1 stick butter
1 whole large onion, halved and sliced
1 1/2 pounds ground beef
5 dashes Worcestershire sauce
Salt and fresh ground black pepper
8 slices rye bread
8 slices Swiss cheese

Steps:

  • In a medium skillet, melt 2 tablespoons of the butter over medium-low heat. Throw in the sliced onions and cook slowly until the onions are golden brown and soft, 20 to 25 minutes, stirring occasionally.
  • In a medium bowl, mix together the ground beef, Worcestershire and some salt and pepper. Form into 4 patties.
  • Melt 2 tablespoons of the butter in a separate skillet over medium heat. Cook the patties on both sides until totally done in the middle.
  • Assemble the patty melts this way: Slice of bread, slice of cheese, hamburger patty, a quarter of the cooked onions, another slice of cheese and another slice of bread.
  • On a clean griddle or in a large skillet over medium heat, melt 2 tablespoons of the butter and grill the sandwiches until golden brown. Remove the sandwiches and add the remaining 2 tablespoons butter to the skillet. Return the sandwiches to the skillet, flipping them to the other side. Cook until golden brown and crisp, and until the cheese is melted. Slice in half and serve immediately!

3 tablespoons extra virgin olive oil, divided
1 small onion, finely chopped
1 1/4 lbs ground sirloin
1 tablespoon Worcestershire sauce
salt
ground black pepper
8 slices white bread (or whatever sandwich bread you like)
3 -4 tablespoons butter, softened
3 -4 tablespoons Dijon mustard
8 slices swiss cheese
8 slices bacon, cooked until crisp
8 slices tomatoes

Steps:

  • Place a medium skillet over medium-high heat with about 1 tablespoon olive oil.
  • Add the onion to the pan and cook until tender, 4-5 minutes.
  • Remove to a large mixing bowl and wipe the pan clean.
  • When the onions have cooled slightly, place the pan back over medium-high heat with about 2 tablespoons olive oil.
  • To the mixing bowl with the onions, add the sirloin, Worcestershire, some salt and pepper and mix thoroughly to combine.
  • Divide the meat into 4 portions and shape into 4 thin burgers.
  • Add the patties to the hot pan and cook until golden brown and cooked through, about 4 minutes per side.
  • While the burgers are cooking, butter up one side of each slice of bread then flip them over and spread mustard on each.
  • When the burgers have finished cooking, make stacks by laying down the slices of white bread, butter side-down, and top them with a slice of cheese, a patty, another slice of cheese, 2 slices of bacon and tomato and another slice of bread (butter side-up).
  • Wipe out the pan that the burgers were cooked in and return it over medium heat.
  • Add the stacks to the pan and cook until the bread is toasted golden brown and the cheese has melted, 2-3 minutes per side.

1 1/2 lbs ground beef
3/4 teaspoon onion powder
3/4 teaspoon salt
1/2 teaspoon black pepper
2 slices rye bread
2 tablespoons milk
1 tablespoon butter
2 large onions, sliced
2 cups swiss cheese, grated
8 slices rye bread
1 tablespoon butter

Steps:

  • Tear up the 2 slices rye bread into small pieces, add the 2 T. milk and spices. Mash well, then mix with the hamburger, form into 4 patties, forming into the shape of the bread. Poke a hole in the center to prevent plumping.
  • In a large skillet melt 2 T. butter, add two patties and brown on one side only. Remove from pan and brown the other two.
  • Drain the fat reserving one teaspoon. put in the onions in the skillet and brown lightly, 8-10 minutes.
  • Lay the patties raw side down on the onions. Reduce the heat and cook for approximately 5 minutes.
  • Remove every thing, wipe out the pan.
  • Butter the bread, (or just put butter in the pan).
  • On 4 slices of bread, put 1/4 cup cheese, put a patty on, put another 1/4 cup cheese on top, and a big pile of onions. Top with the other 4 slices.
  • Two at a time grill each sandwich. keeping the already done ones warm in a low oven.

2 italian sweet sausage patties (1/2 lb.) or 2 italian hot sausage patties (1/2 lb.)
1/2 bell pepper, thinly sliced (or 1 cubanelle pepper, halved, seeded, and thinly sliced)
1/2 small onion, thinly sliced
salt
fresh ground black pepper
1/2 teaspoon crushed red pepper flakes
1 tablespoon butter
4 slices Italian bread (thin slices)
4 slices provolone cheese (deli-sliced)
1 cup pizza sauce or 1 cup tomato sauce

Steps:

  • Heat a medium nonstick skillet over med-high heat.
  • Add in 1 tablespoon olive oil and the sausage patties.
  • Cook the patties 4 minutes on each side; then remove from the pan.
  • Add another tablespoon olive oil to the pan; then add the bell peppers, onions, salt, pepper, and pepper flakes.
  • Cook about 5 minutes or until the vegetables are tender but still have a bite to them.
  • Pile the veggies on the patties and return pan to the stove.
  • Add butter to the pan; let butter melt.
  • Add 2 slices bread, top each with a slice of cheese, a sausage patty, some peppers and onions, another slice of cheese, then the remaining slices of bread.
  • Press and cook patty melts 2 or 3 minutes on each side.
  • Warm a cup of marinara sauce, pizza sauce, or tomato sauce in the microwave (1 ½ minutes on HIGH).
  • Cut sandwiches corner to corner and serve with sauce for dipping.

A variation of the old diner stand-by. Instead of beef, they use ground turkey, and sauteed mushrooms and onions, instead of grilled onions.

1 lb ground turkey (don't use ground breast-too dry!)
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 tablespoon Worcestershire sauce
salt and pepper, to taste
cooking spray
1 tablespoon olive oil
1/4 cup yellow onion, thinly sliced
1/8 teaspoon salt
1/8 teaspoon black pepper
1 (8 ounce) package cremini mushrooms, sliced
1 1/2 teaspoons all-purpose flour
1/4 cup dark beer (such as porter)
8 slices rye bread
4 slices provolone cheese

Steps:

  • In a mixing bowl, combine turkey, onion powder, garlic powder, worcestershire and salt and pepper. Form into 4 4-inch patties.
  • Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add patties; cook 4 minutes on each side or until done.
  • Heat oil in a medium skillet over medium-high heat. Add onion, salt, pepper, and mushrooms; sauté 3 minutes. Sprinkle flour over mushroom mixture; cook 1 minute, stirring constantly. Stir in beer; cook 30 seconds or until thick. Remove from heat; keep warm.
  • When patties are done, remove from large skillet. Wipe pan clean; heat over medium-high heat.
  • Coat 1 side of each bread slice with cooking spray. Place 4 bread slices, coated sides down, in pan. Top each with 1 patty, 1 cheese slice, and one-fourth of mushroom mixture. Top with remaining bread slices; coat with cooking spray. Cook 2 minutes on each side or until browned.
  • Serve with sweet potato fries or coleslaw.
