heat.
  • Slice each hard-boiled egg in half lengthwise. Scoop the egg yolks into a medium bowl and mash with a fork. Add the mayonnaise, mustard, adobo sauce and paprika and stir together until completely combined; season with salt and pepper. Transfer the mixture to a piping bag and refrigerate until ready to use.
  • Lightly brush the egg whites on the cut sides with mayonnaise. Put the eggs cut-side down in a grill basket; close and secure the basket. Place the basket directly over the hot coals and cook until grill marks appear on the egg whites, 30 seconds to a minute. Transfer the whites to a serving plate and refrigerate until ready to serve.

Made these and they are just as good as they looked. Only for those of you who like smoked salmon - but if you do you'll enjoy this. I used shortstuff's recipe #24799 to prepare the eggs and worked like a charm.

3 tablespoons sour cream
1/2 cup smoked salmon, finely chopped
3 tablespoons fresh chives, finely chopped
1/4 cup capers, chopped

Steps:

  • In a large pot, arrange eggs in a signle layer and add enough water to cover.
  • Bring to boil over high heat, then cover and remove from the heat; let stand for 10 minutes.
  • Drain then cover eggs with ice water.
  • Let stand until cool to the touch.
  • Peel eggs, halve lengthwise and scoop the yolks into a medium bowl, reserving egg whites.
  • Mash yolks add sourcream, salmon, and chives, season with salt and pepper. Spoon yolk mixture into egg white and dust with paprika.
  • You may want to add more or less sourcream to get the yolk mixture to your desired consistancy.

2/3 cup mayonnaise
1 1/2 teaspoons tarragon-infused champagne vinegar
3/4 teaspoon dry mustard
2 1/2 teaspoons Dijon mustard
1/3 teaspoon cayenne
1/2 teaspoon curry powder
salt and pepper

Steps:

  • Place the eggs in a saucepan, cover with cold water, and bring to a boil over high heat.
  • Reduce the heat, and simmer for exactly 9 minutes.
  • Pour off most of the water and immediately run cold water over the eggs.
  • Crack the eggshells, roll each egg between your palms and peel under running water.
  • Cut a small sliver off both ends of each egg (so they'll sit without wobbling) and halve them crosswise, forming round cups.

Cut off a little slice from both sides in order to even out the egg's roundness in order to make a flat base to prevent eggs from capsizing. Fill a pastry bag with the salmon mousse and pipe onto each egg half. Decorate with fish roe, dill sprigs or extra lemon zest. Keep refrigerated until serving.

  • Cut each of the salmon slices into 18 thin strips, about 1/2 to 1-inch wide. Roll each strip as tightly as possible to make a rose, and place them on a plate. Cover lightly with plastic wrap and set aside in the refrigerator.
  • On a clean dry surface, carefully slice the eggs in half lengthwise. Very gently remove the yolks from each egg half and add them to a medium-sized mixing bowl.
  • Spread out the "handful" of fresh dill sprigs on a large serving platter and then arrange the egg white halves on top. (The dill will keep them from wobbling.)
  • Use a fork to mash the yolks, and then add the sour cream. Mash until you don't see any lumps from the yolks. Then add 2 tablespoons of the onion, tomato, chopped capers, 1 tablespoon of dill, mayonnaise, mustard, lemon juice, salt pepper and cayenne. Mix until everything is evenly incorporated.
