Steps:

  • Turn on belgian waffle maker and brush lightly with oil.
  • Line up the tater tots tightly next to each other.
  • Sprinkle with salt and close and turn, cooking for 5 minutes on high heat until crispy.

We used self raising flour, which has both leavening and salt in it, as a shortcut ingredient to make these savory and fluffy waffles. A small bit of sugar in the batter doesn't add detectable sweetness, but keeps the waffles moist and helps the exterior crisp up when cooking.

1 stick unsalted butter, melted and cooled slightly, plus more for the waffle iron
1 1/2 cups milk
2 large eggs
2 cups self-rising flour
1/4 cup confectioners' sugar
1 Gala apple, finely chopped
1 cup grated sharp cheddar cheese
1/3 cup pure maple syrup
2 teaspoons grainy mustard
1 5-ounce package mixed baby greens
1 tablespoon apple cider vinegar
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground pepper

Steps:

  • Preheat the oven to 225˚ F or 250˚ F (as low as your oven will go). Combine the melted butter, milk and eggs in a large bowl; whisk to combine. Add the flour and confectioners' sugar and stir to moisten, then add the apple and cheese and stir until well blended. Set aside.
  • Heat a waffle iron according to the manufacturer's instructions. Working in batches, lightly butter the waffle iron, then ladle in some of the batter. Close the iron and cook until the waffles are browned and crisp, 5 to 7 minutes. Remove to a baking sheet and keep warm in the oven while you cook the remaining waffles.
  • Meanwhile, mix the maple syrup and mustard together in a small bowl. Toss the greens with the vinegar, olive oil and a pinch each of salt and pepper in a large bowl. Divide the waffles among plates, along with the salad. Drizzle the maple mixture over the waffles or serve on the side for dipping.

This is an interesting waffle variation from Moosewood New Classics. Molly Katzen recommends serving them topped with scrambled eggs and salsa. That's how we tried it and it was really good. Of course, this will also work with other cheeses, a combination of cheeses, all white flour if you don't have rye. I like it with a bit of tabasco added in as well.

2/3 cup flour
2/3 cup rye flour
1/4 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1 cup buttermilk
2 tablespoons melted butter
2 tablespoons chopped scallions
1/2 teaspoon Dijon mustard
3/4 cup grated smoked cheddar cheese

Steps:

  • in a large bowl, mix together the two flours, baking soda, baking powder and salt.
  • in a separate bowl, beat the eggs lightly and stir in the buttermilk, butter, scallions, mustard and grated cheese.
  • add teh egg mixture to the dry ingredients and stir just till combined.
  • let the waffle batter sit for about 10 minutes, till you see some bubbles on top.
  • meanwhile, preheat the waffle iron. use 1/3 cup batter for each waffle and bake according to instructions that came with waffle iron.
  • Serving option: top with scrambled eggs and salsa - though I'm sure there are other good ideas out there!

Olive oil cooking spray, for spraying the waffle iron
One 30-ounce bag frozen shredded hash browns, thawed
4 tablespoons (1/2 stick) butter, melted
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3/4 cup grated Cheddar
3/4 cup chopped ham

Steps:

  • Preheat a waffle iron on the regular setting and spray both sides with cooking spray.
  • Squeeze out any excess moisture from the hash browns and put in a bowl. Pour the melted butter over the hash browns, sprinkle with the salt and pepper and stir. Scoop a heaping 1/2 cup of the seasoned hash browns into each waffle section, then top with a generous 2 tablespoons Cheddar followed by a sprinkling of chopped ham. Top the cheese and ham in each section with another 1/4 cup hash browns. Close the waffle iron and cook for 15 minutes on the regular setting.
  • Repeat with the remaining hash browns, cheese and ham, filling one section of the waffle iron.

2 cups Bisquick baking mix (or substitute)
1 1/2 cups buttermilk
1 tablespoon sugar
1 pinch salt
2 eggs, separated
1/2 cup smoked chicken, shredded (used some we smoked after brining 24 hrs in Basic All Purpose Brine for Meats, Chicken, and Turkey)
1/2 cup sharp cheddar cheese, grated
1/4 cup pecans, toasted (optional)

Steps:

  • Mix Bisquick, buttermilk, egg yolks, salt and sugar with beaters until well mixed.
  • In a separate bowl, beat egg whites with clean beaters until stiff.
  • Fold egg whites into batter.
  • Pour about 1/3 cup batter onto a preheated belgian waffle iron and top with 2 T smoked chicken and 2 T cheddar (add pecans if using) and bake.
  • You can hold the baked waffles in a 200* oven while finishing the remainder of the waffles.
  • Serve with warm maple syrup or honey and butter.

1 cup milk
1 cup sour cream
1 tablespoon butter or 1 tablespoon margarine, melted
2 cups Bisquick baking mix
6 bacon, strips cooked and crumbled
1 cup cheddar cheese, shredded

Steps:

  • In a medium bowl, beat 1 egg.
  • Add: milk, sour cream, melted butter or margarine
  • Stir in Bisquick baking mix, mix well.
  • Fold in: cooked and crumbled bacon strips and cheddar cheese
  • Spoon batter onto a hot waffle iron.
  • Close waffle iron and cook until golden brown. (Will be done when steaming stops -- 4-5 minutes).
  • Serve drizzled with: maple syrup OR fruit-flavored syrup.

1/2 cup sweetcorn
1 tablespoon butter
1 1/2 cups flour
1 1/2 cups cornmeal
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups buttermilk
1 cup whole milk or 1 cup 2% low-fat milk
2 eggs
1 egg white
1/3 cup melted margarine
1/2 cup crumbled cooked thick-cut bacon
1/2 cup grated cheddar cheese

Steps:

  • Melt butter in small skillet and saute corn for 3 minutes.
  • Set aside.
  • Sift together the flour, cornmeal, sugar, baking powder, baking soda, and salt.
  • Slowly add the buttermilk, milk, eggs and melted margarine.
  • Gently stir until combined but not smooth.
  • Fold in the bacon, corn and cheddar.
  • Cook in waffle maker.

  • In a medium mixing bowl, stir together the flour, corn meal, cornstarch, baking powder, baking soda, salt and pepper.
  • In a small bowl or glass measuring cup, whisk together the buttermilk and eggs. Pour into bowl with dry ingredients and mix gently but thoroughly. Pour in the melted butter and stir to incorporate. Then stir in the cheddar and chives.
  • Preheat oven to 200°F with a rack in the center. Preheat waffle iron to medium or medium-dark setting. (Waffle irons vary tremendously, so you may have to experiment a little.) Pour in as much batter as your waffle iron's instructions recommend and cook until golden. Gently remove each waffle from iron and place directly on oven rack. The waffles will still be slightly soft when they come out of the iron but will crisp up on the outside and stay tender on the inside while they rest in the oven.
  • When all waffles are cooked and have had a couple of minutes in the oven, serve with fried eggs on top and a dollop of sour cream if you like.
