1/2 teaspoon dried rosemary, crushed
1/2 teaspoon dried thyme
1 pork tenderloin (3/4 pound)
2 garlic cloves, peeled and quartered
1 teaspoon balsamic vinegar
1 teaspoon olive oil
HORSERADISH SAUCE:
2 tablespoons fat-free mayonnaise
2 tablespoons reduced-fat sour cream
1 teaspoon prepared horseradish
1/8 teaspoon grated lemon zest
Dash salt and pepper

Steps:

  • Preheat oven to 350°. In a small bowl, combine the steak seasoning, rosemary and thyme; rub over meat. Using the point of a sharp knife, make eight slits in the tenderloin. Insert garlic into slits. Place meat on a rack in a foil-lined shallow roasting pan. Drizzle with vinegar and oil., Bake, uncovered, until a thermometer reads 145°, 30-40 minutes. Let stand for 10 minutes before slicing. Meanwhile, combine the sauce ingredients; chill until serving. Serve with pork.

As a finishing touch, serve the meat with a pungent, creamy horseradish sauce that is shockingly easy to prepare.

(4-pound) beef tenderloin, trimmed and tied
1 tablespoon kosher salt, more to taste
1 teaspoon black pepper, more to taste
1 teaspoon chopped fresh rosemary
1 fat garlic clove, coarsely chopped
2 tablespoons extra-virgin olive oil
2 cups crème fraîche
1/4 cup white horseradish
Grated zest of half an orange

Steps:

  • Season the tenderloin all over with the salt, pepper, rosemary and garlic. Cover the meat and refrigerate for at least two hours and preferably overnight. Let it come to room temperature for 1 hour before roasting.
  • Heat oven to 450 degrees. Wipe off as much garlic as possible. (It tends to burn.)
  • In a large, ovenproof skillet over high heat, heat the oil. Add the meat and thoroughly brown all over, 4 to 5 minutes per side. (If your skillet isn't large enough, cut the meat in half.)
  • Place the skillet on the oven's middle rack and roast until an instant-read thermometer shows 120 degrees (for rare), 10 to 20 minutes. Let the meat rest for 10 minutes before carving.
  • In a small bowl, whisk the crème fraîche, horseradish and orange zest. Season to taste with salt and pepper and serve alongside the tenderloin.

1 cup olive oil
1/2 cup fresh thyme, chopped
1/2 cup fresh rosemary, chopped

soaked hickory chips
1 cup mayonnaise
6 teaspoons horseradish
2 teaspoons Dijon mustard
2 teaspoons lemon juice

Steps:

  • Take the olive oil, fresh herbs, garlic and puree in a food processor to a paste.
  • Whisk in black pepper.
  • Coat Tenderloin on all sides, wrap in plastic wrap and refrigerate for 48 hours.
  • Remove marinated beef 2 hours before cooking.
  • Oil your grill grid and over medium high heat sear the beef.
  • Sprinkle with salt.
  • Remove from grill and place a pan soaked with hickory chips on a lower rack or place coals around it.
  • Place Tenderloin of Beef on a rack above chips on medium heat.
  • 45 minutes to 1 hour for rare, 1 hour 30 minutes to 45 minutes for medium.
  • Horseradish Sauce: Whisk together all ingredients and chill-make the day before if you can.

2 lbs beef tenderloin (the butt end, tied with kitchen twine)
3 garlic cloves, finely chopped
salt and pepper
4 tablespoons unsalted butter, cut into small pieces
2 tablespoons Worcestershire sauce
2 limes, juice of
1/2 cup sour cream
3 tablespoons prepared horseradish, drained
heavy duty aluminum foil

Steps:

  • Prepare a heavy baking dish that is as close to the size of the beef tenderloin as possible by making an aluminum foil "basket" for it to sit inches It is VERY important to use heavy duty aluminum foil. Place 2 or 3 pieces of foil in the dish and put the beef tenderloin on top of it, leaving enough hanging over the edges of the dish to really wrap up the meat.
  • Season the tenderloin well with salt and pepper, and then "mash" the garlic over the entire tenderloin. Sprinkle the butter pieces evenly over the beef. Drizzle with Worcestershire and lime juice let marinate in the refrigerator for at least 3 hours, turning halfway through marination time. Bring the tenderloin back to room temperature before roasting.
  • Adjust the oven rack to the highest position and preheat the broiler.
  • Place the pan right underneath the broiler and broil for about 8 minutes. (It will look like the flames are burning or touching the meat, but that is fine).
  • Carefully pull the pan out and turn the meat over. Broil for another 5 minutes or until cooked to desired doneness. (When the meat is done under the flame it will look like it is burned, but it's not).
  • Wrap it up very tightly in the foil and let it sit and continue to cook inside the foil on the kitchen counter for about another 1 1/2 hours.
  • Whisk together the sour cream and horseradish and season with salt and pepper. Remove the string binding the roast, slice the meat and serve with the horseradish sauce on the side.

