1/2 teaspoon onion powder
salt
1 tablespoon prepared horseradish
1 (8 ounce) package cream cheese, softened
1/2 cup sour cream

Steps:

  • Place potatoes in large pot and cover with water. Bring to a boil. Cook until potatoes are fork tender, about 20 minutes. Drain.
  • Mash potatoes and add remaining ingredients.
  • Mix until fluffy and serve hot.

These crispy red smashed potatoes are brushed with olive oil and seasoned with my grandmother's spice mixture. They are baked to golden perfection and topped with a sprinkling of Asiago cheese and fresh Thyme.

24 red potatoes (scrubbed clean)
4 tablespoons olive oil
½ cup shredded asiago (optional)
1 teaspoons Kosher salt
1 teaspoons rosemary
¾ teaspoons oregano
¾ teaspoons thyme
¾ teaspoons sage
1/8 teaspoon pepper
1/8 teaspoons nutmeg

Steps:

  • Place the potatoes in a large pot of cold water. Bring the potatoes to a boil and stir in 1 teaspoon of salt for each quart of water. Boil for 20 minutes, or until fork tender. Drain.
  • Preheat oven to 450 degrees.
  • Drizzle 1 Tablespoon of olive oil onto the bottom of 2 baking sheets and use a pastry brush (or paper towel) to spread it evenly.
  • Create 4 rows of 3 potatoes and use a potato masher to push them down onto the pan. Use the pastry brush to brush remaining 2 Tablespoons of oil over each potato, then sprinkle with seasoning.
  • Bake for 15 minutes. Remove from the oven and sprinkle the tops with Asiago if desired. Bake for 5 more minutes. Remove from the oven, and serve on their own or with sour cream!

2 1/2 pounds medium red-skinned potatoes, halved
Kosher salt
1 1/2 cups loosely packed fresh Italian parsley (about 1 bunch)
1/4 cup olive oil
2 tablespoons chopped fresh chives
2 tablespoons fresh oregano leaves
1 small clove garlic
1/2 cup whole milk, warmed
4 tablespoons unsalted butter, melted

Steps:

  • Put the potatoes in a large pot and cover with 2 inches of water; stir in 1 tablespoon of salt. Bring to a boil over medium-high heat, then reduce the heat slightly and simmer until tender, about 12 minutes.
  • While the potatoes are cooking, combine the parsley, olive oil, chives, oregano, garlic and 1/4 teaspoon salt in a blender and puree until almost smooth. If it needs more liquid, add a little water, 1 tablespoon at a time, until the mixture blends easily.
  • Drain the potatoes and return to the pot. Pour in the warm milk and melted butter and coarsely mash with a potato masher. Transfer the mashed potatoes to a serving bowl and top with the herb oil.

  • Put 1 3/4 pounds baby potatoes in a pot and cover with water. Add 2 bay leaves, 2 garlic cloves and a big pinch of salt; bring to a boil. 1 tablespoon kosher salt
1 ½ cups half-and-half
½ cup butter
½ cup sour cream
2 teaspoons kosher salt
1 teaspoon ground black pepper

Steps:

  • Place potatoes and 1 tablespoon kosher salt into a large pot and cover with water; bring to a boil. Reduce heat to medium-low, cover, and simmer until tender, 25 to 35 minutes. Drain and transfer potatoes to a large bowl.
  • Mix half-and-half and butter in a small saucepan over medium-low heat until heated through and butter is melted, 5 to 10 minutes.
  • Blend potatoes with an electric hand mixer in the large bowl until mashed. Slowly pour 3/4 the cream-butter mixture into blended potatoes; mix on lowest speed until fully incorporated. 1 tablespoon salt, plus more to taste
2 tablespoons butter
1/4 cup milk
Freshly ground pepper
2 tablespoons fresh flat-leaf parsley, roughly chopped

Steps:

  • Cut potatoes in half, and place in a 3-quart saucepan. Fill pan with cold water to cover potatoes by about 1 inch. When water begins to boil, add 1 tablespoon salt, and reduce heat to medium low. Cook until fork-tender, about 20 minutes.
  • Drain potatoes. Return potatoes to the hot saucepan, add butter, milk, and salt and pepper to taste. Lightly smash potatoes, keeping some pieces intact. Mix in parsley, adjust seasoning, and serve.

1 cup heavy cream

  • Place potatoes in 5-6 quart Dutch oven; add enough cold water to cover potatoes.
  • Add 2 tsp salt to water; bring to a boil.
  • Reduce heat to low; simmer for 15 minutes or until potatoes are tender when pierced with a small knife.
  • In small saucepan over low heat, heat together heavy cream and butter for 5 minutes or until butter is melted and mixture is heated through.
  • Drain potatoes; transfer to large bowl.
