CORNBREAD SALAD WITH SMOKED CHILE VINAIGRETTE



Cornbread Salad with Smoked Chile Vinaigrette image

Number Of Ingredients 12

3 cups 1/2-inch diced stale cornbread
1/2 cup diced red bell pepper
1/2 cup diced yellow bell pepper
1/4 cup finely diced red onion
1/4 cup finely sliced green onion
2 cloves garlic, finely chopped
1/4 cup rice wine vinegar
1/3 cup olive oil
1 teaspoon pureed canned chipotle pepper
1 tablespoon honey
1/4 cup coarsely chopped cilantro
Salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees F. Spread cornbread in an even layer on a baking sheet and bake for 20 minutes, or until crispy. Place the cornbread in a large bowl and add the peppers, onions and garlic. Mixtogether the vinaigrette ingredients, add to the cornbread mixture and toss to combine.
  • Let sit 15 minutes at room temperature before serving.

I had a salad with this dressing at a restaurant and it was awesome. So I decided to search the internet to try and recreate it at home. This is what I found.

8 ears corn
4 garlic cloves
2 shallots
4 tablespoons white wine vinegar
1 cup corn oil

Steps:

  • Smoke corn for 30 minutes and then roast in oven at 350 F until thoroughly cooked.
  • Purée all ingredients in blender and slowly drizzle in oil then season with salt to taste.

1 tablespoon chipotle pepper puree in adobo seasoning
1/4 cup chopped fresh cilantro leaves
1/2 cup olive oil
1 tablespoon honey
salt & freshly ground black pepper

Steps:

  • Combine vinegar, chipotle and cilantro in a blender and blend until smooth; slowly add the oil until emulsified.
  • Season with honey, salt, and pepper, to taste.

  • Make the grilled corn salad. Allow the corn to cool completely. Cut off all of the corn kernels and dump them into a large bowl. Add the onion, bell pepper, avocado, cherry tomatoes and cilantro to the corn and toss gently to combine. Set aside.
  • Make the Tabasco lime vinaigrette. Combine all of the ingredients for the Tabasco lime vinaigrette in a small bowl, whisking to dissolve the honey and salt. Pour over the salad and toss gently to combine.
  • Refrigerate and serve. Refrigerate until ready to serve. This grilled corn salad is great as a side dish or served with chips!