One of my favorite proteins is beef tenderloin. It is lean, soft, and flavorful. Beef tenderloin is a great cut to cook low and slow to just medium rare.

1 whole beef tenderloin, trimmed (approximately 6 pounds)
2 TBS extra virgin olive oil
2 TBS kosher salt
1-1/2 TBS freshly ground black pepper
1 cup sour cream
3/4 cup prepared horseradish
1/4 cup Dijon mustard
1/4 cup good mayonnaise
1/4 cup chopped chives
Water or water and red wine
Oak or hickory wood chips

Steps:

  • Tie the roast as described above. Set it aside to come to room temperature. Fill the water bowl of your smoker half way with water, or 1/2 water and 1/2 red wine, and place the wood chips in the tray. Open the top vent. Preheat your smoker to 275°F.
  • Coat the tenderloin with olive oil. Season it all over with the salt and pepper.
  • Place the beef directly on the smoker rack. If there is a probe thermometer attached, place it in one end of the roast. Smoke the tenderloin for 1-1/2 hours and check the internal temperature. You are looking for 125°F to 130°F. Continue to smoke for up to 2 hours, checking the temperature every 15 minutes. Remember to check the water and wood chips every 45 minutes and replenish as needed.
  • Make the sauce while the beef is smoking. In a medium mixing bowl, whisk together the sour cream, horseradish, mustard, mayonnaise, and chives. Cover and refrigerate until ready to serve.
  • Remove the cooked beef tenderloin to a clean cutting board and tent loosely with foil. Allow the meat to rest for at least 15 minutes before slicing.
  • Snip the twine off of the meat with kitchen shears and remove. Slice the beef into 1/2 inch thick portions. Serve with the horseradish sauce on the side.

1 cup chopped fresh flat-leaf parsley
½ cup butter, softened
6 tablespoons Dijon mustard, divided
2 tablespoons whole green peppercorns, coarsely ground
2 tablespoons whole pink peppercorns, coarsely ground
2 teaspoons coarse kosher salt, or to taste
1 (3 pound) beef tenderloin, trimmed
1 (8 ounce) container sour cream
2 tablespoons prepared horseradish

Steps:

  • Mix parsley, butter, and 3 tablespoons Dijon together in a small bowl. Combine green and pink peppercorns with salt in a small bowl.
  • Place beef tenderloin on a rack set on top of a heavy, rimmed baking sheet. Rub butter mixture over the tenderloin, coating well. Pat peppercorn mixture into the butter. Cover and refrigerate for 3 to 24 hours.
  • Mix sour cream, remaining 3 tablespoons Dijon, and horseradish together in a small container. Cover and chill for 3 hours.

1 teaspoon olive oil
3/4 teaspoon salt
2 cups heavy cream
1/4 cup drained bottled horseradish

For tenderloin
1 (3-pound) center-cut beef tenderloin roast, tied
1/2 cup cracked black pepper
2 teaspoons granulated beef bouillon
2 teaspoons salt
3/4 teaspoon cornstarch
3/4 teaspoon dried oregano, crumbled
3/4 teaspoon garlic powder
3/4 teaspoon paprika (not hot)

  • Make sauce:
  • Put oven rack in middle position and preheat oven to 400°F.
  • Cut off and discard top fourth of garlic head. Drizzle exposed garlic with oil and sprinkle with 1/4 teaspoon salt, then wrap head tightly in foil. Roast garlic until tender, about 1 1/4 hours, then open foil and cool.

Put tenderloin on rack in roasting pan and roast 10 minutes, then reduce oven temperature to 425°F and cook until thermometer inserted diagonally into center of meat registers 130°F, 20 to 25 minutes for medium-rare. Let beef stand on rack in pan 10 minutes before serving.
  • Cut beef into 1/4-inch-thick slices and serve with garlic horseradish cream.
